GRANDMA'S APPLE PIE
Steps:
- Preheat the oven to 375 degrees F.
- Roll 1/2 the short crust pastry to 1/4-inch thickness and cut out a 14-inch circle. Line a 9-inch pie plate with the pastry, trim away the excess and crimp the edge.
- Roll out the rest of the pastry to 1/4-inch thickness. Cut the pastry into 1/2-inch strips. On a piece of parchment paper or waxed paper weave the strips of pastry into a lattice that will cover the top of a 9-inch pie plate with 1-inch of overhang. Refrigerate the pie shell and lattice for at least 30 minutes.
- Meanwhile, cut the apple quarters into 1/4-inch thick slices. Toss the apples with the sugar, lemon juice, lemon zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. Brush the inside edge of the pastry with the egg wash. Arrange the apples in the pie shell and dab the top with pieces of cold butter. Slide the lattice top over the apples. Press the pastry of the lattice firmly on the crimped edge to seal the 2 together. Brush the lattice with egg wash. Place the pie on a baking sheet and bake for 1 hour and 15 minutes.
- Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
- With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.
GRANDMA OPLE'S APPLE PIE
This is a recipe for apple pie that I got from allrecipes.com and it is THE BEST apple pie I have ever had. It is different that ordinary apple pie, the fresh apples are placed in the crust, covered in a lattice top and smothered in a decadent sauce. Whoever Grandma Ople is, I would really like to thank her for she sure knows how to make a mean apple pie!For my crust, I use a recipe for pie crust that includes vinegar and is found on this site.

You'll elicit oohs and aahs every time you serve slices of this classic apple pie. The crisp crust is a nice complement to the tender apples.

GRANDMA LUCY'S APPLE PIE
Grandma Lucy would make at least 25 pies every Thanksgiving season; and an entire bushel of apples. Rome apples were her preferred Apple for pie, followed by Macintosh. I bought her an Apple Peeler Corer Slicer, but Mom never used it; she preferred her old fashioned method of cutting and peeling by hand with a paring knife, and...

Steps:
- 1. mix filling ingredients (apples, tapioca, cinnamin, nutmeg, lemon juice and sugar) together in a large bowl.
- 2. Filling should "marinate" for at least 30 minutes, stirring at least 4 times before baking, to give tapioca time to soften.
- 3. Stir every 10 minutes.
- 4. Lemon juice is essential to prevent apples from turning brown.
- 5. While filling is marinating, prepare crust for 2-crust pie, or use refridgerated pie crusts.
- 6. Grandma Lucy used the Crisco(r) pie crust recipe; using ice water to prepare.
- 7. Roll out dough to a 10 inch circle
- 8. line a 9 inch pie dish with dough; leave 1 in overhang. press gently to remove all air bubbles. DO NOT prick crust. DO NOT pre-bake.
- 9. pour filling into crust, heaping slightly in the center.
- 10. roll out remaining dough and cover apples
- 11. flute using tines of a fork to seal the edges. Trim excess.
- 12. Cut vent holes in top of pie. ( Use a small seasonal cookie cutter in the shape of an apple, or any other desired shape) .
- 13. Brush top of pie with whole milk. Sprinkle with decorating sugar.
- 14. Bake in 400* preheated oven.
- 15. cover edges of pie with aluminum foil to prevent over-browning
- 16. Cool before serving. Best served at room temperature or slightly warmed.
APPLE PIE BY GRANDMA OPLE
Up until I made THIS apple pie, I had hated apple pies my entire life! It didn't matter if I bought them or made them; it didn't matter if they were Dutch or Crumb-crust or plain crust...I couldn't get past the overly sweet/cinnamony insipidness of the filling. However, things have now changed, forever. A friend begged me to make them an apple pie, and I found this recipe on a website where it had garnered 1,617 five star reviews! I read over 40 of the reviews and the version of the pie recipe that I'm posting is based on THEIR tweaking it. The original pie had too many calories for some and no seasonings: suggestions included cutting the syrup in 1/2, adding vanilla and some spices. It also included several helpful hints on adding the buttery caramel syrup. Please do yourself a favour: whether you adore apple pie or have always avoided it as I have, MAKE THIS PIE!!!! If you want to make it with the original recipe, here is the link: http://allrecipes.com/Recipe/Apple-Pie-by-Grandma-Ople/Detail.aspx?src=etaf. My many thanks and appreciation to the original poster, Moshamama.

Steps:
- Preheat oven to 425°F (220°C).
- Process the apple slices.
- Melt the butter in a large Dutch oven. Stir in cornstarch to form a paste.
- Add the apple juice, white sugar and brown sugar, and bring to a boil.
- Reduce temperature and let simmer. When very bubbly and slightly thickened, remove from heat and add the vanilla and spices. Dump the apple slices into the syrup and stir thoroughly to coat.
- Place the bottom crust in your pan.
- Fill with apples, mounded slightly and packed well.
- Gently spoon the caramel-coated apples, minus the syrup, into the crust. Then pour most of the syrup evenly over the apples, reserving enough to brush over the top crust.
- Cover with a lattice work of crust. Pour or brush the sugar and butter liquid over the crust.
- Bake 15 minutes in the preheated oven. Reduce the temperature to 350°F (175°C).
- Continue baking for 35 to 45 minutes, until apples are soft and crust is a light golden brown.

HEALTHIER APPLE PIE BY GRANDMA OPLE
Apple pie is my favorite pie. I make it for holidays and just because sometimes too. I wanted to cut out some of the fat from the butter so I cut it down and eliminate the sugar. It makes it caramel and better for you.
