Time 55m

Number Of Ingredients 23

1 ½ lb lean ground beef (or ground chicken or ground turkey)
2 to 3 garlic cloves, minced
1 raw egg, whisked
½ cup freshly grated Parmesan cheese
1/3 cup plain bread crumbs
2 tsp dry oregano
½ tsp sweet paprika
Kosher salt and black pepper to taste
½ to 1 cup fresh chopped parsley
Extra virgin olive oil (I used Private Reserve EVOO)
Extra virgin olive oil (Private Reserve EVOO)
1 small onion, chopped (about ½ cup)
2 carrots, chopped
1 small green bell pepper, cored and chopped
2 celery stalks, peeled and chopped
1 to 2 garlic cloves, minced
5 to 6 cups broth (vegetable or beef broth)
1 28-oz can peeled tomatoes with juices
1 tsp dry oregano
½ tsp paprika
Salt and pepper
¾ cup dry small pasta like ditalini or small shells
½ cup chopped fresh parsley

Steps:

  • Place the meatball ingredients in one large mixing bowl. Drizzle a little extra virgin olive oil. Mix until the meat mixture is well incorporated.
  • Form the mixture into meatballs about 1 ½ tbsp each (whatever size you choose, stick to it). Arrange the meatballs on a large, lightly oiled sheet pan and broil for 5 to 8 minutes until browned (they will cook some more in the soup).
  • In a large pot, heat about 2 tbsp extra virgin olive oil over medium-high heat. Add onions, carrots, celery, bell peppers, and garlic. Cook, stirring occasionally, for 5 minutes.
  • Add broth and tomatoes. Season with oregano, paprika, salt and pepper. Cook over mediu/medium-high heat for 10 minutes.
  • Add the meatballs and pasta. Cook for 10 minutes or until pasta is cooked.
  • Remove from heat and stir in parsley. Transfer to serving bowls, and if you like sprinkle a bit more grated Parmesan cheese. If you like heat, add some crushed pepper flakes. Enjoy!

HUNGARIAN MEATBALL SOUP

Hungarian Meatball Soup image

When I got married in 1993, my Grandmother gave me a large rubbermaid bin as a gift. The bin was full of cooking utensils and kitchen items that she picked up at various garage sales and thrift stores to help me on my way as a young wife. In the bin was 'The Hamburger Cookbook' By Ethel Mayer. I'm pretty sure that's first where I...

HUNGARIAN GOULASH SOUP

Hungarian Goulash Soup image

I taught with the Defense Department in Germany (and met my husband, an Air Force pilot, there). Goulash soup was one of the first foods I tried overseas...I pieced this recipe together once I got back home. I make it often-with two little boys, 3 and 1, it's nice knowing that dinner is "under control"!

  • Hungarian Mushroom Soup. This soup is thick, warm, and super satisfying. By sauteing the onions, garlic, and mushrooms in butter, you’ll release so much great flavor that has nowhere to go but into the soup.
  • Hungarian Chicken Paprikash Recipe. The color of this dish might make you think it’s loaded with tomatoes, but it’s that Hungarian paprika giving life to the humble chicken thigh.
  • Traditional Hungarian Goulash (Gulyás) If you’re going to try goulash, it should be this recipe. It’s the Hungarian national dish, after all! It may seem like nothing more than a stew, but it is so full of flavor and makes a beautiful change to boring old tomato or chicken noodle.
  • Hungarian Cottage Cheese Spread (Körözött) You’ll see this cottage cheese spread served all over Hungary, and there are a number of different versions.
  • Sausage Leczo / Lecso (Hungarian Vegetable Stew) The broth for this recipe is such a simple thing made from the juices of the vegetables, guaranteeing fresh flavors.
  • Hungarian Layered Potato – Rakott Krumpli. I was a little skeptical with this one – layered potatoes with cheese, sausage… and boiled eggs? It seems a bit out there; I know.
  • Hungarian Green Bean Soup Recipe. This soup is the perfect way to add some veggies to your meal, and it only needs half an hour from prep to table. I like using canned tomatoes since they come with lots of juice, but you can use fresh if they’re nice and ripe.
  • Hungarian Cauliflower Soup. Hungary was making this soup before it was cool to use cauliflower! It’s creamy, fast, and can be made vegetarian-friendly if you leave out the ham.
  • Hungarian Meatballs. Made using a mixture of pork and beef, these meatballs also incorporate onion, garlic, and peppers. They’re tasty and colorful! The sauce is a simple mix of canned tomatoes and crème Fraiche, but you can use sour cream or heavy cream too.
  • Hungarian Poppy Seed Bread Pudding (Mákos Guba) Poppy seeds have a nutty and slightly citrusy flavor to them, which is why we like them in our lemon muffins.

  • Place all the meatball ingredients in a medium-sized bowl and knead to thoroughly combine. Shape the mixture into 1-inch balls or whatever size you prefer.
  • Heat some oil in a skillet and once hot add the meatballs, browning on all sides. Transfer the meatballs to a plate and discard all but a tablespoon or so of grease.
  • Add the onions to the skillet and fry until translucent and golden brown. Add the garlic and fry for another minute (don't fry garlic too long or it becomes bitter). Add the mushrooms and fry until they've released their juices and they're mostly evaporated. Transfer the mushroom mixture to a bowl and set aside.
  • Add the butter to the skillet and melt it. Add the flour and whisk until dissolved. Continue whisking vigorously for another minute or two until the flour mixture is a deep golden brown. (We're creating what's called a roux, a French term and the grand secret for creating an irresistibly rich and flavorful sauce.)
