SWEET RED BEAN SOUP



Sweet Red Bean Soup image

Red bean soup is thick, sweet and studded with tiny, ever so slightly chewy, clear tapioca pearls and enjoyed after a 10 course Chinese banquet meal.

2 cups dried adzuki beans
8 cups water
½ cup sugar
¼ teaspoon orange zest
2-3 tablespoons tapioca pearls

Steps:

  • First, rinse the beans under cold water. Then, soak the beans in water for at least 8 hours (overnight).
  • Drain the beans and transfer to a medium-sized pot. Add 6 cups of fresh water. Bring to a boil, then let simmer for 1 hour. Over the course of the hour, add an additional 2 cups of water as needed.
  • When the beans look soft and broken down, use an immersion blender to blend until the beans are just broken up--it shouldn't be completely smooth (unless that's your preference--you're the cook here!). You can also transfer to a blender and pulse a few times until you achieve your desired consistency.
  • Transfer the blended mixture back to the pot. If you like a soupier consistency, feel free to add additional water at this stage until you reach your desired consistency. Add the sugar and orange zest. Stir over medium to medium-high heat to dissolve the sugar. The mixture should bubble very gently.
  • Next, add the tapioca. Cook for 20 minutes until the tapioca pearls become translucent. Some recipes recommend cooking the tapioca separately, but it works just fine to add them directly to the soup. When the tapioca pearls are totally translucent, it's ready to serve!

This adzuki been stew recipe is filling and delicious. It sounds funny but it makes for a creamy and slightly sweet dinner!

Number Of Ingredients 18

1 cup dry adzuki beans
1/2 oz dried porcini mushrooms
1 Tbsp olive oil
1 Tbsp tomato paste
1 medium yellow onion (diced)
2 celery stalks (diced)
2 medium carrots (sliced into thin rounds)
2 garlic cloves (minced)
2 cups butternut squash (cut into chunks and frozen)
4 oz fresh oyster mushrooms (roughly chopped)
10 oz fresh wild mushrooms (roughly chopped)
4 cups vegetable broth
1/2 cup green lentils
1 Tbsp soy sauce
1 Tbsp lemon juice
2 tsp salt
1 tsp pepper
1/2 cup parsley (chopped)

Steps:

  • Place aduki bean in large bowl and cover with water by 4 inches. The beans will swell overnight so use plenty of water. When it is time to make the stew, drain the beans and place in a medium saucepan. Cover with water and bring to a simmer over medium high heat. Let simmer for 40 minutes.
  • Meanwhile pour 1 cup boiling water into a heat proof container and add the dried porcini mushrooms. Stir to submerge the mushrooms and set aside for 30 minutes. Drain the mushrooms and strain the water through a coffee filter. Set mushrooms and mushroom water aside.
  • In a large soup pot or Dutch oven heat oil and add tomato paste. Sauté tomato paste 1 minute then add onion, celery, and carrot. Cook 3 minutes then add garlic and cook 1 more minute. Add oyster, wild and porcini mushrooms. Cook until liquid releases about 5 minutes.
  • Add frozen butternut squash cubes, vegetable stock, mushroom water, lentils and beans. Simmer for 20 minutes then check beans for doneness.
  • When stew is ready remove form heat and season with soy, lemon juice, salt and pepper. Just before serving stir in chopped parsley.

3 shallots, thinly sliced (1 cup)
4 cloves garlic, minced (4 tsp.)
4 tsp. minced fresh ginger
1 tsp. sea salt, plus more to taste
1 tsp. ground turmeric
2 dried Thai red chiles
5 Kaffir lime leaves, optional
2 stalks lemongrass, halved lengthwise and bruised
2 14-oz. cans light coconut milk
2 cups cooked adzuki beans
1 medium leek, sliced (2 cups)
2 heads baby bok choy, sliced (3 cups)
2 cups chopped watercress (1-inch pieces)
2 tsp. fresh ginger juice, optional
1 tsp. low-sodium tamari
2 tsp. coconut sugar or light brown sugar

Steps:

  • 1 | Heat coconut oil in large pot over medium heat. Add shallots, and sauté 5 minutes, or until beginning to brown. Add garlic, ginger, and salt; cook 3 minutes, then stir in turmeric. Add chiles, lime leaves (if using), lemongrass, coconut milk, and 21/2 cups water; bring to a boil over high heat. Cover pot, reduce heat to low, and simmer 30 minutes. 2 | Remove and discard chiles, lime leaves, and lemongrass. Add beans to pot, and return to a simmer. Stir in leek, and simmer 2 minutes more, or until tender. Add bok choy, watercress, ginger juice (if using), tamari, and coconut sugar; stir well, and cook 1 minute more. Season with salt and pepper, if desired.

1 cup dried aduki beans
5 cm square dried kombu
3 cups water
3 cups pumpkin, chopped (sweet potato also works well)
shoyu or tamari

Steps:

  • Place kombu in the bottom of a heavy based pot, add washed and drained aduki beans and 3 cups water.
  • Bring to the boil then simmer until beans are tender (approximately 40 minutes). While cooking, you may need to add more water a few times, but do not stir beans!
  • When beans are tender add chopped pumpkin making sure that beans are still covered with water.
  • Cover and cook for 20 minutes or until pumpkin is tender.
  • Using a wooden spoon, mix beans and pumpkin lightly together and add shoyu or tamari to taste.
  • Notes:Like lentils and other light beans, aduki do not really need soaking, however for improved digestibility wash and soak with kombu for 2 - 5 hours. Aduki beans (also called adzuki or adanka) are high in protein but very low in the amino acids methionine and cystine, and need to be correctly combined with other grains in order to form a 'complete' protein. Consisting of 68% carbohydrate, 22% protein, 5% fibre and 5% fat, aduki beans are a great addition to the diet. They are also high in iron, B5, B6, magnesium, calcium, potassium, zinc, phosphorus and Vitamin A, but low in sodium.

2 onions, diced
2 tablespoons fresh ginger, minced
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper (start with 1/4 tsp and add to suite your taste)
1/4 teaspoon ground cinnamon
4 cups adzuki beans
1/4 cup wheat free tamari or 1/4 cup tamarind paste
2 cups vegetable broth or 2 cups chicken broth
8 -16 ounces cut okra, add (to taste)
2 cups cooked brown rice

Steps:

  • Heat olive oil and add the onions and ginger.
  • Cook for 5 minutes or until softened.
  • Add oregano, cayenne and cinnamon.
  • Stir and cook for 1 minute.
  • Add beans, braggs, broth and okra.
  • Bring to a boil and simmer for 10 minutes.
  • Serve over brown rice.

1 cup dry adzuki beans (sprouted are best)
3 cups broth or 3 cups water
5 celery ribs
5 small carrots
1/2 small onion
1 tablespoon almond oil or 1 tablespoon olive oil
1 garlic clove
1 bay leaf
1/4 teaspoon Braggs liquid aminos

Steps:

  • Boil the adzuki beans in 1.25 cups of the stock, broth, or water for 30 minutes. Beans will absorb all or most of the liquid.
  • In the meantime, chop the celery, carrots, and onion -- I use a food processor to get minced pieces.
  • Saute the celery, carrots, and onions in the oil. Mince garlic and add to pan, saute another 30 seconds or so.
  • Add beans to saute pan and saute for a minute or two.
  • Add remaining stock, broth, or water, along with the bay leaf and the Braggs. Bring to boil and simmer for a minimum of 15 minutes.

1 cup dried adzuki beans, soaked overnight in water
1 leek, sliced
1 carrot, chopped
1 orange sweet potato, cubed
1 chicken bouillon cube, crumbled
1 teaspoon Tabasco sauce
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 cup small broccoli floret
1/4 cup chopped cilantro leaf
4 tablespoons low-fat plain yogurt (optional)

Steps:

  • Rinse the beans after draining them from the soaking water then put them in a saucepan. Cover with water and then bring to a boil. Reduce the heat and then simmer, partially covered, for 30 to 35 minutes. When you're done, the beans should still be somewhat hard.
  • Add all of the other ingredients except for the broccoli and cilantro and cook for 10 minutes. Next, add the broccoli and cilantro and then simmer for about 5 minutes, or until the broccoli is tender.
  • To serve, spoon into bowls topped with a spoonful of natural yogurt, if desired.
  • Soaking the beans overnight is crucial to this recipe as it greatly shortens the cooking time of the beans.

125 g adzuki beans, soaked and cooked (save the cooking liquid)
soya margarine
1 onion, chopped
2 garlic cloves, finely chopped or crushed
1 medium leek, washed, halved lengthwise and sliced thickly
1 large carrot, cut into long julienne strips
250 g mushrooms, cut into chunks unless very small
1 tablespoon sweet paprika
2 tablespoons whole wheat flour
chili sauce
1 teaspoon dark vegetable stock powder
1 tablespoon soy sauce
1 tablespoon tomato paste
1 (400 g) can canned tomatoes, chopped
fresh ground black pepper
fresh flat-leaf parsley, chopped

Steps:

  • Saute the onion in the margarine until golden.
  • Add the garlic, leek, carrot and mushrooms, and cook for another 5 minutes, until the vegetables are just soft.
  • Mix in the paprika and flour and stir for another minute.
  • Add the remaining ingredients, including the cooked aduki beans, plus enough reserved bean cooking liquid to half-cover the ingredients.
  • Stir well, cover and simmer for about 30 minutes, stirring occasionally and adding more cooking liquid if it gets too dry.
  • Season with black pepper and parsley and serve.
