Baked Chicken and Onions image

Serve this healthy baked-chicken dish with our Rice Pilaf with Toasted Almonds.

Number Of Ingredients 6

2 onions, thinly sliced
1 cut-up chicken, (3 1/2 pounds in 8 pieces)
2 tablespoons vegetable oil
2 teaspoons coarse salt
1/2 teaspoon ground pepper
1 tablespoon paprika

Steps:

  • Preheat oven to 450 degrees. Place sliced onions and chicken pieces in a 9-by-13-inch baking dish or roasting pan. Drizzle with vegetable oil; season with coarse salt and ground pepper. Toss to coat.
  • Arrange chicken, skin sides up, on top of onions; sprinkle with paprika.
  • Bake, tossing onions and basting chicken occasionally, until juices run clear when chicken is pierced with the tip of a sharp paring knife, 35 to 40 minutes. Serve hot.

6 (4 oz.) skinless, boneless chicken breasts, raw
1/4 tsp paprika
1/4 tsp garlic powder
1/4 tsp seasoned salt
2 Tbsp Land o'Lakes light butter made with canola oil
1 yellow onion, peeled & sliced
1 (10 oz.) can French onion soup ( I use Campbell's)
1 cup low sodium beef broth
1/2 cup fat free or light mozzarella (I use Market Pantry reduced fat mozzarella)

Steps:

  • Preheat oven to 350 degrees.
  • In a skillet pan ( or cast iron grill skillet) melt butter and add sliced onions. Saute the onions in butter until softened and translucent.
  • When onions become soft, place onions on a plate and set aside.
  • Using the same skillet, spray the skillet with non stick cooking spray.
  • Season each chicken breast with paprika, garlic powder, and seasoned salt. Place seasoned chicken breasts into prepared skillet.
  • Cook for 5-7 minutes on medium high, on both sides or until chicken breasts are golden brown.
  • Add onions back into the skillet with the chicken breasts.
  • Pour in the can of French onion soup and 1 cup beef broth. Simmer the chicken and onions for 2-3 minutes-this will allow the soup to caramelize the chicken.
  • If using a cast iron skillet pan top each chicken breast with light mozzarella cheese. (otherwise-transfer chicken, onions, and sauce into an oven safe baking dish-and top with light mozzarella cheese.)
  • Place skillet or baking dish in preheated oven.
  • Cook for 10-15 minutes or until bubbly.

This recipe is from the late 1960's or early 1970's. Grandma liked her onions and this recipe was one she sent to me while I lived in California. She made a note, "THIS IS GOOD!" And we thought she was right.

6 chicken breast halves or chicken pieces of your choice
6 Tbsp melted butter
1 pkg dry onion soup mix (like lipton)
6 medium potatoes, cut in 2 or 3 pieces each
2 medium onions, cut in wedges

Steps:

  • 1. Preheat oven to 350 degrees. Place chickenin a 9 by 13 inch baking pan. Drizzle 1 tablespoon butter over each chickenpiece. Sprinkle dry onion soup mix evenly over chicken breasts. Place onions and potatoes in pan around chicken.
  • 2. Cover pan with lid or foil and bake for 50 minutes. Uncover and continue baking for 10-15 minutes more until chicken and potatoes are done and browned a bit.

2 tablespoons olive oil
2 cups sliced onions
1 teaspoon salt, divided
1/4 teaspoon pepper
2 cups all-purpose flour
3 teaspoons baking powder
5 tablespoons shortening
2/3 cup 2% milk
1 large egg, room temperature
3/4 cup sour cream

Steps:

  • Preheat oven to 400°. In a large skillet, heat oil over medium heat. Add onions; cook and stir until softened, 8-10 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally. Stir in 1/2 teaspoon salt and the pepper., Meanwhile, in a large bowl, combine flour, baking powder and remaining 1/2 teaspoon salt. Cut in shortening until mixture resembles coarse crumbs. Stir in milk just until moistened. Press into a greased 9-in. square baking pan; top with onions., Combine egg and sour cream; spread over onion layer. Bake until golden brown, 35-40 minutes. Cut into squares. Serve warm.

My Grandma used to make this chicken and it was my mom's favorite. It is very easy, quick, flexible, and delicious. You may add as many different veggies and any amount you want. The broth made from this is great to dip bread and butter; my brother loves to have it as soup. Yum!!!

8 chicken legs
5 large white potatoes
1 (8 ounce) package baby carrots
5 cloves garlic
2 yellow squash, quartered lengthwise and cut crosswise into 1/2-inch slices
1 large onion, peeled and sliced
1 tablespoon dried parsley flakes
½ tablespoon garlic powder
salt to taste
black pepper to taste
4 tablespoons butter, divided
2 cups water, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the chicken legs in a 9x13 inch baking dish. Arrange potatoes, carrots, garlic, and squash around the chicken. Top with onion slices. Season with parsley, garlic powder, salt, and pepper. Place 1/2 tablespoon butter on each chicken leg. Pour water into pan to a level of about 1/2 inch.
  • Cover pan with foil and cook 1 hour in the preheated oven. Remove foil and continue cooking 20 minutes, until vegetables are tender and chicken juices run clear.

2 cups diced cooked chicken
1 (10.5 ounce) can condensed cream of chicken soup
1 cup cooked rice
1 cup diced celery
¾ cup creamy salad dressing (such as Miracle Whip®)
4 large hard-cooked eggs, chopped
1 tablespoon lemon juice
1 teaspoon minced onion
½ cup cornflake crumbs
½ cup slivered almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 11x7-inch baking dish with butter.

1 (12 ounce) package frozen broccoli florets, thawed

6 ounces processed cheese sauce (such as Cheez Whiz®)
1 cup uncooked instant rice (such as Minute®)

Steps:
