SIMPLE SAVOY CABBAGE

Simple Savoy Cabbage image

This is a wonderful way to cook savoy cabbage, do not overcook as the cabbage will turn to mush; this is spicy, so use less pepper if you like your food tamer. This is great with an asian dish such as fried rice.

CURRIED SAVOY CABBAGE SOUP WITH MUSHROOMS

Curried Savoy Cabbage Soup With Mushrooms image

My parents grow a lot of vegetables. Although I live quite far away from them and neither of us has a car, I sometimes see my sister. Last time I saw her she gave me a savoy cabbage from my parents. Not being a big fan of cabbages, I was quite happy to find this Curried Cabbage Soup in the new edition of the Swiss cooking magazine called 'KOCHEN' (November 2005). I love spices and I enjoy nearly every dish with curry powder or paste in it. I used a recently bought Sri Lankan curry powder, which - as I found out - happens to be very very hot. The second time I prepared this soup I used half a tablespoon of the Sri Lankan and half a tablespoon of a mild curry powder. This soup makes a lovely starter or a nice meal.

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 12

11 ounces savoy cabbage (300g)
1 medium onion
8 sprigs thyme
1 medium potato
1 ounce butter (30g)
1 tablespoon curry powder
3 1/4 cups vegetable stock or 3 1/4 cups chicken stock
7 ounces mushrooms
4 tablespoons chopped fresh parsley
salt
pepper (freshly ground)
1/2 cup half-and-half cream

Steps:

  • Cut the savoy cabbage into wedges, core and shred it. Chop the onion. Remove leaves from the thyme sprigs. Peel and cube potato.
  • Heat half of the butter in a high pan until butter melts. Lower heat and add the shredded savoy cabbage and onion. Cook for 3-4 minutes, stirring frequently.
  • Add curry powder and mix. Add chopped potato, thyme leaves and stock. Increase heat, add a lid and cook on low/medium heat for 25-30 minutes.
  • Slice the mushrooms and chop the parsley.
  • Blend the soup with a hand blender. Add the cream. Check if more water or curry is needed. Season with salt and pepper if necessary. Warm the soup, but don't heat it too much, as the cream may curl (depending on the fat content of the cream and on the temperature you heat it).
  • Heat the remaining butter in a skillet and fry the mushrooms. Season with salt and pepper. Add parsley when mushrooms are cooked.
  • SERVE:.
  • Pour soup into bowls and top with mushrooms.

NORTH CROATIAN KOHLRABI STEW (KOLORABA CUSPAJZ)

North Croatian Kohlrabi Stew (Koloraba Cuspajz) image

This is very old recipe I usually eat in spring. This is a side dish, we usually eat some meat and potato with it (beef cutlet or pork chops or...) It is important to use fresh and baby kohlrabi. If the kohlrabi is old and big you will have wooden parts inside. It is also important to use fresh: more time you store it, better chance to have woody kohlrabi. Actually, as I write this recipe I'm also cooking it.

Provided by nitko

Categories     Stew

Time 45m

Yield 3 portions, 3 serving(s)

Number Of Ingredients 7

500 g kohlrabi (peeled, without leaves)
1 tablespoon lard (or butter)
1 tablespoon flour (all purpose)
1 teaspoon salt
1/2 teaspoon pepper (white, grounded)
1 cup water
100 g sour cream

Steps:

  • Peel kohlrabi like you peel apples. Remove leaves (don't throw away baby leaves, you can slice them and put into stew later) and cut kohlrabi like you cut potato for French fry potato, but just little bit thicker.
  • Melt lard (or butter) in a pot, add flour and sauté it 1 minute. Add water and make creamy liquid. Add sliced kohlrabi and add water to cover the vegetable. Add salt and pepper and baby leaves if you want.
  • Cook about 30 minutes or until kohlrabi softens.
  • At the end add sour cream, stir well and serve.

QUICK KIDNEY BEAN SOUP WITH SAVOY CABBAGE

Quick Kidney Bean Soup With Savoy Cabbage image

Entered for safe-keeping for ZWT. By Ana Patuleia Ortins from "Portuguese Homestyle Cooking". Per Ms. Ortins, "While you can use canned beans in a pinch, keep a watch on the sodium level. If time permits, use the less expensive and healthier method of presoaking dried legumes overnight, rinsing them then cooking them in unsalted water or broth and set aside until needed. You can do this a day or two ahead.. To have presoaked beans cook in your soup, add salt only towards the end when the beans are tender. Salting too early will result in tough beans."

Provided by KateL

Categories     One Dish Meal

Time 1h37m

Yield 6 serving(s)

Number Of Ingredients 11

6 cups water
2 cups savoy cabbage, finely shredded
2 cups cooked kidney beans (see recipe description, include liquid from canned beans) or 28 ounces canned low-sodium kidney beans (see recipe description, include liquid from canned beans)
3 tablespoons olive oil
1 garlic clove, finely chopped
1/4 cup small shell pasta
1/4 cup short-grain rice or 1/4 cup arborio rice
1 1/2 teaspoons coarse salt (to taste)
1/4 lb fresh green beans, trimmed ends and cut into 1/2-inch pieces
1 carrot, peeled and cut into 1/2-inch cubes
1/4 teaspoon black pepper (to taste)

Steps:

  • In a 4-quart pot, combine the water with the cabbage, beans, and olive oil. Cover and bring to a boil over medium-high heat.
  • Reduce the heat to medium-low and with an occasional stir, simmer the soup for 40 minutes until the beans are easily mashed with a fork.
  • Using the back of a long-handled fork or spoon, mash some of the beans against the inside of the pot. (You can also remove about ½ cup to a dish and mash them then scoop them back into the pot.).
  • Return the soup to a boil and add the pasta, rice and salt. Reduce the heat and continue to simmer, covered for 15 minutes then toss in the carrots, green beans and pepper.
  • Simmer 10 more minutes until the vegetables are tender to your taste.
  • Serve with some crusty bread.
