- In a chilled mixing bowl, begin whipping cream. Whip until frothy and slightly thicken.
- Add powdered sugar and cocoa powder. Carefully mix until soft peaks form.
- Add almond extract if desired. Whip until stiff peaks form.
- Spoon into plastic bag or piping bag with piping tip. Pip into serving bowls or glasses.
- Enjoy immediately or refrigerate until ready to serve.

- Place the chocolate chips, water, cocoa, sugar, and salt in a large mixing bowl, and microwave in short, 30-second bursts, stirring after each interval, until the mixture is melted and smooth (this can also be done over a double boiler).
- Fold in the whipped cream and vanilla extract.
- Divide the mixture evenly between 6 dessert glasses, cover, and chill in the refrigerator until set (about 1 hour).
- Top with sweetened whipped cream and sprinkle with cocoa powder (optional).

- Combine the milk, sugar, and espresso powder in a small sauce pan.
- Heat until the milk is hot but do not to a boiling.
- Place the chocolate in a blender and pour in the hot milk and blend for 10 seconds.
- Add the egg whites and blend for 1 minute.
- Pour into 4 small serving dishes and chill for at least 3 hours before serving.
