2 15-ounce cans black beans, drained well
6 green onions, finely chopped
1/2 cup finely chopped seeded red bell pepper
1/4 cup chopped fresh cilantro
2 large garlic cloves, minced
1 1/2 tablespoons minced seeded jalapeño chili
2 teaspoons ground cumin
1 large egg
2 tablespoons plus 1 cup yellow cornmeal
6 tablespoons (about) olive oil
Sour cream
Purchased salsa

Steps:

  • Place drained beans in large bowl. Using hand masher, mash beans coarsely. Mix in green onions, bell pepper, cilantro, garlic, jalapeño and cumin. Season to taste with salt and pepper. Mix in egg and 2 tablespoons cornmeal.
  • Place remaining 1 cup cornmeal in small dish. Drop heaping 1 tablespoon of bean mixture into cornmeal; turn to coat. Flatten into 1/2-inch-thick cake. Repeat with remaining bean mixture and cornmeal, forming 18 cakes.
  • Heat 3 tablespoons oil in heavy large skillet over medium heat. Working in batches, fry bean cakes until firm and crisp, adding more oil as needed, about 6 minutes per side. Drain bean cakes on paper towels. Transfer to platter. Serve warm with sour cream and salsa.

Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

3 tablespoons extra-virgin olive oil
5 garlic cloves, peeled and sliced
1/4 cup tomato paste
1 1/2 teaspoons smoked paprika
1/4 teaspoon red-pepper flakes
1 teaspoon ground cumin
2 (14-ounce) cans black beans, drained and rinsed
1/2 cup boiling water
Kosher salt and black pepper
1 1/2 cups grated Cheddar or Manchego cheese (from about a 6-ounce block)

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you'd like, run the skillet under the broiler for 1 or 2 minutes. Serve immediately.

1 Tablespoon fresh parsley (minced)
½ cup sour cream
¼ cup mayonnaise
2 Tablespoons red wine vinegar
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon salt
¼ teaspoon garlic powder
⅛ teaspoon pepper
15 ounces tortilla chips (1 bag)

Steps:

  • In a large bowl, combine the beans, corn, peppers, onion, and cilantro and parsley.
  • Combine the sour cream, mayonnaise, vinegar and spices and seasonings; pour over bean mixture and toss gently until everything is coated in sauce.

6 bacon slices, chopped
3/4 cup finely chopped celery
3/4 cup finely chopped onion
3/4 cup finely chopped carrots
3/4 cup finely chopped leeks
10 cups canned low-salt chicken broth
1 large tomato, chopped
1 cup (packed) chopped fresh cilantro
1/3 cup (packed) chopped fresh parsley
1 1/2 tablespoons minced garlic
1 jalapeño chili, minced
1 tablespoon red wine vinegar
2 teaspoons ground cumin
1 teaspoon ground coriander
3/4 cup sour cream
2 teaspoons fresh lemon juice
2 teaspoons fresh lime juice
Additional chopped fresh cilantro
Additional chopped tomato

Steps:

  • Place beans in large bowl. Add enough water to cover by 3 inches. Let stand overnight. Drain well.
  • Cook bacon in heavy large pot over medium heat until brown but still soft, about 4 minutes. Add celery, onion, carrots and leeks and sauté until vegetables begin to soften, about 10 minutes. Add beans, chicken broth, tomato, 1/2 cup cilantro, parsley, garlic, jalapeño, vinegar, cumin and coriander. Bring to boil. Reduce heat to medium-low, cover and simmer soup until beans are very tender, stirring occasionally, about 2 hours.
  • Working in batches, transfer soup to blender and process until slightly chunky puree forms. Return soup to pot. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before continuing.)
  • Mix sour cream, lemon juice, lime juice and 1/2 cup cilantro in small bowl. Season to taste with salt and pepper. Ladle soup into bowls. Place dollop of sour cream mixture atop soup. Garnish with additional chopped cilantro and chopped tomato.

8 cups (or more) vegetable stock or canned vegetable broth
1 cup coarsely chopped fresh cilantro
Lime wedges

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, garlic and jalapeños; sauté 5 minutes. Mix in beans and spices. Add 8 cups stock and bring to boil. Reduce heat, cover and simmer until beans are tender, stirring occasionally, about 2 hours 15 minutes. Working in batches, puree soup with cilantro in blender. Return soup to pot. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and refrigerate.)
  • Bring soup to simmer, thinning with more stock if necessary. Ladle into bowls. Serve, passing lime wedges separately.

This is an exceptional recipe! I don't like black beans... well, I thought I didn't like black beans, until I made this recipe. Wow! I love black beans! This is a recipe from "The New James Beard", with quantities cut in half for a serving of 6 people, instead of the original 12. I hope you like it! (Preparation time includes preparing from dry black beans)

1 lb dried black beans
1/2 large onion, sliced
1 bay leaf
1 sprig thyme
1 stalk celery
2 sprigs parsley
1/2 cup olive oil or 1/8 cup bacon fat
salt, to taste
1 dash Tabasco sauce
1/4 cup jamaican rum
sour cream, as topping

Steps:

  • Put the beans in a pan with water to cover by 1".
  • Bring to a boil and boil for 2 minutes.
  • Remove from heat and let stand, covered, for 1 hour.
  • Add the onions, bay leaf, thyme, celery and parsley.
  • Add ham bone or substitute diced salt pork, olive oil or bacon fat, as above.
  • Cook (simmer) until the beans are tender, about 1 1/2 hours.
  • Add salt to taste and a small dash of Tabasco Sauce.
  • Discard bay leaf, vegetables and ham bone.
  • Put the beans and their liquid in a casserole, add the rum, correct the seasoning, and bake at 350F until well heated; about 20 minutes.
  • Serve with cold sour cream (you probably want more than just a dollop!)
  • Enjoy!

2 c.cooked black beans
1 tablespoon tomato paste
2 tablespoons finely minced red onions
1/2 cup fine breadcrumbs
1/2 roasted jalapeno chile, finely minced (about 1 tsp.)
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano
1 teaspoon balsamic vinegar
1 egg, lightly beaten
salt, pepper to taste
3 tablespoons yellow cornmeal or 3 tablespoons masa harina
corn oil (for frying)
2 tablespoons sour cream
1 1/2 tablespoons finely diced red peppers
cilantro (to garnish)

Steps:

  • Process the beans in a food processor bowl for a few pulses, until coarsely chopped. Scrape beans into a large mixing bowl and add all ingredients up to and including the salt and pepper. Combine well and divide into six equal parts. Shape each part into an oval cake and dip in cornmeal (spread the cornmeal on some waxed paper) to lightly coat both sides of each cake.
  • Heat a little oil on medium-high in a large, heavy skillet, preferably cast iron. When the oil is hot, carefully slide the bean cakes into the pan and fry for 2 to 3 minutes on each side. Drain on paper and transfer to a warm serving dish. Top each cake with 1 teaspoons sour cream, some of the red pepper, and a few cilantro leaves.
