Asparagus Salad With Hard-Boiled Eggs image

A classic Italian salad, there are many versions of this dish. Sometimes the asparagus are not cut up, just topped with chopped hard-boiled eggs and vinaigrette. I like to cut them into pieces and toss everything together.

1 pound asparagus
2 hard-boiled eggs
2 tablespoons champagne vinegar or sherry vinegar, or 1 tablespoon each fresh lemon juice and vinegar
1/4 cup extra virgin olive oil
2 teaspoons capers, rinsed and chopped
2 tablespoons chopped fresh parsley or a mixture of parsley, chives and tarragon
Salt
freshly ground pepper to taste

Steps:

  • Snap the woody ends off the asparagus. Steam for five minutes. Refresh with ice-cold water, then drain and dry on paper towels. Cut into 1/2-inch pieces.
  • Cut the boiled eggs in half, mince the yolks and whites separately, and season with salt and pepper
  • In a salad bowl, whisk together the vinegar (or lemon juice and vinegar) and olive oil. Season with salt and pepper to taste. Add the asparagus, capers and herbs, and toss together. Add the chopped egg yolks and whites, then toss together again and serve.

Serve this meatless egg bake with a bowl of fresh berries and your favorite muffins.

2 cups cut (1 inch) asparagus spears
1/2 cup chopped red bell pepper
8 medium green onions, sliced (1/2 cup)
2 cups shredded Swiss cheese (8 oz)
3/4 cup Original Bisquick™ mix
1 1/2 cups milk
1 teaspoon lemon-pepper seasoning salt
3 eggs

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 1-quart saucepan, heat 1 inch water to boiling. Add asparagus; cook uncovered 2 minutes. Drain thoroughly.
  • In baking dish, mix asparagus, bell pepper and onions. In medium bowl, stir 1 1/2 cups of the cheese and the remaining ingredients until blended; pour into baking dish.
  • Bake uncovered 35 to 40 minutes, sprinkling with remaining 1/2 cup cheese for last 5 minutes of baking, until knife inserted between center and edge comes out clean.

1 -2 lb fresh asparagus
4 tablespoons butter
1 tablespoon flour
1 cup chicken broth or 1 cup vegetable broth
1 cup milk
1 cup grated swiss cheese
1/2 cup breadcrumbs

Steps:

  • Preheat oven to 400 degrees.
  • Melt butter in a sauce pan.
  • Add flour and mix until incorporated.
  • Add your milk to the flour mixture.
  • Add broth and simmer until thickened, remember to poor in slowly.
  • Add your cheese and put aside until you need it.
  • Trim or peel asparagus and place into a oven proof dish.
  • Pour your sauce over the asparagus and top with the breadcrumbs.
  • Place dish in oven for about 15 minutes and serve nice and hot.
  • Enjoy!

This is a great summer/bbq salad that's really easy to make. Light mayo can be used instead of the regular type for a lighter salad, but it's still not exactly low fat! The most important ingredient is the mustard, so don't leave it out!

5 -7 potatoes
3 celery ribs (diced)
1/2 cup chopped green onion
1/3 cup diced red bell pepper
3 hard-boiled eggs
1 cup mayonnaise
1/4 cup milk
1 1/2 teaspoons mustard
2 teaspoons salt
1 teaspoon black pepper (or to taste)
1 teaspoon paprika

Steps:

  • Peel potatoes, cut into 1 inch cubes and boil until tender. Cool in refrigerator for 1 hour.
  • Once cooled, place potatoes in large bowl. Add chopped celery, green onion and red pepper.
  • Shell eggs and chop coarsely (each into about 8 sections). Add to potatoes and veggies.
  • In small bowl, whisk together mayonnaise, milk, mustard, salt, pepper and paprika.
  • Combine mayonnaise mixture with potatoes until ingredients are well mixed.
  • Note: The amount of mayo can be reduced or increased depending on preference.

1 medium thick asparagus bunch, tough ends removed
2 tablespoons olive oil
Coarse salt
1/2 cup balsamic vinegar
1 teaspoon light-brown sugar
1 tablespoon cider vinegar
4 large eggs
2 ounces shaved parmesan

Steps:

  • Preheat oven to 400 degrees. On a baking sheet with a rim, toss asparagus with oil. Season with salt. Bake until asparagus is lightly browned and tender, 15 to 18 minutes (timing will vary depending upon thickness of asparagus).
  • In a small saucepan, cook balsamic vinegar and sugar over medium-high heat until syrupy and reduced to 3 tablespoons, about 6 minutes.
  • Meanwhile, bring a large skillet with 2 inches of water to a simmer over medium heat. Add cider vinegar and season with salt. Break one egg at a time into a cup, then tip cup into pan. Simmer until whites are set and yolks are soft but slightly set, about 3 minutes. With a slotted spatula, scoop out eggs one at a time and drain on paper towels. With a paring knife, trim edges.
  • Divide asparagus among four plates and drizzle with reduced balsamic. Top with shaved Parmesan and an egg.

A very light, simple chicken soup. Time does not include time to bring stock to boil ... might add another 5 minutes? Hehehe, I know I shouldn't write this here because you might not want to try it! Here's my friend's reaction even though I warned him that it was mildly flavored and easy on the stomach...and that he might want to add the very ingredients that he did! "About the soup...hehehe...I boiled the chicken in water for the broth, then added the chicken stock, shredded chx and asparagus. Well, the flavor just wasn't there and so I added a little salt then shoyu...something is missing...Aha, a little bit of dashi, the one with no MSG. Suddenly it changed the whole flavor! Auwe! Jam-up! And SO I decided to add sesame oil. Now this soup has gone through a metamorphosis...I call this soup: Oriental flavored Chicken Asparagus Soup. Guess I'll be bringing the soup to work for lunch."

6 ounces boneless skinless chicken thighs, sliced thin (about the size of the chopped chicken you can buy at the grocers)
1 teaspoon cornstarch paste (a tsp cornstarch plus water to make paste)
6 ounces fresh asparagus
3 cups chicken stock
fresh ground pepper (to taste)

Steps:

  • Bring stock to a rolling boil in a medium size pot.
  • Combine chicken and cornstarch paste in small bowl; set aside.
  • Cut off and discard tough ends of asparagus. Diagonally slice tender parts into short lengths -- about 1 to1-1/2 inch lengths.
  • Add the asparagus to the boiling stock. Bring to a boil and simmer for 2 minutes.
  • Add the chicken to the pot, stirring to separate. Bring back to a boil and simmer for another 2 minutes.
  • Add pepper to your taste. Serve hot.
  • NOTE: A little cilantro to garnish and flavor is nice.

1 pound fresh asparagus, trimmed and cut into 2-inch pieces
1/2 pound sliced fresh mushrooms
1 teaspoon minced chives

2 tablespoons all-purpose flour
2-1/4 teaspoons salt-free seasoning blend
1/2 teaspoon salt
2-1/4 cups whole milk
1-1/2 cups shredded Swiss cheese
Grated Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-5 minutes or until crisp-tender., In a large saucepan, saute mushrooms and chives in butter until tender. Stir in the flour, seasoning blend and salt; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add the Swiss cheese; cook and stir until melted. , Drain pasta and place in a large bowl. Add asparagus and cheese sauce; toss to coat. Garnish with Parmesan cheese if desired.

6 medium eggs
750 g baby potatoes
200 g French beans
185 g tuna in water
50 g black olives, pitted
1/2 small red onion, very finely sliced
100 g cherry tomatoes, halved
12 basil leaves
50 ml cider vinegar
25 ml olive oil
5 ml lemon juice
salt and pepper

Steps:

  • Boil the eggs for 5 minutes. Plunge into cold water and peel at once.
  • At the same time, boil potatoes for 20 minutes. Drain and allow to cool.
  • Also cook french beans in boiling water until tender, but with some bite. (Or use the microwave oven.).
  • Halve the olives, slice the onion and drain the tuna chunks.
  • Mix together the dressing ingredients and coat the potatoes and beans with the mixture.
  • Arrange the tomatoes, olives, onion, tuna basil leaves and lastly arrange the quartered eggs.

  • To prepare salad: Put a large pot of salted water on to boil. Fill a large bowl with ice water and place next to the stove. Boil asparagus until bright green and just tender, about 3 minutes. Immediately transfer to the ice water with a slotted spoon. Add eggs to the boiling water and cook for 6 1/2 minutes. Meanwhile, remove the asparagus to a clean kitchen towel and pat dry. Transfer the eggs to the ice water and let stand until cool.
