Ingredients

2 (10 ounce) cans chicken breast, drained
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
½ pound pepperjack cheese, shredded
1 (8 ounce) package cream cheese
1 cup cubed processed cheese food (such as Velveeta®)
½ cup shredded Mexican cheese blend

Steps:

Mix chicken, cream of chicken soup, diced tomatoes with green chile peppers, pepperjack cheese, cream cheese, cubed cheese food, and Mexican cheese blend in a 2-quart microwave-safe bowl.
Heat in microwave in 30 to 60 second intervals, stirring between each interval, until the cheese is all melted and can be stirred into a smooth mixture, about 5 minutes; transfer to a slow cooker set to Low to keep warm while serving.

4 oz cream cheese, softened
1/2 cup sour cream
1 tablespoon Old El Paso™ chicken taco seasoning mix (from 0.85-oz package)
2 cups chopped deli rotisserie chicken
1 cup frozen whole kernel sweet corn, thawed
2 cans (4.5 oz) Old El Paso™ Chopped Green Chiles
1 1/2 cups shredded Mexican cheese blend (6 oz)
Chopped fresh cilantro leaves, if desired
Tortilla chips, if desired

Steps:

Heat oven to 375°F. Spray 10-inch ovenproof stainless steel skillet with cooking spray. In medium bowl, mix cream cheese, sour cream and taco seasoning mix.
Add chicken, sweet corn, green chiles and 1 cup of the Mexican cheese blend, stirring to combine. Transfer mixture to skillet, and top with remaining 1/2 cup Mexican cheese blend.
Bake 32 to 35 minutes or until cheese is melted and bubbling around edges. Garnish with cilantro. Serve with tortilla chips.

Put all the ingredients --- except the tortilla chips --- into a large mixing bowl. Mix well. Make sure all the elements are well combined.
Spread the mixture into a casserole dish. Spread out so it is an even depth. If you like you can sprinkle a few more of the chopped chilies across the surface.
Bake for about 25-30 minutes, or until bubbling all around and starting to brown on the surface. If it's not bubbling and starting to brown, cook it a little longer. Finish off for a few minutes on the top rack under the broiler to get more browning, if you like.
