1 egg
1 ½ pounds ground beef
⅛ teaspoon cayenne pepper
1 cup corn flakes cereal, coarsely crushed
1 onion, finely chopped
2 teaspoons salt
¼ teaspoon ground black pepper
½ teaspoon chopped fresh parsley
3 cups all-purpose flour
1 ½ teaspoons baking powder
¾ teaspoon salt
1 ⅛ tablespoons white sugar
⅜ cup shortening
1 cup milk

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease two baking sheets.
  • Beat the egg in a bowl until smooth. Add the ground beef, cayenne pepper, crushed cereal, onion, salt, black pepper, and parsley. Mix until evenly combined; set aside. Stir together the flour, baking powder, salt, and sugar in a separate bowl. Cut in the shortening with a pastry blender until no lumps of shortening remain and the mixture takes on a sandy appearance. Stir in the milk until a dough forms.
  • Roll the dough out to a 10x15-inch rectangle on a well-floured surface. Spread the meat mixture evenly over the entire surface of the dough. Roll the dough into a cylinder from one of the wide ends to form a 15-inch long log. Cut the log into 3/4-inch slices and place on to the prepared baking sheets.
  • Bake in the preheated oven until dark golden brown, 30 to 45 minutes. Serve hot.

These tasty beef filled swirls are an excellent way to use some of the leftovers from your Sunday dinner. Don't have beef? Why not try it with chicken or turkey? Lamb and pork would also work well. They are quite simply delicious. See recipe notes to double quantities to feed more.

1 cup (250g) finely chopped cooked beef
1/4 cup (60g) leftover gravy
1 tsp dried parsley
1 TBS finely grated onion
black pepper to taste
splash of Worcestershire sauce
1 cup (140g) all purpose plain flour
2 tsp baking powder
1/2 tsp salt
2 TBS cold butter
1/3 cup (80ml) milk
Extra gravy, heated
your favorite vegetables to serve on the side

Steps:

  • Preheat the oven to 450*F/ 230*C/ gas mark 7. Have ready a small pie dish that is well buttered.
  • To make the filling, mash all of the ingredients together in a small bowl. If you think it is a bit dry, you can add a bit more gravy or some mayonnaise. Its your choice. You want a moist filling, but not soggy.
  • To make the crust sift the flour, baking powder and salt into a bowl. Drop in the butter. Cut the butter into the flour using a pastry blended or two round bladed knifes until the mixture resembles coarse bread crumbs.
  • Stir in the milk, using a fork to make a soft dough. Tip out onto a floured board and knead gently a few times to bring it all together and then lightly pat out to a rectangle that is roughly 4 by six inches in size. (Don't make it too thin of the filling will break through)
  • Spread the meat filling evenly over top of the dough. Roll the dough up tightly as for cinnamon rolls from the long edge. Cut the roll crosswise into 6 1-inch thick slices. Place the slices cut side down into the prepared pie tin.
  • Bake in the preheated oven for about 15 minutes until risen and golden brown and the meat filling has heated through.
  • Serve hot with extra gravy for spooning over top and your favorite vegetable on the side.

2 cups Buttermilk Biscuit Mix
1 teaspoon dried basil
7 tablespoons water
1/2 pound ground beef, cooked and drained
1/4 cup beef gravy
Additional gravy, warmed

Steps:

  • In a bowl, combine biscuit mix, basil and water just until moistened. Turn onto a lightly floured surface; knead 5 times. Roll out into a 12-in. x 9-in. rectangle. , Combine beef and gravy; spoon over dough. Roll up, jelly-roll style, starting with a long side. Cut into 1/2-in. slices; place in a lightly greased 13-in. x 9-in. baking dish. , Bake at 450° for 14-16 minutes or until golden brown. Serve with gravy.

Our summer season in Upstate New York is not very long, so we try to cook outdoors often. This recipe is one of our favorites. I really don't know where it originated, but it's been handed down for many years.

3/4 cup vegetable oil
2/3 cup water
1/4 cup soy sauce
1 tablespoon lemon-pepper seasoning
2 teaspoons Worcestershire sauce
4 drops hot pepper sauce
1 beef flank steak (2 to 2-1/2 pounds), trimmed

Steps:

  • In a large bowl, combine the oil, water, soy sauce, lemon-pepper, Worcestershire sauce and pepper sauce; set aside. , Cover steak with plastic wrap. Flatten to 1/2-in. thickness. Remove plastic. Diagonally cut into 1/2-in. strips; add to marinade. Cover and refrigerate for 4 hours or overnight. , Drain and discard marinade. Divide meat strips into eight portions. Roll strips into pinwheels, using larger strips around edges. Secure each with a skewer. , Grill over medium-hot heat for 5-6 minutes on each side or until beef reaches desired doneness.

Two 8-ounce blocks cream cheese, softened
1/4 cup jarred pesto
2 burrito-size spinach tortillas
2 burrito-size whole wheat tortillas
2 burrito-size jalapeno-Cheddar tortillas
1 cup spinach leaves, chopped
One 6-ounce jar marinated artichoke hearts, chopped
1/4 cup sliced green olives
1/4 cup sliced sun-dried tomatoes
4 slices Swiss cheese
8 large slices pepperoni
8 large slices salami
8 large slices spicy capicola
4 slices pepper jack cheese
1 cup arugula
6 mini sweet peppers, slice thin
1/2 cup chopped hot cherry peppers

Steps:

  • For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
  • For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. Refrigerate the rolled tortillas for at least 2 hours and up to 12 hours.
  • Unwrap and slice each tortilla into 1-inch segments/pinwheels. Arrange on a platter and serve.

¼ cup olive oil
¼ cup soy sauce
¼ cup red wine
¼ cup Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 clove garlic, minced
1 teaspoon Italian seasoning
½ teaspoon ground black pepper
1 ½ pounds flank steak, pounded to 1/2 inch thickness
1 clove garlic, peeled
¼ teaspoon salt
¼ cup chopped onion
¼ cup fine dry bread crumbs
1 cup frozen chopped spinach, thawed and squeezed dry
½ cup crumbled feta cheese

Steps:

  • In a large resealable bag, combine the olive oil, soy sauce, red wine, Worcestershire sauce, mustard, lemon juice, 1 clove of garlic, Italian seasoning and pepper. Squeeze the bag to blend well. Pierce the flank steak with a knife, making small slits about 1 inch apart. Place the steak into the bag, and seal. Refrigerate overnight to marinate.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Crush the remaining clove of garlic on a cutting board with a large chef's knife. Sprinkle the salt over the garlic, and scrape with the flat side of the knife to make a paste.
  • Remove the steak from the bag, and discard marinade. Spread the garlic paste over the top side of the steak. Place layers of chopped onion, bread crumbs, spinach, and cheese over the garlic. Roll the steak up lengthwise, and secure with kitchen twine or toothpicks. Place the roll in a shallow glass baking dish.
  • Bake uncovered for 1 hour in the preheated oven, or until the internal temperature of the roll is at least 145 degrees F (63 degrees F) in the center. Let stand for 5 minutes to set, then slice into 1 inch slices to serve.
