This is from Madge Rosenberg's cookbook, The Best Bread Machine Cookbook Ever - Ethnic Breads. She says in its introduction, "Although it has no nuts, this bread is nutty and fruity, dense and healthy. Amaranth, a high-protein grain from Central America, contributes the mellow flavor that goes so well with orange and honey. It is wonderful to wake up to the smell of amaranth bread and to start the day with a wallop of taste and nutrition."

Number Of Ingredients 10

2 1/4 teaspoons active dry yeast
2 1/2 cups bread flour
1/3 cup whole wheat flour
3/4 cup amaranth flour
3 tablespoons powdered milk
3 tablespoons honey
3 tablespoons grated orange zest
3/4 teaspoon salt
1 1/2 tablespoons vegetable oil
1 1/4 cups water

Steps:

  • Add ingredients to your bread machine in the order suggested by its manufacturer.
  • Process on the bread cycle.

1/4 cup unsalted butter, at room temperature
1/4 cup sugar
1/4 cup brown sugar, packed
2 large eggs
1/2 cup orange juice
1/2 teaspoon vanilla
2 tablespoons grated orange zest
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Confectioners sugar, for serving
Cranberry butter, for serving (recipe follows)

Steps:

  • Preheat the oven to 350 degrees F. In a large mixing bowl, cream the butter and both sugars together with an electric mixer. Beat in the eggs, one at a time, then mix in the orange juice, vanilla, and orange zest. Add the flour, baking powder, salt, orange zest, and vanilla and mix together well. Generously butter and flour a 10 inch bundt pan and scoop the batter into it, smoothing the top with a spatula. Bake for 30 to 35 minutes, or until the sides shrink away from the pan and the center of the loaf springs back. Cool the pan on a rack for 10 minutes, then turn out onto a round platter. Sprinkle a little confectioners sugar over the top of the bread and serve warm or at room temperature, accompanied by small pots of cranberry butter.

Made with a mix of white and wheat bread flours, amaranth flour, orange zest, and honey, this bread has a unique slightly sweet flavor and wonderful aroma. Suitable to make by hand or in your bread machine. I adapted this recipe from one I found online, while looking for bread recipes that use amaranth flour. Very good with butter and honey. Amaranth flour is available from Bob's Red Mill®. Stores that have a decent selection of natural foods or natural markets should stock it.

1 ¼ cups warm water - 110 to 115 degrees F (43 to 45 degrees C)
3 tablespoons honey
2 ¼ teaspoons active dry yeast
2 ½ cups bread flour
⅓ cup whole wheat bread flour
¾ cup amaranth flour
1 tablespoon vital wheat gluten flour
3 tablespoons grated orange zest
2 tablespoons vegetable oil
¾ teaspoon salt

Steps:

  • Stir water, honey, and yeast together in a large bowl. Let stand until the yeast softens and begins to form a creamy foam, about 10 minutes.
  • Whisk bread flour, whole wheat bread flour, amaranth flour, and vital wheat gluten flour together in a bowl.
  • Stir orange zest, vegetable oil, and salt into yeast mixture. Gradually add flour mixture to yeast mixture to form a sturdy dough. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes.
  • Place dough in a large, lightly-oiled bowl and turn to coat. Cover with a damp towel and let rise in a warm place until doubled in volume, about 1 hour.
  • Lightly grease a loaf pan.
  • Punch down dough, turn onto a lightly floured surface, and knead 5 to 6 times. Form dough into loaf and place into prepared pan. Let rise until doubled in volume, 30 to 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven until the top is golden brown and the bottom of loaf sounds hollow when tapped, about 40 minutes.

  • Combine the sourdough ingredients in a medium bowl, cover and set aside at room temperature for 16 - 24 hours.
  • Toast the amaranth seeds in a small pan until they become aromatic and light brown. Add the water and bring to a low simmer. The amaranth should soften in about 15 minutes and the water should evaporate by then. If it dries before the seeds are ready, add more water as needed. Remove from the heat to cool when done.
