BROCCOLI CASHEW SALAD
This was on the table at a potluck cast party/Christmas party, and I hunted down the chef and begged her for the recipe. I'm not usually a nuts-in-nondesserts kind of person, but this stuff is amazing! Trust me, try it...

Steps:
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Cool bacon and crumble into pieces.
- Whisk together the mayonnaise, cider vinegar, and sugar in a mixing bowl until the sugar has dissolved. Add the broccoli, raisins, cashews, onion, and crumbled bacon. Stir until evenly coated. Cover and refrigerate the salad for at least 2 hours. Let stand at room temperature 15 to 20 minutes before serving.

A delicious salad that goes with any type of celebration. I received this recipe from my mom, and its a favorite at our family gatherings. The addition of the Craisins adds a nice sweetness to this salad. It makes plenty, so if serving for a small family, you may want to half the recipe.

- Mix vinegar, oil, sugar, mustard, onion, and poppy seeds together in a jar with a tight fitting lid.
- Shake well, until mixed.
- Refrigerate overnight, or for at least 6 to 8 hours.

ROMAINE CASHEW CRANBERRY SALAD
This mild, fun salad with crispy, flavorful, sweet and tangy ingredients makes a beautiful addition to your table, and a joy to serve.

- Spread cashews in a baking pan, and toast in oven at 250° for 30-40 minutes, stirring every 10 -15 minutes until they are medium golden brown. Set aside to cool.
- Thoroughly rinse the romaine lettuce.
- Thinly cut or tear lettuce into thin strips, then run through a salad spinner to dry.
- Cut the apples into thin strips or small cubes, put in a bowl, and sprinkle lemon juice over the pieces, mixing well with a spoon to coat.
- Layer salad, then cashews, cranberries, cheese, and apple pieces in 3 separate layers in a serving bowl, tossing each layer very lightly and gently to mix, careful to prevent the heavier pieces from falling to the bottom of the bowl.
- Serve with poppy seed dressing or raspberry vinaigrette on the side.
CREAMY CASHEW SALAD DRESSING
I created this for my cousin who cannot eat (drum roll) dairy, soy, eggs, peanuts, or yeast. She wanted a creamy salad dressing, and after looking at others for inspiration, this is what we came up with. It is really nice, reminiscent of hummus, and pretty darn healthy! This is my favorite chicken pasta salad! The tangy dried cranberries and crunchy cashews combine wonderfully in a creamy pasta salad that is substantial enough for a main dish or perfect as a summer side dish. It is pretty enough for company and can be made up to a day a head. We served this as a side dish at our summer wedding reception five years ago and I still get compliments.

- In a large bowl mix all salad ingredients together, except cashews and Craisins.
- Whip together Dressing ingredients. Toss dressing with the mixture in the large bowl.
- Let this mixture marinate in the fridge for 12-24 hours.
- Mix in cashews and Craisins just before serving. Serve cold.
- *Note: You could use almonds instead of cashews, but I prefer the cashews. You could also use a different brand of coleslaw dressing, but I've had the best results with Hidden Valley brand. *.
