CAST-IRON COBBLER WITH LOUISIANA BLACKBERRIES AND SASSY SAUCE

1 stick (1/2 cup) melted unsalted butter, plus additional for greasing the skillet
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher salt
2 cups sugar
1 cup whole milk
12 ounces fresh blackberries
1 cup boiling water
Sassy Sauce, recipe follows
One 14-ounce can sweetened condensed milk
1 cup heavy cream
Splash rum

Steps:

  • Preheat the oven to 350 degrees F and butter a 10-inch cast-iron skillet.
  • Whisk together the flour, baking powder, salt, 1 cup sugar, the melted butter and milk in a large bowl. Beat well, then pour the batter into the buttered cast-iron skillet. Top with the fresh blackberries. Sprinkle with the remaining cup sugar, then pour the boiling water over the top.
  • Bake until the filling is bubbling and the cobbler topping is golden, 35 to 40 minutes. Pour sassy sauce over the top before serving.
  • Whisk together the sweetened condensed milk and the heavy cream in a saucepan over low heat until combined and warm. Spike with rum. Pour over the cobbler.

¾ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
  • Blend together flour, baking powder, sugar, and milk.
  • Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

Short of serving store-bought ice cream, you won't find a simpler, more delicious dessert than this fruit cobbler. Use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries. And if you use frozen berries, this dessert can be assembled in less than 10 minutes.

4 tablespoons butter
¾ cup all-purpose flour
¾ cup sugar
1 teaspoon baking powder
¼ teaspoon salt
¾ cup milk
2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
1 tablespoon sugar

Steps:

  • Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
  • Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
  • Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
  • Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

1 ¼ cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
¼ teaspoon salt
1 cup milk
½ teaspoon vanilla extract
4 cups fresh peaches, pitted and sliced

Steps:

  • Melt butter or margarine in a 9 x 13 inch pan. Set aside to cool.

This is one of the old country recipes from the Cajun heritage. Frances Thibodeaux from Scott, La. has used this recipe for many years. I love it because it reminds me of the berry picking days of my youth. The reward was a homemade cobbler with the fruit we had picked that day. I have looked for many years to find THIS recipe. It taste like the cobblers of my childhood days. My search is over and this one is in my favorite file. During the baking process, the batter rolls over and you end up with a sugar glazed crust. Enjoy!

Number Of Ingredients 7

1 (21 ounce) can pie filling
1/2 cup margarine (melted) or 1/2 cup butter (melted)
1 cup plain flour
1 cup granulated sugar
2/3 cup milk (regular)
1 tablespoon baking powder
1 pinch salt

Steps:

  • Mix in a large bowl the melted margarine or butter, flour, sugar, milk, baking powder and salt.
  • Mix all these ingredients and then pour the batter in a margarine greased 9x9 pan.
  • Stir the fruit in the can well before use.
  • Using a large tablespoon, add the fruit of choice by the spoon and drop method. Use the whole can.
  • Bake 1 hour at 350 degrees.

Never use more than 1 quart of fruit. Only use fresh fruit for this recipe. Any variation will work! I usually do use sweetened peaches and lightly sugared berries, but this is optional. Serve warm with cream, ice cream, or whipped cream.

¾ cup peeled, cored and sliced apple
¾ cup peeled, cored and sliced pear
½ cup blueberries
½ cup pitted and sliced cherries
½ cup pitted and sliced plums
1 egg

1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon vanilla extract
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • Arrange the peaches, apple, pear, blueberries, cherries, and plums in the prepared baking dish. In a medium bowl, beat egg, sugar, and milk. In a separate bowl, sift together flour, baking powder, and salt; stir into the egg mixture. Stir in vanilla and melted butter. Cover the fruit with the batter mixture.
  • Bake 30 minutes in the preheated oven. Cobbler should be bubbly and lightly browned. Serve warm.
