1 pound beef boneless sirloin steak, 3/4 to 1 inch thick, cut into 1-inch pieces
1 medium yellow or green bell pepper, cut into 1-inch pieces
1 cup 1-inch pieces pattypan or yellow summer squash
1 1/2 cups whole mushrooms
1 1/2 cups cherry tomatoes
1/2 cup Caesar dressing
1/4 teaspoon coarsely ground pepper
30 wooden skewers (6 to 8 inches)
Romaine leaves
Additional Caesar dressing, if desired
Chopped fresh chives, if desired

Steps:

  • In large resealablefood-storage plastic bag, place beef, bell pepper, squash, mushrooms and tomatoes. Mix 1/2 cup dressing and the ground pepper. Pour over beef and vegetables; seal bag and turn to coat. Refrigerate at least 1 hour but no longer than 4 hours, turning bag occasionally. Soak skewers in water about 1 hour to prevent burning.
  • Heat coals or gas grill for direct heat. Remove beef and vegetables from marinade; discard marinade. Remove skewers from water. Thread 1 or 2 pieces beef on each skewer. Add a mushroom, squash, bell pepper piece or tomato to end of each skewer.
  • Cover and grill kabobs 4 to 6 inches from medium heat 6 to 8 minutes for medium beef doneness, turning frequently.
  • Arrange romaine on serving platter. Top with kabobs. Spoon additional dressing into small bowl for dipping; sprinkle with chives.

4 small potatoes, scrubbed and halved
1 lb boneless beef sirloin steak or boneless, skinless chicken breasts, cut into 1-inch pieces
2 medium red and/or green bell peppers, cut into 1-inch pieces
1 medium onion, cut into 8 wedges
1/8 teaspoon black pepper
1/2 cup fat-free Caesar vinaigrette dressing

Steps:

  • In medium saucepan, heat 4 cups water to a boil over high heat. Add potatoes and cook 20 minutes or until fork-tender.
  • Meanwhile heat coals or gas grill for direct heat.
  • In large bowl, combine beef or chicken, potatoes, peppers, onion and pepper. Stir in dressing. Alternately thread meat and vegetables onto 4 metal skewers. Place on grill rack. Cover and grill kabobs 4 to 6 inches from medium heat, turning occasionally, 15 minutes for beef, 25 minutes for chicken, or until meat is no longer pink.

4 small new potatoes (1/2 lb.)
1 lb boneless beef top sirloin steak, cut 1 inch thick
1 medium red bell pepper, cut into 1 inch pieces
1 small onion, cut into 1 inch pieces
1/2 cup non-creamy caesar salad dressing
salt & pepper

Steps:

  • Microwave potatoes in micro-safe dish covered in plastic wrap with holes punched in it for 4 to 7 minutes, or until potatoes are just tender.
  • Cut beef steak into 1 1/4 inch pieces.
  • Combine beef, potatoes, onions, bell pepper in a large bowl.
  • Drizzle with all but 2 tablespoons of the dressing.
  • Toss to coat.
  • Marinate if desired, but not needed.
  • Thread ingredients on skewer, alternating meat and veggie.
  • Grill over medium heat, turning occasionally for 10 to 12 minutes (med to med-rare) more if desired.
  • Season with salt and pepper.
  • Drizzle with remaining dressing before serving.

MOM'S BEEF SHISH KABOBS



Mom's Beef Shish Kabobs image

My Mom has cooked this recipe for as long as I remember. Now that I live on my own, I can't wait to go back home over the holidays to have this excellent dish. Mom would probably be upset that I gave it away, but it is so delicious that I think everyone should have a chance to experience it. Technically shish kabobs use lamb, so these should be called beef kabobs, but this is the family recipe and what we call it.

⅓ cup vegetable oil
½ cup soy sauce
¼ cup lemon juice
1 tablespoon prepared mustard
1 tablespoon Worcestershire sauce
1 clove garlic, minced
1 teaspoon coarsely cracked black pepper
1 ½ teaspoons salt
1 ½ pounds lean beef, cut into 1-inch cubes
16 mushroom caps
8 metal skewers, or as needed
2 green bell peppers, cut into chunks
1 red bell pepper, cut into chunks
1 large onion, cut into large squares

Steps:

  • Whisk the vegetable oil, soy sauce, lemon juice, mustard, Worcestershire sauce, garlic, black pepper, and salt together in a bowl; pour into a resealable plastic bag. Add the beef, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 8 hours or overnight.
  • Add the mushrooms to the bag, coat with the marinade, squeeze out excess air, and reseal the bag; marinate in the refrigerator another 8 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the beef and mushrooms from the marinade, shaking off any excess liquid. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low, and simmer for 10 minutes; set aside for basting.
  • Thread pieces of green bell pepper, beef, red bell pepper, mushroom, and onion onto metal skewers, repeating until all ingredients are skewered.
  • Cook the skewers on the preheated grill, turning frequently and brushing generously with the reserved marinade until nicely browned on all sides and the meat is no longer pink in the center, about 15 minutes.

1 lb beef sirloin steak, cut into 16 pieces
8 wooden skewers
3 ears corn on the cob, cut into 1-inch-thick slices
1 green pepper, cut into chunks
1 cup kraft original barbecue sauce
3/4 cup chopped fresh cilantro

Steps:

  • CUT steak into 16 chunks. Thread evenly onto 4 of the skewers. Thread chunks of vegetables on 4 remaining skewers. Place in a shallow dish.
  • MIX barbecue sauce and cilantro. Pour half of the barbecue sauce mixture over kabobs; cover and refrigerate at least 4 hours or overnight to marinate. Refrigerate remaining barbecue sauce mixture for serving with kabobs.
  • PREHEAT grill to medium heat. Remove steak kabobs from marinade; discard marinade. Grill over direct heat 5 min.; turn kabobs over. Add vegetable kabobs to grill; cook an additional 5 to 6 minute or until steak is cooked through and vegetables are crisp-tender. Warm reserved barbecue sauce mixture; serve with kabobs.

Prep time includes overnight in fridge. We had this at a very dear friends house for dinner and my husband loved it. We made it nearly every weekend that summer and is still a summer time staple. Even a winter excursion from time to time.

1 -2 lb of cubed stew meat or 1 -2 lb your favorite cut steak, cubed
2 bottles 7 seas Italian dressing
1 whole fresh mushrooms
yellow peppers or green pepper, cut into 1 inch squares (or combination)
onion, cut into 1 inch squares

Steps:

  • Place meat into a bowl and cover with 2/3 of a bottle of dressing.
  • Place Veggies in a separate bowl and cover with remaining dressing.
  • You need enough dressing to cover all your meat and veggies.
  • Cover and place in refrigerator overnight.
  • Skewer and grill to desired doneness.
  • It's a good idea to cook veggies and meat separately or the veggies get over done and the meat will be under done.
