BLACK PEPPER BROWNIES

Black Pepper Brownies image

Christine McFadden adds spice to these dark, dense and luxurious brownies - the pepper helps to balance their richness. For extra texture, stir in 100g chopped walnuts into the brownie mixture. The brownies will keep for 4-5 days if you wrap them in foil.

Time 55m

Yield 20 Brownies

Number Of Ingredients 9

4 ounces unsalted butter, plus extra for greasing
7 ounces dark chocolate, minimum 70% cocoa solids
3 tablespoons unsweetened cocoa powder
3 large eggs
9 ounces sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
1 tablespoon black peppercorns, freshly ground
5 1/4 ounces all-purpose flour

Steps:

  • Preheat the oven to 350F, moving the rack to just below the middle of the oven.
  • Grease and line a 10in square baking tin with baking parchment, using enough to hang over the sides.
  • Break the chocolate into small pieces and put it in a heatproof bowl with the butter.
  • Place the bowl over a pan of steaming, but not quite simmering, water (make sure the bottom of the bowl does not touch the surface of the water) and stir until the chocolate and butter are melted and well combined. Gradually sprinkle in the cocoa powder and whisk until smooth. Remove from the heat and leave to cool slightly.
  • Beat together the eggs, sugar, vanilla extract, salt and ground pepper until well mixed.
  • Gradually beat in the still-warm chocolate mixture, then stir in the flour, mixing well.
  • Pour into the prepared tin and bake for 35-40 minutes until a skewer inserted in the middle comes out very slightly sticky - brownies are meant to be gooey in the middle.
  • Leave the brownies in the tin until completely cool. Lift from the tin using the overhanging baking parchment. Slice into squares and serve.

Time 1h21m

Yield 24

Number Of Ingredients 16

cooking spray
1 (12 fl oz) can caffeinated pepper-type soda (such as Dr Pepper®)
1 cup butter
12 strips bacon, chopped
2 cups all-purpose flour
2 cups white sugar
¼ cup cocoa powder
1 teaspoon ground cinnamon
1 teaspoon salt
½ cup buttermilk
2 teaspoons vanilla extract
1 teaspoon baking soda
1 (12 ounce) bag milk chocolate chips
½ cup butter
3 tablespoons unsweetened cocoa powder
1 (16 ounce) package confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12x18-inch pan with cooking spray.
  • Combine 1 cup pepper-type soda and 1 cup butter in a saucepan over medium-low heat; heat until butter is melted, 3 to 5 minutes. Remove from heat and let cool.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 8 minutes. Drain on paper towels.
  • Mix flour, white sugar, 1/4 cup cocoa powder, cinnamon, and salt together in a large bowl.
  • Whisk buttermilk, vanilla extract, and baking soda together in a small bowl. Pour flour mixture; mix until batter is blended. Add butter mixture, 1/3 of the bacon, and chocolate chips; mix thoroughly. Spread in the prepared pan.
  • Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 25 to 30 minutes.
  • Combine 6 tablespoons pepper-type soda, 1/2 cup butter, and 3 tablespoons cocoa powder in a saucepan; bring to a boil. Remove from heat. Add 1/2 of the remaining bacon and confectioners' sugar; whisk until frosting is smooth.
  • Spread frosting over brownies. Garnish with remaining bacon. Cool until frosting sets, about 20 minutes. Cut into squares.
