PORK AND APPLE BURGERS
This pork burger recipe from Eat Well for Less makes enough for two meals so you can pop half in the freezer for a quick dinner. Try it as meatballs, too. Each burger serving provides 300 kcal, 23g protein, 25g carbohydrates (of which 5g sugars), 12g fat (of which 4g saturates), 2g fibre and 0.5g salt. Each serving provides 378 kcal, 26g protein, 40g carbohydrates (of which 6g sugars), 12.5g fat (of which 4g saturates), 3g fibre and 0.3g salt.

Steps:
- Preheat the oven to 190C/170C Fan/Gas 5 and line a baking tray with foil.
- Place all the meat mixture ingredients, into a bowl with a good pinch of salt and black pepper. Start mixing with a spoon then finish with your hands to get it totally mixed together.
- Divide the mixture in half and place one half into a bowl or box, cover and place in the fridge until needed - it should be used within 2 days. Divide the rest into 4 and form into burger shaped patties.
- Heat the olive oil in a frying pan until medium hot, then add the burgers and fry on each side for 45-60 seconds until just browned. Lift out and place onto the lined baking tray. Bake in the preheated oven for 15 minutes until cooked through and hot.
- Served the burgers in the buns with mustard, lettuce, tomato and onion.
- To cook meatballs, divide the mixture into 12 even pieces and roll into them into balls.
- Heat a small frying pan until medium hot, add half the olive oil and the onion and cook for 4-5 minutes until just softened. You can cover the pan with a lid, turn the heat down low and let the onions steam until they're softened.
- Meanwhile, heat a large frying pan until hot, add the remaining oil and brown the meatballs on each side until browned all over.
- Remove the lid from the onion pan, add the tinned tomatoes and when they are simmering, add the browned meatballs. Cook over a gentle heat for 15 minutes until the meatballs are cooked through and the sauce has thickened slightly. Season with salt and black pepper.
- While the sauce cooks, bring a pan of salted water to the boil. Add the pasta and cook according to packet instructions. Drain the pasta, reserving about 3-4 tablespoons of the cooking water, then add the pasta to the pan of sauce. Add the pasta water if the sauce needs thinning down. Stir well to coat the spaghetti in the sauce then cook for another couple of minutes. Serve immediately with grated Parmesan.

APPLE GINGER PORK CHOPS
Steps:
- In a resealable plastic bag, add the chops, apple cider vinegar, 1 tablespoon extra-virgin olive oil, ginger, garlic, lemon juice, salt and pepper. Marinate for 30 minutes
- Preheat oven to 350 degrees F.
- In a large saute pan heat 1 tablespoon extra-virgin olive oil to almost smoking, then add pork chops, shaking off excess marinade. Brown on both sides, then place on a sheet pan and put in the oven for 20 minutes or until internal temperature reaches 135 degrees F.
- In the same saute pan deglaze with wine then add onions, apples and raisins and cook until apples are soft and onions are translucent. Add butter salt and pepper, to taste, and keep warm.
- Remove chops from oven and add to the apple mixture. Serve hot.

- Preheat grill for medium-high heat.
- In a large bowl, mix together ground pork, apple, onion, garlic, teriyaki sauce, and egg. If too dry, add some juice from the can of pineapple slices. Form into eight patties.
- Lightly oil grill grate. Grill pork burgers for 10 minutes, or until well done. Toast buns on grill. Serve burgers on toasted buns topped with pineapple slices.

- In large non-aluminum kettle, combine water and lemon juice. Peel and core apples; cut into eighths and place immediately into lemon water.
- Add sugar and ginger; bring mixture to boiling over high heat, stirring constantly. Reduce heat to low and cook, uncovered, 10 minutes, stirring constantly.
- Meanwhile, sterilize 2 quart or 4 pint jars and the necessary lids, and bands, according to manufacturer's directions. With slotted spoon, divide apples and ginger among sterilized jars. Fill with hot syrup leaving 1/2 inch space at top of jar. Wipe rims of jars to remove any syrup and seal with lids and bands.
- Process jars in boiling water bath for 20 minutes (both quarts or pints). Remove jars from water bath, tighten lids immediately, and set aside to cool completely. Label jars and store in cool, dry place

- Divide the sausagemeat into four portions and shape into patties. Fry in a non-stick pan for 10-12 mins, flipping a couple of times, until golden on both sides and cooked all the way through.
- Heat grill to high. Slice the buns in half and toast under the grill, cut-side up.

APPLE AND GINGER PORK BURGERS (REDUCED FAT)
This is my latest creation in my attempt to make comfort foods like burgers more healthy. We love a good burger but I am on a low fat diet. So, every Friday for the past few weeks, rather than going out to have fatty fast food meal I have been trying to invent a different type of reduced fat burger. This was the invention from tonight and I think it made the transition from brain to plate fairly well. I had mine simply with a bit of fat free mayo and a slice of tomato and my partner had a bit of ketchup and some onions.

- Combine all ingredients and mix well with hands.
- Form into four equal sized patties.
- Either pan fry in a bit of oil or do as I do and brush them lightly with olive oil and do them on a Foreman grill type machine for about 8 minutes or so until fully cook through. Serve.
