- Begin by roasting the chiles over the flame on your stovetop (or under the broiler) until the skin is totally blackened (if using fresh). When the chiles are totally charred, throw them into a plastic bag. Seal and allow them to steam and cool.
- Next, pour the white vinegar over the sliced red onion and let them sit awhile. This'll take away a little of the crazy onion flavor and leave them with a nice sweetness.
- Finally, make the special sauce: equal amounts of mayonnaise and Dijon. It's the simple things in life!
- When you're ready to make the sandwiches, scrape the blackened skin off the chiles. Scrape out the seeds, too, so you'll wind up with big pieces of roasted green chiles.
- For each sandwich, generously spread 2 pieces of rye bread with the special sauce. Lay on 2 slices of provolone, 2 slices of tomato, 2 slices of Cheddar... a nice layer of roasted green chiles... a few red onion slices... and one more slice of provolone just to hold it all together.
- Top with the other slice of bread and spread the outsides with a good amount of butter.
- Toast the sandwich in a skillet over medium-low heat until the cheese is thoroughly melted inside. Be careful not to burn the bread!

- Oven method (great for a crowd of six or fewer): Put a rimmed baking sheet on the middle rack of the oven and preheat to 450 degrees F. Make one sandwich per person: Sandwich 2 slices of cheese between 2 slices of bread. Spread or brush the outside of the sandwich with 1 tablespoon of fat. - Prepare a charcoal or gas grill for medium heat. (Medium is 325 degrees to 375 degrees. You should be able to hold your hand 4 to 5 inches above the grates for 6 to 7 seconds.)

The trick to great grilled cheese sandwiches isn't in the ingredients, but on the stove. Achieving a golden, crusty outside and oozy inside takes a little patience: if the heat is too high, the outside will scorch before the cheese melts. Cooking the slices separately at first gives the cheese a good head start. There's no need to search out artisanal loaves or local cheese (though they won't hurt), but definitely do not use homemade mayonnaise. Mustard, chutney or even strawberry jam (believe it) can be dabbed on the cheese as it melts, or add ham, prosciutto or slices of apple or tomato (drain on paper towels first). You can use any melting cheese, such as American, Muenster or Swiss, but not too much: part of the perfection here is in the proportion of bread to cheese.

GUERILLA GRILLED CHEESE
Carrots and sweet potatoes in grilled cheese? Why not if it works. This is from a book titled "the sneaky chef" filled with ideas on adding veggies and fiber into the diets of kids (and other picky eaters). When I read this one, I couldn't believe it. When I tried it, I was amazed to learn that it worked. This uses Orange Puree, a puree of cooked carrots and sweet potatoes. If you are short on time, you can use a jar of baby food instead. The recipe calls for melting butter and olive oil together, but I find it easier to buy it preblended at the store. You can use any cheese you like, but only a yellow cheese will hide the color of the Orange Puree.

- Melt 1 tsp of butter in a small skillet over medium low heat. Add 1 tsp of the olive oil.
- Spread 1 tsp of the Orange Puree on the center of each slice of bread. Do not get close to the edge -- you don't want this oozing out where your kids can see the dreaded vegetable.
- Top each side of the bread with a slice of cheese, then make sandwiches (2 slices of bread, 2 slices of cheese, 2 tsp orange puree).
- Place one sandwich into the skillet. Don't press it down, you want the puree to absorb into the bread, not ooze out.
- For each bread side, add 1 more tsp of butter and 1 more tsp olive oil. Brown each side of both sandwiches until crispy.
- Let cool for a few moments before cutting.
- Since the orange puree adds a tiny bit of sweetness to the grilled cheese, I found it helpful to sprinkle the outside of the grilled cheese sandwiches with garlic salt. Use your judgement based on what your picky eater will tolerate.
