Broccoli Pineapple Salad - so simple and SOOO good!! Seriously delicious!! Fresh broccoli, cheddar cheese, red onion, red grapes, fresh pineapple, pecans, bacon, mayonnaise, cider vinegar and sugar. Great for spring/summer cookouts, potlucks, camping and Easter side dish! We ate this for lunch and dinner the same day. Can make ahead and refrigerate for several days. Such a quick and easy fruit and vegetable side dish recipe!

6 cups fresh broccoli florets
1 cup grated Cheddar cheese
½ medium red onion, (chopped)
1 cup red seedless grapes (halved)
½ cup diced fresh pineapple
¼ cup chopped pecans
3 slices of cooked bacon (chopped)
1 cup mayonnaise or Greek yogurt
2 Tbsp apple cider vinegar
1 Tbsp sugar

Steps:

  • In a large bowl, combine the broccoli, cheese, onion, grapes, pineapple, pecans and bacon.
  • In a small bowl, combine the mayonnaise, vinegar, and sugar. Spoon the dressing over the broccoli mixture and toss gently until evenly coated.

1 lb bacon
8 cups broccoli florets (about 2 lbs.)
2 cups shredded cheddar cheese
1 (8 ounce) can pineapple tidbits
1/2 cup raisins
1/3 cup finely chopped red onions or 1/3 cup vidalia onion
1 cup mayonnaise or 1 cup salad dressing
1/2 cup sugar
1/4 cup vinegar

Steps:

  • In large skillet, cook bacon over medium heat until brown. Drain bacon on paper towels; set aside.
  • In large bowl combine broccoli, cheese, pineapple, raisins and onion.
  • Crumble bacon; add to broccoli mixture.
  • For dressing, in small bowl stir together mayonnaise, sugar and vinegar.
  • Pour over broccoli mixture; toss to coat.
  • Cover and chill for 2 to 4 hours.

1 broccoli crown, cut into bite sized pieces
2 Tbsp onion, finely minced
1 mini red pepper, sliced
1/4 c raisins
1/2 c pineapple tidbits
1 medium carrot, shredded
ORANGE DRESSING:
1/2 c mayonnaise
1 1/2 Tbsp apple cider vinegar
2 Tbsp orange juice
2 Tbsp sugar
salt and pepper to taste

Steps:

  • 1. Prep veggies and add them to a plastic container.
  • 2. Mix dressing ingredients. Taste for salt and pepper. Pour over veggies. Stir to combine. Refrigerate until ready to serve. Enjoy!

This was inspired by a recipe on drfuhrman.com and is one of our favorite salads. I've taken it to picnics and been asked for the recipe.

1/2 cup natural creamy peanut butter
1 tablespoon honey or 1 tablespoon agave nectar
3/4 cup pineapple juice (6 ounce can)
1/2 cup raisins
1/2 cup raw sunflower seeds
1/4 cup onion, chopped fine
2 large head of broccoli, stems chopped and florets cut to bite size

Steps:

  • Whisk peanut butter, honey and pineapple juice in a large bowl until smooth.
  • Mix in raisins, sunflower seeds and onion.
  • Add broccoli and mix well.
  • Chill and serve.

Great for gatherings. It has a different twist on usual salads and is very fresh tasting.

Number Of Ingredients 12

6 cup(s) broccoli crowns cut small
1 medium fresh pineapple cleaned and chopped
1 stalk(s) fresh leek cleaned and thinly sliced
DRESSING
1/3 cup(s) fresh lemon juice
1 cup(s) oil of your choice
1 clove(s) garlic, chopped
1/4 cup(s) fresh parsley chopped ( or equivalent dried)
1/2 teaspoon(s) salt of your choice (we use lite salt)
1/4 teaspoon(s) ground pepper of your choice
GARNISH
1/2 can(s) planters nut-tricious mix of fruit and nuts

Steps:

  • Wash and chop veggies and fruit, add to a bowl with lid (tupperware style)to allow turning upside down while chilling
  • Mix the juice and oil together and shake well to blend. Add remaining ingredients and shake after each addition. (If using olive oil, do not refrigerate as the oil will solidify)
  • Near serving time add the dressing and turn upside down a few times to distribute the dressing into the salad. Chill briefly. Turn upside down again before opening.
  • Place into a nice serving dish and garnish with the nut mix of your choice. VOILA! Everyone who has had it loved it!
  • You can garnish with any nuts or fruits you like. You can substitute canned pineapple (drained) if fresh is not available. Leeks have a milder flavor than onions, but if you really like strong onion flavor you can substitute thinly sliced white onions.
