- In a large pot heat oil over medium high heat. In a sealable plastic bag mix together the flour, onion powder, garlic powder, salt and pepper. Add a small handful of meat at a time and shake until well coated. Brown meat in hot oil, in batches about 1 minute per side. Remove meat and reduce heat to medium and add onions. Brown onions, about 3 min total, then remove from pan and set aside. Drain excess fat from pan.
- Add browned meat, bay leaf, chipolte pepper, onion soup and beef broth to the pot. Stir and bring to a boil. Reduce heat to low, cover and simmer 1 hour, stirring occasionally. Add liquid smoke, potatoes, carrots, browned onions, and celery; cook for 30 minute (If you want a thicker stew about 30 minutes before the stew is done stir the flour and water together until smooth- add to pot) Season finished stew with salt and pepper to taste.
COWBOY STEW
I created this recipe when it was cold outside a couple of years ago... wanted something sort of like chili, but with the comfort food feel of a roast. This is yummy and can easily be heated with jalepenos for adults or dialed down a bit for kids. My family loves this dish, and it's so easy to fill the crock pot and come home to great smells and flavors for dinner.

- Combine garlic, onion, pepper, and ground beef in skillet. Sprinkle with seasoning mix while browning meat.
- Move ingredients to crock pot (set crock pot to medium).
- Add remaining ingredients to crock pot.
- Cook for five or more hours. Add salt and chili powder to taste.

This is a delicious and easy meal that my family loves. Just fire up the crock pot, toss in the ingredients, wait 4 hours, and dinner's ready. It's good with tortilla chips, salsa, and sour cream on the side. Also tasty rolled up in tortilla shells with a little Mexican cheese. Or you can eat it just as it is!

- Spray the bottom and sides of crock pot with non-stick cooking spray.
- Layer the browned ground beef, rice mix, crushed tomatoes, diced tomatoes (do not drain), and corn in crock pot. Do not stir.

RANCH STEW AKA COWBOY STEW
This is one of my family favorites that I have made for years. It is super easy to throw together and contains ingredients that I always have on hand. When I make this I have to double the recipe because it tastes even better the next day! Ranch Style beans are a western style pinto bean made with a flavorful sauce. They add a lot of the flavor to this recipe so try not to substitute them if possible.

- Put all the ingredients except the brains in a large pot with 1 cup of water and bring to a boil.
- Skim off foam and continue cooking until all meat is tender, two to three hours.
- Add small amounts of water as necessary.
- Add the brains very slowly until the gravy is thick.
- Stir often and cook as slowly as possible from the beginning.

This is delicious and very easy to make! I like making this because it's tasty and it makes plenty of leftovers for later in the week. And it's even better heated up a day or two later! Serve with homemade cornbread! Found this recipe in the Texas Country Reported Cookbook, which is one of my favorites! I'm not real sure about the cooking time, but I think it takes about an hour!
