CORY'S SPICY DIRTY RICE



Cory's Spicy Dirty Rice image

Delicious Louisiana inspired combination of rice, peppers, onion, celery, and your favorite andouille sausage. Spice it up to your liking!

Number Of Ingredients 12

1 green peppers (or half of each) or 1 red pepper (or half of each)
1 -2 tablespoon olive oil
1 stalk celery
1 large onion
andouille sausage
2 -3 garlic cloves (2 tsp minced)
2 cups chicken stock
1 1/2-2 cups brown rice (Family style boil-in bag works great) or 1 1/2-2 cups white rice (Family style boil-in bag works great)
hot sauce (1-2 teaspoons)
black pepper
cayenne pepper (1/2 tsp or to your liking)
salt

Steps:

  • 1) Finely chop green pepper, onion, and celery and set aside. You want the pieces to be similar in size to cook evenly.
  • 2) Begin cooking rice (per directions on box or bag).
  • 3) Preheat a large skillet or large pot with olive oil over medium heat.
  • 3) Slice andouille sausage into 0.5 -1 inch pieces.
  • 4) Place sausage into pot and cook for 4-5 minutes season with a pinch of salt and black pepper.
  • 5) Add garlic and other vegetables and cook for 2-3 minutes.
  • 6) Place chicken stock into pot and bring to a boil. Stir in cayenne pepper. Reduce heat by half and let simmer for 10-15 minutes until vegetables are tender and stock has reduced by half.
  • 7) Combine cooked rice into skillet or pot and add hot sauce. Let simmer for 2-3 minutes to combine all flavors.
  • 8) You can serve this with salad or bread. Enjoy!

Hearty Dish! Made with sausage bits. My family loves this along with a vegetable or fruit. The recipe is for mild sausage but for those liking heat, hot sausage and a few red pepper flakes may be used. Microwaved leftovers can be enjoyed.

1 onion, chopped
1 celery rib, chopped
2 tablespoons olive oil
1 lb pork sausage (bulk)
1 carrot, finely chopped
1 1/2 cups uncooked rice
1 (14 1/2 ounce) can chicken broth
1 1/2 cups water
1/4 teaspoon garlic powder
1/2 teaspoon salt
black pepper

Steps:

  • Saute onion and celery in olive oil and set aside.
  • Brown pork sausage, drain and crumble.
  • In a separate large saucepan with lid, combine onion, celery, sausage, carrot, rice, chicken broth, water, garlic powder, salt and black pepper.
  • Simmer on very low heat covered for approximately 30 to 40 minutes until rice is done. Stir occasionally to prevent rice from sticking on bottom.

1 lb ground pork (lean to very lean) or 1 lb ground turkey (lean to very lean)
1 cup onion, diced (fresh or frozen)
1 cup bell pepper, chopped (fresh or frozen)
1 teaspoon celery salt
1 teaspoon mild chili powder
1 teaspoon cumin powder, rounded
2 teaspoons adobo seasoning
1 -2 tablespoon margarine or 1 -2 tablespoon butter
2 cups long grain white rice
2 chicken stock cubes or 2 vegetable bouillon cubes
1 1/2 pints boiling water

Steps:

  • 1. Saute' onion and mixed bell peppers in a large skillet in the margarine until soft.
  • 2. add the ground meat and cook until browned.
  • 3. add celery salt, chilli powder, cumin, Adobo and salt and pepper mix well.
  • 4. Mix stock cube and boiling water and desolve completely.
  • 5. add rice and stock liquid to the meat and veg and stir.
  • 6. let summer for 30 - 40 mins until water is evaporated and rice is tender. (if rice is still not tender add another 1/2 cup water and let it simmer and check rice again when evaporated.).

2 tablespoons canola oil
5 garlic cloves (peeled and minced)
1 onion (medium chopped)
1/2 cup celery (chopped)
1/2 cup bell pepper (chopped)
1 lb ground turkey
1 lb hot Italian sausage (remove from casing)
2 tablespoons jalapenos (finely chopped)
1 cup long grain white rice (uncooked)
2 1/2 cups light chicken broth
1/2 cup scallion (chopped)
2 teaspoons seasoned pepper
salt and pepper

Steps:

  • Het oil in large nonstick skillet over medium heat. Add the garlic, onion, celery, and bell pepper, stirring to blend.
  • Cook, stirring frequently , for about 3 minutes or uniil the veggies have wilted and the garlic is golden. Add the turkey (both), cook for about 7 minutes or until nicely browned. Add the jalapenos and season to taste with salt and pepper.
  • Stir in rice. Add the broth and blackened spice and bring to a boil.
  • Lower the heat, cover, and simmer for about 25 minutes or until the rice is tender.
  • Remove fro heat. Stir in the scallions. Taste and, if necessary, add salt and pepper and serve.

SPICY DIRTY RICE

This is a family favorite. This can be made without the seasonings and still taste good. If you can handle it, you can add cayenne pepper for that extra kick. If you find this is too spicy, I would recommend topping it with Parmesan cheese. Warning, this is spicy!

1 1/2 cups rice
3 cups water
2 (10 ounce) cans rotel
1/4 teaspoon cayenne pepper (optional)
grated parmesan cheese (optional)

Steps:

  • Brown and drain ground beef in large skillet.
  • Cook rice using the rice and water measurements above. boil water, cover and simmer rice for 20 minutes.
  • Add Rotel and cayenne pepper if desired.
  • Let simmer additional 5-10 minutes.
  • Serve and top with Parmesan cheese if desired.

This a great dish I adapted from several recipes. The great thing is you can make this as spicy as you want. This goes great with a splash of hot sauce on top and some corn bread. Yummy!

1/2 lb ground beef
1/2 lb hot Italian sausage, casings removed and crumbled
1 yellow onion, diced
2 celery ribs, sliced
8 ounces dirty rice mix
2 cups water
1 (10 ounce) can of hot diced tomatoes and green chilies
1 (15 ounce) can dark red kidney beans, drained
1 1/2 teaspoons cajun seasoning

Steps:

  • In a skillet, cook the ground beef and sausage until almost completely brown.
  • Add the onion and celery. Cook for an additional five minutes, then drain off the fat.
  • In a separate pot, combine the water, dirty rice mix, tomatoes, and kidney beans.
  • Bring to a boil and add in the cooked meat.
  • Return to bubble, cover, and simmer for 25 minutes.

1/3 cup olive oil
2 cups onions, chopped
1 cup green pepper, chopped
1 -2 jalapeno pepper, seeded and minced
kosher salt and black pepper, to taste
1/2 lb chicken thigh, boneless & skinless, cut in 2 inch cubes
1 lb sweet Italian sausage
1/4 lb ham, cooked (cut in strips or cubes, about one cup)
1/4 lb pork (or any other cooked meat, cooked, shredded or diced, about 1 cup)
1/2 lb chicken liver, pureed in a food processor
3 cups chicken broth (or stock)
1/4 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1 bay leaf
1 1/2 cups long-grain rice, parboiled (preferably Uncle Ben's)

Steps:

  • Set a Dutch oven on the burner. Pour in the oil and get it nice and hot over medium-high heat.
  • Toss in the onions, green peppers and jalapenos.
  • Season with salt and pepper.
  • Cook til tinged with brown; then add the garlic and cook 1 minute more.
  • Toss in the cubed chicken and cook, stirring, til the pieces are coated with the veggies.
  • Crumble in the sausage and keep cooking and stirring til it loses its pink color.
  • Toss in the remaining meats and the liver puree.
  • Douse the meats with the broth and add the cayenne, cumin, oregano and bay leaf.
  • Stir in the rice and bring it all to a boil.
  • Cover and turn the heat down low.
  • Cook for 20 minutes without stirring.
  • Pull the pot off the stove and remove the bay leaf. Now give it a stir and it's ready to serve.
