I love banana! And these make the ideal treat for supper for the school lunches. They freeze well so double the recipe and try and leave some for the freezer! Store in an airtight container once cooled.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with 12 paper liners.
- Combine mashed banana, oil, milk, egg, and vanilla extract in a medium bowl. Sift flour and cocoa powder into a large bowl. Add sugar, baking powder, and salt into the flour mixture; mix to combine. Add wet ingredients to dry ingredients, mixing until just combined. Batter should be wet enough to scoop into muffin liners; add a little extra milk if your mixture is too dry.
- Stir chocolate chips into batter. Scoop batter into muffin liners.
- Bake in the preheated oven until tops spring back when lightly pressed, 12 to 15 minutes.

- Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
- Divide batter evenly between prepared cups, adding a scant 1/4 cup to each. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

- Preheat the oven to 400F. Grease a 12 muffin tin.
- Mix the flour, granulated sugar, baking powder and salt together.
- Melt the butter. Whisk the melted butter together with the eggs, vanilla extract and milk.
- Mash the bananas and mix them into the wet ingredients.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Don't over mix.
- Fold in the white chocolate chips and walnuts (optional).
- Divide the batter evenly into the muffin tin. Place the tray in the oven and immediately decrease the oven temperature to 375F.
- Bake for 25-30 minutes until a toothpick comes out clean.
