Cheesy Mexican stuffed chicken breasts are filled with black beans, tomato and cheese and topped with taco seasoning and more cheese for an easy, fun and delicious family dinner!

4 (6 oz.) boneless, skinless chicken breasts
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup black beans
1/3 cup chopped fresh tomato (such as Roma), seeds removed
1/3 cup chopped fresh spinach
2 cups shredded cheddar or Monterey Jack cheese, divided
2 teaspoons taco seasoning
Salsa, sliced avocado or guacamole, chopped fresh cilantro, chopped green onions, sour cream or Greek yogurt, pickled jalapeños or hot sauce

Steps:

  • Preheat oven to 375. Line a baking sheet with parchment paper and set aside.
  • Butterfly each chicken breasts and lay open like a book. (See how to butterfly chicken breasts for more details and step-by-step photos.)
  • Sprinkle the inside of each chicken breasts with the salt and pepper.
  • Add to each chicken breast 2 tablespoons of black beans, 1 1/2 tablespoons of chopped tomato, 1 1/2 tablespoons of chopped spinach and 1/4 cup of shredded cheese.
  • Fold chicken breasts to close them up and lay on parchment-lined baking sheet.
  • Sprinkle each of the tops of the chicken breasts with 1/2 teaspoon of the taco seasoning. Top each breast with an extra 1/4 cup of shredded cheese.
  • Bake at 375 for 30-35 minutes, until chicken breasts are cooked through. Serve with desired toppings and enjoy!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Stir condensed soup, sour cream, green chilies, and milk together in a large bowl. Add chicken, tortilla pieces, and taco seasoning; stir. Mix tomato and 1 cup Mexican-style cheese blend into chicken mixture.
  • Spread chicken mixture out into the prepared baking dish and cover the dish with aluminum foil.

juice of half a lime
2 cups fresh pico de gallo
1 1/2 cups shredded Monterey Jack cheese (or mozzarella)
fresh cilantro
limes
avocado
sour cream

Steps:

  • Preheat the oven to 400 ̊F. Spray a large baking dish with non-stick spray.
  • Lay chicken breasts in an even layer in baking dish. Squeeze lime juice on top of chicken breasts and evenly sprinkle with taco seasoning.
  • Cover top of chicken with pico de gallo and sprinkle cheese down the center.
  • Bake for 20 to 24 minutes, until the chicken is cooked through and the center of the chicken breasts reaches 165°F.

This recipe came from the cookbook "Take Five for Every Occasion". All of the recipes require only 5 ingredients and are easy to make. My oldest daughter, Amy, doesn't like chicken, but she will eat this. It has a punch to it from the Ro-tel tomatoes. I've never timed the recipe so 30 minutes is prep. time which is cooking the vermicelli and cooking and chopping the chicken after it cools. The process cheese can be cubed or shredded. I've always cubed mine, because Velveeta will stick to any tool used to shred it.

2 cans cream of chicken soup
1 (4 ounce) can green chilies
1 bag plain Doritos

Steps:

  • Place chicken in water in dutch oven on stove, medium heat.
  • Add salt, pepper and onions to your liking.
  • Cook chicken until it is falling off the bone.
  • Cut up the velveeta cheese, melt and mix with green chilies and soup in another pan or even in the microwave.
  • Crunch up your bag of doritos and set aside.
  • When chicken is done, remove chicken from the bones and place in baking dish, cover with cheese mixture.

2 pounds boneless skinless chicken breasts, cubed
1 medium onion, chopped
1/2 cup green pepper, chopped
1/4 teaspoon pepper
1 tablespoon canola oil
2 jars (15 ounces each) Alfredo sauce
2 cups shredded sharp cheddar cheese, divided
1 cup grated Parmesan cheese
1 cup medium salsa
1/4 cup 2% milk
4 teaspoons taco seasoning

Steps:

  • Cook pasta according to package directions., Meanwhile, in a large skillet over medium heat, cook the chicken, onion, green pepper and pepper in oil until chicken is no longer pink. Stir in Alfredo sauce; bring to a boil. Stir in 1-3/4 cups cheddar cheese, Parmesan cheese, salsa, milk and taco seasoning. , Drain pasta; toss with chicken mixture. 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1 cup shredded Cheddar cheese (4 oz)
2 packages (8.2 oz each) Old El Paso™ fiesta rice
1/4 cup chopped fresh cilantro

Steps:

  • Spray 4-quart slow cooker with cooking spray.
