Ingredients

2 lemons, zest of, grated
4 teaspoons lemon juice
4 tablespoons flour
4 eggs, well beaten
2 cups granulated sugar
1 cup shredded coconut
1 teaspoon baking powder
1 cup margarine
2 cups powdered sugar
2 cups all-purpose flour

Steps:

Mix margarine, powdered sugar' sugar and flour together.
Spread in 15 x 10-inch jellyroll pan.
Bake at 350 F for 15 minutes until lite tan. Cool.
Mix remaining ingredients. Pour over crust. Bake for 25 minutes at 350°F Cut into bars.

Barb, as we call her in Texas, gave this recipe to the San Antonio Junior Forum for their cookbook. Actually, it's very rich & VERY GOOD!

Ingredients

6 boneless chicken breasts
2 tablespoons vermouth
1 cup heavy cream
2 tablespoons lemon juice
1 small lemon, grated

Steps:

Rub breasts with lemon juice, salt, pepper, and a little flour.
Sauté in butter 7 minutes each side.
Remove to baking dish.
Mix above ingredients in sauté pan, scraping well.
Strain over breasts.
Sprinkle with parmesan cheese and broil until lightly browned.
