1 cup flaked or shredded coconut
3/4 cup sugar
1/2 cup Original Bisquick™ mix
1/4 cup butter or margarine, softened
2 cups milk
1 1/2 teaspoons vanilla
4 eggs

Steps:

  • Heat oven to 350°F. Grease 9-inch pie plate with shortening or cooking spray.
  • In medium bowl, stir all ingredients until blended. Pour into pie plate.
  • Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.

1 sheet refrigerated pie crust
3/4 cup sugar
3 tablespoons all-purpose flour
1/8 teaspoon salt
3 cups whole milk
3 large eggs, beaten
1-1/2 cups sweetened shredded coconut, toasted, divided
1 tablespoon butter
1-1/2 teaspoons vanilla extract

Steps:

  • Unroll crust into a 9-in. pie plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack or until edge is golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer or. Cool on a wire rack., In a medium saucepan, combine sugar, flour and salt. Stir in milk; cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. , Remove from the heat; gradually stir about 1 cup of hot mixture into beaten eggs. Return all to saucepan; cook and stir over medium heat until nearly boiling. Reduce heat; cook and stir about 2 minutes more (do not boil). Remove from the heat; stir in 1 cup coconut, butter and vanilla. , Pour into crust; sprinkle with remaining coconut. Chill for several hours before serving.

1/4 cup margarine, melted
1 (5 ounce) can evaporated milk
1 tablespoon vanilla extract
1 (3 ounce) can flaked coconut, divided
1 (9 inch) pie crusts, unbaked

Steps:

  • Cream eggs and sugar in mixer bowl until light and fluffy.
  • Stir in melted margarine.
  • Add evaporated milk, vanilla, and 3/4 of coconut; mix well.
  • Pour into pie shell.
  • Sprinkle with remaining coconut.
  • Bake at 350 degrees Fahrenheit for 30 to 45 minutes or until set.

1 cup sugar
4 eggs
1/2 cup all-purpose flour
6 tablespoons butter

  • In a blender, combine the first seven ingredients. Cover and process for 10 seconds; scrape the sides. Process for another 10 seconds. Add coconut; process for 2 seconds or until blended. 1 (9 inch) baked pie crusts (although the non baked graham cracker crust can be used too!)
1 (5 ounce) package vanilla instant pudding mix or 1 (5 ounce) package instant coconut cream pudding mix
1 1/2 cups cold milk
1 1/2 cups flaked coconut
1 (8 ounce) container Cool Whip, thawed

Steps:

  • In a large bowl mix pudding and milk until pudding becomes thick (usually about 2 minutes).
  • Fold in 4 oz (1/2) of the Cool-Whip.
  • Fold in 1 cup of coconut.
  • Spread mix into bottom of pie crust.
  • Spread remaining Cool-Whip on top.
  • Sprinkle with left-over coconut.
  • Serve cooled (about one hour in the fridge).
  • Keep refrigerated.
  • Enjoy!

1 cup flaked coconut
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Mix flour with sugar. Cream in butter and eggs. Mix in vanilla and milk until well combined. Fold in coconut. Pour into prepared pie crust.
  • Bake at 300 degrees F (150 degrees C) for one hour. Cool completely before cutting.

No baking involved for my favorite pie! This recipe originated as a suggested recipe printed on top of a Cool Whip container around 20 years ago. I've even kept the actual Cool Whip paper lid insert from years gone by. Try it when you want a quick-fix dessert. It's unbelieveably creamy and delicious, and so pretty with toasted coconut on top.

1 (3 ounce) package cream cheese, softened
2 tablespoons sugar
1/2 cup milk
1 1/3 cups flaked coconut
1 (8 ounce) container Cool Whip
1/2 teaspoon almond extract
1 8 inch graham cracker crust

Steps:

  • Combine cream cheese, sugar, milk and coconut in bowl.
  • Mix at medium speed till well blended.
  • Fold in Cool Whip.
  • Add extract, spoon into crust.
  • Freeze for about 4 hours.
  • Sprinkle with additional coconut, toasted, if desired.
  • Let stand at room temperature for 5 minutes before serving.
  • Store in freezer.
