1 pound fresh asparagus, trimmed
4 green onions, thinly sliced
1/4 cup olive oil
2 tablespoons white wine vinegar
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup crumbled blue cheese

Steps:

  • In a large saucepan, bring 6 cups water to a boil. Add asparagus; cook, uncovered, 2-3 minutes or just until crisp-tender. Remove asparagus and immediately drop into ice water. Drain and pat dry., In a large resealable plastic bag, combine green onions, oil, vinegar, garlic, salt and pepper. Add asparagus; seal bag and turn to coat. Refrigerate at least 1 hour., Drain asparagus, discarding marinade. Place asparagus on a serving plate; sprinkle with cheese.

1/2 pound fresh asparagus spears
2 ounces cream cheese, softened
3 tablespoons evaporated milk or half-and-half cream
1/8 teaspoon salt
1 to 2 tablespoons crumbled blue cheese

Steps:

  • In a small saucepan, cook asparagus in a small amount of water until crisp-tender. Meanwhile, in another saucepan, whisk cream cheese, milk and salt over low heat until smooth. Stir in blue cheese and heat through. Drain asparagus and top with sauce.

Found this recipe on the back of a box of blue cheese and decided to try it. It's a nice blend of flavors and really sets off the asparagus and simple to make. Love that the asparagus is not over cooked and so fresh tasting;I guessed at the size can of mandarin oranges as don't have it handy. I used a small can as didn't want it to sweet - but there's a larger one if you prefer. I did add a teaspoon of balsamic vinager to mine for a little bit of bite, but since the original recipe did not call for it I left it out. Hope you like it.

1 tablespoon mandarin orange juice
1/4 cup olive oil
1 cup blue cheese, crumbled

  • Fill a large bowl with ice water. Set aside.
  • Bring large pot of salted water to a boil.
  • Add asparagus and cook until crisp-tender.
  • Drain asparagus and plunge into ice bath for 1 minute, then drain and set aside.
  • Whisk together orange juice and olive oil.
  • Toss asparagus, blue cheese and oranges together and drizzle over dressing.
  • Toss gently and sprinkle with salt to taste.

1 tablespoon reserved mandarin orange juice
1/4 cup extra virgin olive oil
1 cup crumbled blue cheese

  • Fill a large bowl with ice water and set aside.
  • Bring a large pot of salted water to a boil, add the asparagus and cook until crisp-tender.

1 pound asparagus, grilled
1 pound assorted mushrooms (portobello, cremini, shiitake) coarsely chopped
3 tablespoons olive oil
1 tablespoon chopped fresh thyme
Salt and pepper
1/4 cup toasted pecans
8 ounces American blue cheese
2 tablespoons Dijon mustard
1 tablespoon ancho chile powder
Salt
1/4 cup red wine vinegar
1/2 cup olive oil

Steps:

  • Heat olive oil in a large saute pan over high heat. Add mushrooms and cook until golden brown. Add thyme and season with salt and pepper. Toss asparagus with a few tablespoons of the vinaigrette and season with salt and pepper. Arrange 1/4 of the mushrooms in the center of each plate. Arrange asparagus around the mushrooms. Sprinkle pecans and blue cheese around the edge of the plate. Drizzle with more of the dressing.
  • Whisk together mustard, ancho powder, salt and vinegar, slowly whisk in oil until emulsified. Season with more salt, to taste.

2 medium boiling potatoes or 2 large boiling potatoes, quartered
1 -2 ounce blue cheese
6 asparagus spears, cooked and cut into 1-inch pieces
1 green onion, green and white parts, minced
2 tablespoons sour cream or 2 tablespoons plain yogurt
white pepper, freshly ground

Steps:

  • Cook potatoes in water to cover until tender, about 30 minutes. Drain well. Peel if desired. Dice and place in salad bowl.
  • Crumble cheese and stir in (heat of potatoes will partially melt cheese, creating sauce).
  • Add asparagus, green onion, sour cream and white pepper to taste.
  • Serve hot or warm (this salad doesn't taste good cold).

1/2 - 1 cup blue cheese or gorgonzola
1 lemon
olive oil
salt and pepper

Steps:

  • Wash and dry asparagus. Drizzle with olive oil and salt and pepper and roast for 10 minutes at 400. Put on platter, squeeze half to whole lemon over (depending on taste). Sprinkle with cheese crumbles and tomatoes and a little more olive oil if desired. Serve with slices of toasty french bread!

I created this salad after perusing some recipes here and using what I had on hand, avoiding anything too sweet. The pickled beets are just the right ouch of sweet & sour. Looks pretty too! The asparagus can be made well in advance. If your onion is too strong, slice and put in an ice water bath for 5 minutes and drain. Cooking time is blanching and ice water bath time.

1 lb asparagus, 6 per person
1/2 teaspoon salt, for boiling water
ice water, bath
1 small red onion, slivered using as much as you like
4 pickled beets, large dice, one per person depending on the size
1/2 cup blue cheese, crumbled use as much as you like, sub. soft goat cheese
salt, to taste
fresh ground black pepper, to taste
12 ounces champagne vinaigrette, I like store bought Girard's light

Steps:

  • Boil water for asparagus, add salt.
  • Make a ice water bath in a large bowl. You will use to shock the asparagus and halt the cooking.
  • Trim tough ends off of asparagus spears, leave whole.
  • Place asparagus spears in boiling water. Blanche for 2-3 minutes.
  • Quickly remove from hot water and place in ice water bath to shock.
  • Prepare onions and pickled beets as suggested.
  • Arrange asparagus spears on a platter or individual salad plates.
  • Sprinkle and arrange the onion slices, beets and blue cheese.
  • Top with a light champagne vinaigrette. I like Girard's brand.

8 ounces penne
1 cup walnut pieces
1 (3 1/2 ounce) jar pesto sauce (approx. 1/2 cup)
1/4 cup blue cheese (crumbled)
1/2 lb thin asparagus spear

Steps:

  • Bring a large pot of water to a boil over high heat. Add salt and stir in the penne. Reduce to medium-high and cook penne, uncovered, until al dente, 6-7 minutes.
  • Meanwhile, place walnuts on a rimmed baking sheet and bake in preheated 350-degree o ven until lightly toasted, 4-5 minutes.
  • Place pesto and blue c heese in a large serving bowl and using a fork, mash the blue cheese into the pesto.
  • Rinse asparagus spears and snap off and discard their tough ends. Break spears into 1 1/2-inch long pieces.
  • During the last 3 minutes of the penne cooking time, add asparagus to pot and cook until bright green and crisp-tender. Drain penne and asparagus well in colander. Add to the bowl with the pesto and stir to coat them well. Top with toasted walnuts and serve at once.
