1 (11 ounce) package butterscotch chips
1 cup creamy peanut butter
4 cups cornflakes cereal

Steps:

  • In a medium saucepan over medium heat, melt butterscotch chips and peanut butter together. Remove from stove and stir in cornflakes. Drop by spoonfuls onto cookie sheets. Chill to harden.

Butterscotch-Walnut Cookies image

Rich butterscotch chips and hearty walnuts make these cookies warm and comforting.

Number Of Ingredients 10

1 stick (8 tablespoons) unsalted butter, at room temperature
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon pure vanilla extract
1 large egg
1 1/4 cups all-purpose flour (see Cook's Note)
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup butterscotch chips
1/2 cup roughly chopped walnuts

Steps:

  • Beat the butter, brown sugar and granulated sugar with an electric mixer on medium speed in a large bowl until fluffy. Add the vanilla and egg and beat to combine.
  • Whisk together the flour, baking soda and salt in a medium bowl. Add the flour mixture to the butter mixture and beat until just combined. Stir in the butterscotch chips and walnuts.
  • Line 2 baking sheets with parchment paper. Scoop slightly mounded tablespoons of the dough and roll into balls. Arrange the balls about 2 inches apart on the prepared baking sheets and refrigerate for 30 minutes.
  • Meanwhile, position oven racks in the top and bottom thirds of the oven and preheat the oven to 350 degrees F.
  • Bake the cookies until they are set and golden on the bottom, 12 to 15 minutes. Let cool on the baking sheets for 10 minutes, then transfer to racks to cool completely.

CLASSIC BUTTERSCOTCH DROPS RECIPE

Creamy and delicious, butterscotch is an old-fashioned favorite. This recipe for butterscotch drops produces a hard candy with a classic taste.

2 cups sugar
2/3 cup cream
2/3 cup water
1/8 teaspoon cream of tartar
6 tablespoons butter (cut into small pieces)
1/2 teaspoon vanilla extract

Steps:

  • Prepare 2 large baking sheets by lining them with aluminum foil and spraying the foil with cooking spray.
  • Combine the sugar, cream, and water in a large saucepan over medium heat and stir until the sugar dissolves. Add the cream of tartar and boil the mixture until it reaches 240 F ( soft-ball stage ). Add the butter and continue boiling until the mixture reaches 280 F ( soft-crack stage ).
  • Remove the pan from the heat and stir in the vanilla extract.
  • Using a very small teaspoon, carefully drop spoonfuls of the hot candy onto the prepared baking sheets. It is important to work quickly before the candy begins to set. The drops will spread, so leave a bit of space in between your spoonfuls. Continue forming small butterscotch drops on the prepared sheets until you run out of candy or it becomes too hard to work with.
  • Allow the drops to set at room temperature, then lift them off the baking sheet. Serve immediately, or place them in an airtight container and store at room temperature for up to 2 weeks.

2 cups all purpose flour
1/3 cup (packed) golden brown sugar
1 tablespoon baking powder
3/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, diced
1 cup butterscotch chips (about 6 ounces)
1/2 cup (or more) chilled whipping cream
1 large egg

Steps:

  • Preheat oven to 400°F. Sift all purpose flour, sugar, baking powder, and salt into medium bowl. Add chilled butter; using fingertips, rub in until coarse meal forms. Mix in chips. Whisk 1/2 cup cream and egg in small bowl to blend. Gradually add cream mixture to dry ingredients, tossing with fork until dough comes together in moist clumps. Add more cream by teaspoonfuls if dough is dry. Drop dough by 1/4 cupfuls onto large rimmed baking sheet, spacing apart. Bake scones until golden brown and tester inserted into center comes out clean, about 20 minutes. Serve warm or at room temperature.

GRANDMA JEANNE'S BUTTERSCOTCH WAFERS

This is a great holiday cookie because you can make a giant batch of dough and bake the cookies all at once or keep logs in the freezer and bake them when company is expected. One of my fondest food memories is making butterscotch-walnut cookies with my mom from a terrific recipe of my great-grandmother Jeanne Hirsch, who grew up in South Carolina. Jeanne, I was told, would roll the dough into long logs and wrap them in waxed paper for chilling before baking-something I still do. Bake as many cookies as you need and wrap the leftover logs in plastic wrap, then place them in a resealable freezer bag to bake another time.

1 ½ cups chopped walnuts
1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon fine sea salt
2 cups lightly packed dark brown sugar
½ cup unsalted butter, at room temperature
2 large eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the walnuts on a rimmed sheet pan.
  • Toast walnuts in the preheated oven until fragrant, 8 to 10 minutes. Transfer the walnuts to a plate and set aside.
  • Whisk flour, baking powder, and salt together in a medium bowl.
  • Add brown sugar and butter to the bowl of a stand mixer; cream on medium-low speed until combined. Increase speed to medium-high and beat until light and creamy, about 2 minutes. Reduce speed to medium-low and add the eggs, one at a time, mixing well after each addition and using a rubber spatula to scrape the bottom and sides of the bowl as needed.
  • Stop the mixer, add the flour mixture, and mix on low until flour is nearly incorporated. Add walnuts and continue to mix until there aren't any streaks of flour in the cookie dough.
  • Place about 1/2 of the dough in the center of a piece of parchment or waxed paper and use the paper to help you shape the dough into a 2-inch wide log. Roll the log back and forth so the sides are nicely rounded. Repeat with the remaining dough to make a second log. Set the parchment-wrapped logs on a baking sheet and freeze them until hard, about 2 hours.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Unwrap a log and place it on a cutting board. Use a sharp knife to slice the log crosswise into the thinnest possible rounds without having the cookies crumble apart, about 1/8- to 1/16-inch thick. Set the cookies 1 1/2 inches apart on the prepared baking sheet.
  • Bake in the preheated oven until golden around the edges, 10 to 12 minutes. Remove from the oven and cool for 5 minutes before using a spatula to transfer the cookies to a wire rack.

2/3 cup soft butter or 2/3 cup margarine
2 eggs
1 teaspoon vanilla extract
2/3 cup buttermilk
1 cup chopped pecans (optional) or 1 cup walnuts (optional)
3 cups sifted flour
1 teaspoon double-acting baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon

Steps:

  • Cream sugar and butter.
  • Beat eggs, milk and vanilla into mixture.
  • Add nuts.
  • Sift remaining ingredients together and blend into mixture.
  • Drop by teaspoonfuls on lightly greased cookie sheet (I highly recommend a non-stick cookie sheet).
  • Bake at 350 degrees for 8 to 12 minutes, until golden.
  • Cool on wire rack.
  • Optionally you can add chocolate chips - 6 ounce package.
