Super yummy potatoes that are fairly easy to prepare. Fabulous with the fresh herbs, but also good with dried herbs. Red potatoes are best, but other types work as well.

7 tablespoons olive oil
6 -12 depending on size red potatoes
1 (14 1/2 ounce) can diced tomatoes
1/2 cup grated parmesan cheese
2 teaspoons minced garlic
1/2 cup minced basil (or 2 tbsp. dried)
1/4 cup minced parsley (or 1 tbsp. dried)
2 teaspoons minced oregano (or 1 tsp. dried)
1 1/2 teaspoons sea salt
1 teaspoon pepper

Steps:

  • Preheat oven to 350.
  • Grease a 9 by 13 dish with about 1 tablespoon oil.
  • Slice potatoes, you will want 6-8 cups.
  • Place 1/3 of the potatoes into the dish.
  • Drain the tomatoes and sprinkle 1/3 of the can over the potatoes.
  • Drizzle about 2 tablespoons oil over the potatoes and tomatoes.
  • Mix together the cheese, garlic, basil, parsley, oregano, salt, and pepper.
  • Sprinkle 1/3 of the cheese mixture over the potatoes, tomatoes, and oil.
  • Repeat layers twice.
  • Cover and bake until potatoes are tender, about 50 minutes.

  • After 10 minutes, cut the potatoes in small pieces and add to the soffritto, together with the tomatoes, a pinch of salt and pepper. Stir everything, cover with a lid and cook for 20 minutes at low-mid heat. Be careful to not burn because it’s cooking with no water, potatoes should stick to the pot but not burn, for that you should stir frequently.
  • Add the water and let it cook for another 20 to 25 minutes on mid/high heat with the lid. Always stiring so nothing get burned, if you need more water feel free to put it as needed
