SOUTHERN BLACK-EYED PEAS

Steps:
- Place peas in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse peas, discarding liquid; set aside., In the same pan, saute onion in oil until tender. Add the pork belly, garlic, bay leaves, thyme, pepper flakes and pepper; cook 1 minute longer., Add the broth, ham hocks and peas; bring to a boil. Reduce heat; simmer, uncovered, for 35-40 minutes or until peas are tender, stirring occasionally and adding more water if desired., Discard bay leaves. Remove ham hocks; cool slightly. Remove meat from bones if desired; finely chop and return to pan. Discard bones. If desired, top with additional fresh thyme.

TEXAS CAVIAR (BLACK EYED PEA SPREAD)
From "Some Like it Hot" by Robin Robertson. Cook times are estimates and do not include the hour to "sit". I have removed the olive oil from this recipe to cut down on fat, but if you want add 2 Tbsp of oil to the mixture at the end before letting the dip sit.

Steps:
- In a food processor, combine the peas, onion, parsley, garlic, salt, cumin, cayenne, and oregano and pulse until just mixed (but still retaining a coarse texture). Add a little water as needed. Some canned black eyed peas are a little dry.
- Transfer the mixture to a bowl, add the vinegar and mix well.
- Taste and adjust seasonings.
- Set aside for an hour or so to allow flavors to develop.
- Serve on crackers or as a dip for chips or raw vegetables.

BLACK-EYED PEA SPREAD
This is something a little different for you. Chopped spinach, black-eyed peas, sour cream, mayonnaise, soup mix, water chestnuts, and garlic powder all mixed up for a Southern tasting spread on pumpernickel or rye party bread. It doesn't get much more Southern than this!
