BEEF AND BROCCOLI CASSEROLE
I came up with this recipe on one of those "what in the world can I fix for dinner" days. I usually have the ingredients in the freezer and pantry, so it's handy when I need to fix a meal in a hurry.-Dorothy Buttrill, Fairfield, Texas

- Preheat oven to 400°. In a skillet, cook beef and onion in oil until meat is no longer pink; drain. Stir in the Worcestershire sauce, garlic salt, Italian seasoning, rice, soup and water. , Place cooked broccoli in an 11x7-in. baking dish; spoon meat mixture over top. Sprinkle with mozzarella cheese. Bake, uncovered, until heated through, 15-20 minutes. Garnish with parsley if desired.

- Preheat oven to 350 degrees F (175 degrees C). Prepare the broccoli according to package directions.
- In a skillet over medium heat, mix the ground beef, mushrooms, and onion. Cook until beef is evenly brown; drain grease. Season with salt and pepper, and mix in cream of celery soup and sour cream. Continue cooking until heated through. Transfer to a medium baking dish, and evenly layer with broccoli. Top with cheese.
- Bake 1 hour in the preheated oven, until bubbly and lightly brown.

BROCCOLI, RICE & GROUND BEEF CASSEROLE
I make this casserole frequently for supper because it is cheap, fast, filling and great for kids. It's even good for very young kids who are just beginning to eat table foods. When I was a kid, we would have this as a side dish for holiday dinners, but I make it as a simple supper with crackers or dinner rolls and salad. You can substitute ingredients to fit what you have on hand.

Steps:
- Preheat oven to 350 degrees.
- Spray a 9x13 casserole dish with cooking spray. Set aside.
- Brown ground beef until no longer pink, adding salt and pepper to taste.
- Drain fat from cooked ground beef.
- In a large bowl, stir ground beef together with all remaining ingredients.
- Dump the entire mixture into the casserole dish.
- Bake for 45 minutes (give or take) until casserole is bubbly and rice is tender.

- Saute onions in butter. Brown hamburger. Cook broccoli and rice. Mix together broccoli, rice, mushroom soup and onions. In 2-3 quart casserole dish. Spread hamburger in bottom of dish, top with sliced cheese, top with broccoli and rice mixture, top with more sliced cheese. Bake at 350 degrees until cheese melted and bubbly.
BEST CHEEZ-IT BROCCOLI CASSEROLE
This recipe was given to me by my husband's Aunt Julia. It has been in the family for years. We serve it at all the family gatherings The children love it and are disappointed if someone doesn't make it. I double this to take to potlucks and always get asked for the recipe. This make be refrigerated or frozen before cooking.

- Cook broccoli 5 minutes; drain well.
- Combine next 6 ingredients to make sauce.
- Combine sauce with broccoli.
- Pour into an 8x8-inch casserole dish.
- Sprinkle top with cracker crumbs.
- Bake in a 400°F oven for 30 minutes.
- Don't substitute salad dressing for the mayonnaise, it will make the casserole runny.
