ROSEMARY CITRUS SALAD
Steps:
- For the rosemary syrup: Combine the sugar, rosemary sprigs and 1 cup water in a saucepan and bring to a boil, stirring until the sugar dissolves. Boil for 5 minutes. Let it cool, then strain out the rosemary. Stir in the lemon juice.
- For the salad: To assemble, divide the yogurt among 8 glasses, top with a mix of the oranges, blood oranges, mandarin oranges and grapefruit and drizzle the rosemary syrup over the top.
WARM LANGOSTINO SALAD
Today for brunch, I had my first taste of Langostino and I think I have found a new favourite food. These little Crustaceans are delicious. The ones I got were wild caught, frozen and fully cooked. I'm going to make this again soon.

Steps:
- Heat the coconut oil on med high in a non-stick skillet. Chop and saute the mushrooms until just soft, add the green onion, saute another minute.
- Add the Langostino, saute until they are soft and warmed through, about 2 minutes.
- Add the Mayo. Mix all the ingredients together.
- Put over the baby greens and serve warm.
- Enjoy!

- To make the dressing: combine the garlic, balsamic vinegar, salt and pepper in a small bowl. Whisk to mix well, then add the olive oil and whisk until thoroughly mixed and emulsified. Taste the dressing for seasoning and set aside. In a medium bowl, combine the langostino, avocado, tomatoes and onion. Drizzle the lemon juice over and stir gently to thoroughly mix the ingredients. Stack a few of the lettuce leaves on a chopping board and loosely roll them up. Cut across the leaves to form strips. Repeat with the remaining lettuce. Arrange the lettuce on individual plates.
