2 tablespoons butter, melted
1 to 2 tablespoons lemon juice
1 teaspoon salt
1/4 teaspoon pepper
3 cups frozen chopped broccoli, thawed and drained
1 cup cooked rice
1 cup shredded reduced-fat cheddar cheese
8 sole or whitefish fillets (4 ounces each)

Steps:

  • In a small bowl, combine the butter, lemon juice, salt and pepper. In another bowl, combine the broccoli, rice, cheese and half of the butter mixture. , Spoon 1/2 cup onto each fillet. Roll up and place seam side down in a baking dish coated with cooking spray. Pour remaining butter mixture over roll-ups. , Bake, uncovered, at 350° for 25 minutes or until fish flakes easily with a fork. Baste with pan drippings; sprinkle with paprika.

BROCCOLINI IN BLANKETS

Number Of Ingredients 11

8-ounce bunch broccolini, stems trimmed, rinsed and pat dried
2 tablespoons olive oil
Big pinch of kosher salt
Couple turns of black pepper
1 (8-count) can of crescent rolls, such as Pillsbury
4 slices Muenster cheese, halved
2 tablespoons yellow mustard
1 large egg
Poppy seeds, for garnish
Flaky salt, for garnish
Ranch dressing, for dipping

Steps:

  • Set an oven rack in the middle position. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone mat.
  • In a medium mixing bowl, drizzle 2 tablespoons of olive oil over broccolini and sprinkle with salt and black pepper. Toss to coat. Arrange the broccolini in a single layer on the prepared sheet tray. Bake in the oven for 10 to 15 minutes until tender and lightly browned. Remove from the oven and set aside to cool completely.
  • Lay crescent rolls on the counter and divide into the precut triangles. Lay a half slice of cheese on the wide part of the dough, squirt or spread about 1/2 teaspoon of mustard, then roll each dough around a broccolini stem to just below the floret. It's ok if the cheese peeks out a little, it will just be crunchy cheese bits.
  • Place the rolls on the prepared baking sheet, evenly spaced apart. Beat the egg with a little bit of water, then brush on each roll. Sprinkle with poppy seeds and flaky salt. Bake for 20 minutes or until the crescent is golden brown and puffed and the broccolini edges are browned. Eat immediately or you can keep them in the fridge for a snack. Serve with ranch dressing, for dipping.

4 orange roughy fillets (6 ounces each)
20 fresh asparagus spears, trimmed
1/2 teaspoon salt
1/4 teaspoon pepper
2 green onions, chopped
SAUCE:
2/3 cup white wine or reduced-sodium chicken broth
2 tablespoons lemon juice
2 teaspoons cornstarch
1 teaspoon minced fresh basil or 1/4 teaspoon dried basil
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/8 teaspoon pepper

Steps:

  • Wrap each fillet around five asparagus spears; secure with toothpicks. Place in a 13-in. x 9-in. baking dish coated with cooking spray. Sprinkle with salt and pepper. , Cover and bake at 350° for 15 minutes. Uncover; sprinkle with onions. Bake, uncovered, 12-15 minutes longer or until fish flakes easily with a fork and asparagus is crisp-tender., Meanwhile, in a small saucepan, combine the sauce ingredients until blended. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Discard toothpicks from bundles; serve with sauce.

They are always popular at a buffet or shower..great for every day dining too. This flavorful dish goes nicely with rice pilaf or a saucy pasta.

1 1/2 lbs fresh broccoli stems or 1 1/2 lbs frozen broccoli stems (18)
6 ounces monterey jack cheese, to taste (1 1/2-inches X 1/2-inch cubes)
2 bls. sole fillets or 2 flounder fillets (6 fillets, Orange Roughy is a favorite of mine)
1/8 teaspoon lemon pepper seasoning (optional)
1/3 cup butter, melted
2 teaspoons lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a saucepan, place broccoli in SMALL amount of water.
  • Bring to a boil.
  • Reduced heat, cover.
  • Simmer for 2-3 minutes or until crisp and tender.
  • Rinse in cold water.
  • Drain.
  • For each bundle place a cheese cube on three broccoli spears.
  • Wrap with fish fillet and fasten with a toothpick if necessary.
  • Place on greased foil-lined (or parchment-lined) baking sheet.
  • Sprinkle with lemon pepper seasoning, if desired.
  • Bake at 350° degrees F for 15 to 25 minutes or.
  • until fish flakes with a fork.
  • Meanwhile, combine the butter, lemon juice, garlic, salt and.

  • Transfer the fish bundles in a serving platter and remove toothpicks.

1 (10 ounce) package frozen broccoli stems or 1 lb fresh broccoli, cut into spears,cooked and drained
1 lb firm white fish fillet, fresh or thawed frozen (cod, haddock or halibut)
1 can campbells healthy request cream of broccoli soup or 1 can cream of celery soup
1/3 cup skim milk
1/4 cup shredded cheese
2 tablespoons dry breadcrumbs
1 teaspoon margarine, melted
1/8 teaspoon paprika

Steps:

  • Preheat oven to 450 degrees.
  • In 2 quart shallow baking dish, arrange broccoli.
  • Top with fish.
  • In small bowl mix soup and milk and pour over fish.
  • Sprinkle cheese over soup mixture.
  • Mix bread crumbs, margarine and paprika and sprinkle over cheese.
  • Bake for 20 minutes or until fish flakes easily when tested with fork.

Enjoy this easy, speedy cod, broccoli and orzo traybake on busy weeknights. It's healthy and low in fat, and since it's a traybake, there's minimal washing-up!

½ tbsp olive oil, plus a drizzle
1 onion, chopped
1 tsp smoked paprika, plus a pinch
½-1 tbsp chipotle paste
200g long-stem broccoli
400ml hot vegetable stock
150g orzo
½ small bunch of dill, chopped
½ small bunch of parsley, chopped
50g frozen peas
2 sustainable skinless cod fillets
4 tbsp fat-free yogurt

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Heat the oil in a deep ovenproof frying pan, and fry the onion for 5 mins until tender. Add the paprika, chipotle paste, broccoli and stock. Stir in the orzo, and transfer to the oven for 10 mins.
  • Stir in half the herbs and the peas, and nestle the fish into the orzo. Sprinkle over a pinch of paprika and drizzle with oil, then season. Cook for 8-10 mins until the fish is cooked and the orzo is tender. Mix the remaining herbs with the yogurt. Loosen with a little water if needed, then serve with the orzo and fish.
