CORDON BLEU CHICKEN ROLLS

This is the best Chicken Cordon Bleu recipe! Chicken stuffed with ham and Swiss cheese. I hope you enjoy it as much as I have.

Number Of Ingredients 10

8 skinless, boneless chicken breasts
8 slices cooked ham
4 slices Swiss cheese, cut into 1 inch pieces
salt and pepper to taste
1 teaspoon dried thyme
¼ cup melted butter
½ cup cornflakes cereal crumbs
1 (10.75 ounce) can condensed cream of chicken soup
½ cup sour cream
1 teaspoon lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8 inch thickness. Place a finger of cheese on each ham slice and sprinkle lightly with thyme and salt and pepper to taste. Roll up seasoned ham and cheese 'jellyroll-style', then roll each chicken breast with ham and cheese inside. Tuck in ends and fasten with toothpicks.
  • Place melted butter in a small bowl and place cereal crumbs in a shallow dish or bowl. Dip each chicken roll in butter or margarine, then roll in crumbs, turning to coat thoroughly. Place coated rolls in a lightly greased 9x13 inch baking dish.
  • Bake at 400 degrees F (200 degrees C) for about 40 minutes or until chicken is golden brown and juices run clear. Serve with cordon bleu sauce, if desired.
  • To Make Cordon Bleu Sauce: In a small saucepan mix together the soup, sour cream and lemon juice. Heat over low heat, stirring occasionally, and serve hot over chicken rolls. Makes about 2 cups; 8 servings of 1/4 cup each.

1/4 cup butter, softened
1 tablespoon minced chives
1 garlic clove, minced
6 boneless skinless chicken breast halves (8 ounces each)
3/4 cup crushed cornflakes
2 tablespoons minced fresh parsley
1/2 teaspoon paprika
1/3 cup buttermilk

Steps:

  • In a small bowl, combine the butter, chives and garlic. Shape into a 3-in. x 2-in. rectangle. Cover and freeze until firm, about 30 minutes., Flatten each chicken breast to 1/4-in. thickness. Cut the butter mixture into six 1-in. pieces; place one piece in center of each chicken breast. Roll up chicken from a long side; tuck ends under. Secure with toothpicks. , In a shallow bowl, combine the cornflakes, parsley and paprika. Place buttermilk in another shallow bowl. Dip the chicken into buttermilk, then coat evenly with cornflake mixture. , Preheat oven to 425°; place chicken in a greased 13 x 9 baking dish, seam side down. Bake, uncovered, 35-40 minutes or until chicken reaches an internal temperature of 170°. Discard toothpicks.

This Russian specialty has always been popular, but it's rarely made at home because the traditional recipe calls for rolling and freezing and frying. The butter would often ooze out. This is a simple way to make it yourself with no oozing!

1 tablespoon dried parsley flakes
1 tablespoon dried chives
1/2 teaspoon garlic powder
6 boneless skinless chicken breast halves (about 1-3/4 to 2-1/4 lbs.)
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter, cut into 6 equal slices
1 tablespoon seasoned bread crumbs, divided
1/8 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees. In a small bowl, combine the parsley, chives, and garlic powder; set aside.
  • Between 2 pieces of waxed paper, gently pound the chicken to 1/4-inch thickness with a mallet or rolling pin. Sprinkle both sides of each breast lightly with salt and pepper, then sprinkle 1 t. of the parsley mixture on one side of each chicken piece.
  • Place a slice of butter in the center of each piece of chicken and roll each chicken breast tightly, tucking in the sides as you roll. Place rolls seam side down in medium-sized muffin tins that have been sprayed with nonstick vegetable spray. Sprinkle 1/2 t. of the seasoned bread crumbs and some paprika over each roll.
  • Bake for 25-30 minutes or until no pink remains and the juices run clear. Serve immediately.
