1 lb ground beef
1 small onion, chopped
1 (16 ounce) can refried beans
1 (16 ounce) jar salsa
1 (6 ounce) can pitted ripe olives, chopped
1/2 cup shredded cheddar cheese
1 green onion, chopped
2 tablespoons chili powder
1 teaspoon salt
tortilla chips
chopped green onions (optional) or tomatoes (optional)

Steps:

  • In a skillet, cook the beef and onion over medium heat until meat is no longer pink; drain. Stir in the next seven ingredients; heat through.
  • Serve over tortilla chips. Top with olives, onions and tomatoes if desired.

1/2 pound lean ground beef (90% lean)
3/4 cup water
2/3 cup condensed tomato soup, undiluted
2 tablespoons taco seasoning
3/4 cup uncooked instant rice
Optional toppings: shredded lettuce, shredded cheddar cheese, salsa and sour cream
Tortilla chips

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the water, soup and taco seasoning. Bring to a boil. Stir in rice. Cover and remove from the heat. Let stand for 5 minutes or until rice is tender. , Spoon onto two serving plates. Top with lettuce, cheese, salsa and/or sour cream if desired. Serve with chips.

These are just like pre-dipped chips... yum! They get soggy pretty quick, so prepare to munch just as soon as they're cool enough to eat. Perfect for game nights... or whenever!

16 tortilla chips (homemade is best and cheaper too)
1 can(s) pinto beans, 14 ounce, drained
1 jar(s) ortega thick & smooth taco sauce
4 clove garlic, minced (a gralic press works wonders here)
2 c shredded cheddar cheese (i prefer extra sharp)

Steps:

  • 1. Pour can of beans into a mixing bowl. Mash with a potato masher until they are the desired consistency.
  • 2. Stir in taco sauce and garlic to the bean mixture. Mix well.
  • 3. Lightly grease a cookie sheet and arrange the tortilla chips on the sheet in one layer.
  • 4. Drop spoonfuls of the bean mixture onto each of the chips. Cover with cheese and bake at 375 for approximately 10 minutes. Allow to cool a few minutes before eating, as the filling especially will be scalding hot.

5 potatoes, sliced thick with skin on
5 slices of bacon
1 c cheddar cheese, shredded
4 pickled jalapenos, sliced - (jar)
1/4 sweet onion, chopped
1 1/2 Tbsp seasoned salt
3/4 c corned beef, cooked and chopped
vegetable oil, for frying
TOPPINGS (optional):
sour cream
green onions, sliced
tomatoes, chopped
salsa
additional jalapenos

Steps:

  • 1. Fry potato slices in vegetable oil until golden & tender; drain paper toweling and sprinkle with seasoned salt.
  • 2. Cook bacon until crispy, then remove and set aside; Add onion to bacon drippings, then cook until transparent and tender.
  • 3. Layer potatoes on the bottom of an 8" or 10" cast iron skillet; add corned beef, crumbled bacon, onion, shredded cheddar cheese and jalapenos in that order.
  • 4. Place under broiler for 10-15 minutes or until hot and delicious.
  • 5. Finish with your choice of toppings and enjoy!

Who needs tortilla chips when you can use tater tots for nachos?! These are amazingly delicious. There is tons of flavor in every bite. The seasoning in the meat pairs well with all the toppings. We think salsa con queso adds just enough heat and cheesy goodness. We could not stop eating these tots. Serve as a meal or game day...

32 oz frozen tater tots (get the extra crispy)
3-4 slice bacon
1/2 onion, finely chopped
3 clove garlic, minced
1 lb very lean ground beef
1 Tbsp chili powder
3/4 tsp ground cumin
1/2 tsp paprika
1/2 tsp cayenne pepper
1/4 tsp oregano, dried
1/2 tsp salt
1/2 tsp black pepper
TOPPING
15 oz jar salsa con queso/cheese sauce, heated in microwave
salsa
guacamole
sour cream
several green onions, finely chopped

Steps:

  • 1. Prepare the tater tots as directed on the package. I like very crispy so I baked them to very crispy.
  • 2. While the tots are baking, fry the bacon until crisp. Remove and set aside to cool. Only leave about 1 Tbsp of bacon grease in the pan.
  • 3. Add the onion and garlic to pan. Cook over medium heat until softened.
  • 4. Add the beef and stir to mix.
  • 5. Once the beef is no longer pink, add all the salt, pepper, and other spices. Cook to incorporate. I cooked for about 15 mins on very low heat (simmer).
  • 6. Once the tots are done, transfer them to a platter. Top with the seasoned beef, queso, salsa, guacamole, sour cream, and green onions. Crumble the bacon over the top and serve immediately.

1 ripe avocado, peeled
1 teaspoon lemon juice
1/2 cup finely chopped onion
1/2 cup chopped tomato
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (15 ounces) pinto beans, rinsed and drained
2/3 cup water, divided
2 tablespoons canola oil
1/2 pound ground beef
1 tablespoon chili powder
7 ounces tortilla chips
2 cups shredded cheddar cheese
1 cup sour cream

Steps:

  • In a small bowl, mash the avocado with lemon juice. Stir in the onion, tomato, salt and pepper; set aside. Mash beans with 1/3 cup of water; place in skillet and cook over medium heat until hot. Stir in oil; remove from the heat and set aside. , In another skillet, cook the ground beef over medium heat until no longer pink; drain. Stir in chili powder and remaining water; cook until liquid evaporates. , Line a baking sheet with foil. Arrange chips in a single layer. Top with teaspoonfuls of bean and meat mixtures. Sprinkle with cheese. Bake at 400° until cheese is melted, about 4 minutes. Serve with avocado mixture and sour cream. Serve immediately.

Cook and stir until thickened, 5-7 minutes., Reduce heat to low. Stir in the pepper jack, process cheese and cream cheese until melted., Place 4 dozen scoops on an ungreased baking sheet.
