COWBOY CHUCKWAGON CHOW
I created this for my husband as he loves his baked beans. My Aunt Freida is the best baked bean maker I Know. So I took her recipe and added all my husbands' favorites in addition and came up with this Awesome baked bean recipe.

Steps:
- Preheat oven to 400^.In a large roasting pan, Pour beans into roasting pan.
- In a large skillet fry 1 pound of bacon. drain on paper towels and set aside to cool. In the same skillet fry sausage, chopped onions and ground chuck, until no longer pink. Drain off fat.
- Put bacon,sausage meat mixture into a food processor and chop till fine.
- Add meat and all ingredients to the beans. mix well. Top beans with remaining pound of raw bacon. Bake for 30 minutes.
- * I use Bush's Baked beans with their variety of flavors. one of each flavor..to put extra mmmmmm in the beans.
CHUCKWAGON CHOW

Steps:
- 1. Combine the paprika, salt, pepper and flour into a Ziploc bag. Add the beef and shake until the spice/flour mixture covers the beef pieces.
- 2. Bring 2 Tbsp olive oil to medium heat in a large skillet. Brown the beef on all sides, stirring occasionally. Add the pepper and onion and cook until the onion is softened, about 5-6 minutes. Add the garlic and stir constantly for 2 minutes. Add the broth, chili powder, cilantro, mustard, salt and pepper, and stir well to combine.
- 3. Bring the stew to a boil, cover, and reduce heat to a medium simmer. Cook for 35-40 minutes, and then add corn and kidney beans. Cover and cook for an additional 15 minutes.
ONE-POT CHUCKWAGON CHOW
Try serving this mild chili-like dish with tortilla chips or flour tortillas, suggests Dorothy Cowan of Ferndale, California. She adds, "Since this cooks up in a single pot, it's perfect for camping, too."

- In a skillet, brown beef well in oil. When cooked, transfer to a large Dutch oven and mix in garlic well. Add water, tomatoes, lemon, onions, salt, pepper, and sugar. Mix well and simmer 2 hours, stirring occasionally. Add carrots, potatoes, cloves, and crushed basil leaves. Cover and cook until vegetables are tender. Add canned peas and heat. If necessary, to thicken gravy, thicken with flour, dissolved in water. Serve hot.

- In a large resealable plastic bag, combine the flour, paprika, 1 teaspoon chili powder, salt and garlic powder. Add beef, a few pieces at a time, and shake to coat. , In a large soup kettle, brown beef in oil in batches. Stir in the onions, tomatoes, broth, bay leaf, cayenne and remaining chili powder. Bring to a boil. Reduce heat; cover and simmer for 30 minutes, stirring occasionally., Add potatoes and carrots. Cover and simmer 35-40 minutes longer or until meat and vegetables are tender. Add corn and heat through. Discard the bay leaf before serving.
