CHICKEN AND DRESSING CASSEROLE
I got this recipe from a friend, and my whole family loves it - not to mention how easy it is to make! Note: If you wish, you can just boil 4 or 5 boneless chicken breasts instead of using a whole chicken.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl combine the butter or margarine, sage and stuffing mix. Mix together and spread this mixture in the bottom of a 9x13 inch baking dish. Spread cooked chicken over mixture. In the same bowl combine the cream of chicken soup, cream of celery soup and water. Mix well and pour this mixture over the chicken.
- Bake at 350 degrees F (175 degrees C) for 45 minutes or until bubbly.

This recipe came from my Grandmother and is a family tradition--a great dish which is eaten instead of stuffing here in the South.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large saucepan, bring the chicken broth to a boil.
- In a large bowl combine the crumbled cornbread and biscuits. Pour in 3 cups of boiling broth; cover and let stand.
- Meanwhile, heat margarine in a medium skillet over medium heat. Saute celery and onions until tender. Stir into cornbread mixture.
- To the cornbread mixture add the remaining broth, eggs, sage and black pepper. Pour into a large iron skillet or roasting pan.
- Bake in preheated oven for 1 hour, or until set and well browned.

CHICKEN AND STUFFING CASSEROLE
This casserole got me and my family our '10 minutes of fame'. It was entered in the "News Channel 7 Kitchen Recipes" and I had 6 news crew members here at my home eating it! Not only is it easy to make, it is truly delicious, too! Serve with a fresh green salad if desired.

- Preheat oven to 350 degrees F (175 degrees C).
- Layer the deboned chicken meat in a lightly greased 9x13 inch baking dish. Sprinkle stuffing mix over the chicken layer.
- In a large bowl mix together the soups, broth and evaporated milk. Stir well. Pour this mixture over the stuffing mix, making sure it gets to the bottom of the baking dish (poke around with a fork to let it saturate into the bottom layer). Bake in the preheated oven for 35 to 45 minutes, until it starts to bubble in the center.

- Place chicken in a large saucepan full of lightly salted water. Bring to a boil; boil for about 30 minutes, or until chicken is cooked through (juices run clear). Remove chicken from pan, reserving broth. Cut chicken into bite size pieces and place in bottom of a 9x13 inch baking dish.
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl mix together cream of chicken soup and cream of celery soup. Fill one empty soup can with milk, and mix milk with soups. Pour mixture over chicken. In a small bowl combine stuffing and broth; mix together and spoon mixture over casserole.

- Preheat oven to 350*.
- Cut chicken breasts into halves or thirds.
- Place chicken breast pieces in a 13 x 9 glass pan.
- Season with salt, pepper and garlic powder.
- Combine cans of soup with milk; mix well.
- Pour soup mixture over chicken in pan.
- Melt margarine and combine with water.
- Pour margarine/water mixture over stuffing and stir to coat.
- Pour stuffing mixture over soup layer.

- 1. Gather ingredients. Preheat oven to 375 degrees F. Use butter to lightly grease a 13"x 9" casserole dish.
- 2. Drain chicken well. (I discard drained juice because it's too salty.)
- 3. Empty 4 cans of cream of chicken soup into average mixing bowl.
- 4. Fill two of the empty soup cans with chicken broth. Combine broth with the soup by adding a little at a time and stirring well. Repeat until all of the broth is stirred into soup and no lumps remain.
- 5. Stir in salt and ground black pepper.
- 6. Add about 1/3 of the soup mixture to prepared dish; smooth to lightly cover entire bottom of dish.
- 7. Evenly sprinkle 1/2 bag of seasoned stuffing mix and 1/2 bag of cornbread stuffing mix over dish.
- 8. Break the canned chicken into small, bite-sized pieces, then evenly distribute over the stuffing mix layer. (NOTE: May substitute equal amount of cooked chicken for canned.)
- 9. Evenly sprinkle remainder of stuffing mixes over the chicken.
- 10. Pour and smooth remainder of soup mixture over the chicken and dressing to cover all.
- 11. Cover with foil. Bake at 375 degrees F for 60 to 75 minutes until hot and bubbly.
- 12. Sprinkle a bit of parsley on top for garnish if desired. Serve hot. Cover and refrigerate leftovers.

- Boil chicken with chopped onion and the bouillon cubes until tender.
- Save the broth!
- When done, remove chicken and shred or cut into bite size pieces.
- Put into a 13x9-inch casserole dish.
- Add the 2 cans of celery soup and milk to chicken and stir all together until mixed well.
- Add half of the cornbread stuffing, poultry seasoning, salt & pepper to the chicken mixture adding some of the reserved broth stirring until well mixed and very creaming.
- Add the remaining cornbread stuffing and more broth as needed, mixing till well combined and very moist (you want it to be almost soupy).
- Top with butter or margarine.
- Bake at 350°F for 1 hour or until lightly brown.
