1 1/2 cups dried thyme
3/4 cups sesame seeds
1/4 cup oregano
1/4 cup kosher salt
1/4 cup dried sumac (see Cook's Note)
All-purpose flour, for dusting
One 17.3-ounce box puff pastry, thawed and cold from the refrigerator
1/4 cup olive oil
1 egg white

Steps:

  • On a floured surface with a floured rolling pin, roll a sheet of puff pastry out into a 16-inch square. Brush with some olive oil and sprinkle about 1 cup za'atar across the dough to mostly cover with only small gaps of dough showing, brushing off any excess, and leaving 1/2-inch border of clean dough on the top and bottom edges. Fold the dough in half towards you, pinching together the naked edges to seal. Lightly go over the dough with the rolling pin to help the dough stick together. Repeat with the remaining puff pastry.
  • Line 2 baking sheets with parchment paper and preheat the oven to 400 degrees F. Beat the egg white with 1 tablespoon water. Brush some over the surface of the dough and sprinkle each with an additional 1/3 cup za'atar. Using a pizza wheel or very sharp knife, slice each piece of dough crosswise into 12 strips. Gently twist each strip, then lay on the prepared baking sheet leaving at least 2 inches in between each, and refrigerate for at least 15 minutes. (Save the remaining za'atar for another use.)
  • Bake the chilled straws, rotating and switching positions of the pans halfway through, until golden brown, 10 to 15 minutes. Serve immediately or cool to room temperature.

CAVIAR PUFF-PASTRY STARS

1/2 pound frozen puff pastry, thawed
an egg wash made by beating together 1 large egg and 1 teaspoon water
1/3 cup sour cream or crème fraîche
1 ounce black caviar
3 tablespoons minced fresh chives

Steps:

  • On a floured surface roll out the puff pastry 1/8 inch thick and with a 3-inch star-shaped cutter cut out 8 pastry stars. Transfer the stars to a lightly greased baking sheet, brush the tops with the egg wash, being careful not to let the wash drip down the sides, and bake the stars in the middle of a preheated 400°F. oven 12 to 15 minutes, or until they are puffed and golden. Transfer the stars to a rack and let them cool completely. With a sharp small knife carefully split the stars in half horizontally to form a total of 16 stars, leaving the bottoms cut sides up and the tops cut sides down. Just before serving, spoon about 1 teaspoon of the sour cream onto each star, divide the caviar among the stars, and sprinkle the hors d'oeuvres with the chives.

1 teaspoon water
2/3 cup sour cream or 2/3 cup creme fraiche
2 ounces black caviar
6 tablespoons minced fresh chives

Steps:

  • Preheat oven to 400 degrees F.
  • On a floured surface, roll out puff pastry 1/8 inch thick and with a 3 inch star-shaped cutter, cut out 16 pastry stars.
  • Transfer to lightly greased baking sheets, brush tops with egg wash, being careful not to let it drip down sides.
  • Bake in middle of oven for 12-15 minutes, or until puffed and golden.
  • Let cool and split, leaving the bottoms cut-side-up and tops cut-side-down.
  • Just before serving, spoon about 1 tsp sour cream onto each star, divide caviar among stars and sprinkle with chives.

1 package puff pastry, thawed according to instructions
8 ounces pitted prunes
1 1/2 cups water
8 tablespoons sugar
1 egg, beaten

Steps:

  • Put prunes, water& sugar in a saucepan.
  • simmer for 20 minutes, cool, drain off any excess liquid & puree coarsely.
  • Roll out the thawed puff pastry to make 4 12x12 inch squares.
  • Cut into 3" squares and place a level teaspoon of prunes into the center of each square.
  • Cut a 1 1/2 slit from each corner toward the center of each square.
  • Fold alternate points toward the center and press together in the middle.
  • Let rest on an ungreased baking sheet or baking stone (cover the stone with a sheet of baking paper) for 15 minutes.
  • Brush with beaten egg.
  • Place in 450F oven and bake for about 10 minutes or until flakey and golden.

320g puff pastry sheet
mugful of grated cheese (we mixed 60g cheddar with 25g parmesan)
flour , for dusting
2 tbsp milk
toppings of your choice (optional) - we used poppy seeds, dried oregano and sesame seeds

Steps:

  • Unroll the pastry and sprinkle most of the cheese over one half of the sheet. Fold the pastry in half to cover the cheese and seal it in.
  • Dust your rolling pin and work surface with a little flour and put your pastry sheet on it. Roll it out until doubled in size.
  • Heat oven to 200C/180C fan/gas 6 and line two baking sheets with baking parchment.
  • Using cookie cutters, cut the pastry into shapes and put them on the prepared baking sheets. (Put the cutters on the dough close together so that less pastry is wasted. You can fold the trimmings back on themselves and re-roll to cut out more shapes.)
  • Brush the shapes with milk and add a pinch of cheese and a sprinkling of your chosen topping, if using.
  • Bake in the oven for 10-12 mins or until risen and golden, then transfer to a serving plate. Will keep in an airtight container for 3 days.

2 tablespoons basil pesto
2 sheets puff pastry, ready-rolled butter
1/2 cup parmesan cheese, finely grated

Steps:

  • Preheat oven to moderately hot (400°F - 205°C - Gas Mark 6).
  • Combine butter and pesto in small bowl. Spread pesto mixture over pastry sheets, sprinkle with cheese.
  • Using a 5.5 cm cutter, cut stars from pastry sheets, place onto lightly oiled oven trays.
  • Bake, uncovered, for about 10 minutes or until puffed and browned, cool.

1 -2 tablespoon water
1 tablespoon coarse sugar
2 cups sliced fresh strawberries
1 1/2 cups raspberries
1 cup fresh blueberries
1/4 cup sugar, plus
1 teaspoon sugar, divided
1/2 cup heavy whipping cream
1 cup sour cream

Steps:

  • On a lightly floured surface, roll out pastry to 1/8 inch thickness. Cut with floured star-shaped cookie cutters. Place 1 inch apart on parchment-paper lined baking sheets. Bake at 400 for 8-10 minutes or until golden brown. Remove to wire racks. Brush lightly with water and sprinkle with sugar. Cool.
  • In a large bowl, combine berries and 1/4 cup sugar; set aside. In a small mixing bowl, beat cream until it begins to thicken. Add remaining sugar; beat until soft peaks form. Place sour cream in a small serving bowl; fold in whipped cream. Place bowl on a serving platter. Spoon berries onto platter; top with pastry stars.

1/2 cup water
1/2 stick (1/4 cup) unsalted butter, cut into small pieces
Scant 1/4 teaspoon salt
1/2 cup all-purpose flour
2 large eggs (raw)
1 hard-boiled large egg
1 tablespoon finely chopped fresh flat-leaf parsley
2 1/2 oz caviar (about 75 g; preferably sevruga or osetra)
Special equipment: a large pastry bag fitted with a 1/2-inch plain tip

Steps:

  • Put oven rack in middle position and preheat oven to 425°F. Butter a large baking sheet.
  • Bring water, butter, and salt to a boil in a 1 1/2- to 2 1/2-quart heavy saucepan over high heat, stirring. Reduce heat to moderate. Add flour all at once and cook, beating with a wooden spoon until mixture pulls away from side of pan, about 45 seconds. Remove from heat and cool slightly, then add 2 raw eggs 1 at a time, beating well with wooden spoon after each addition.
  • Transfer mixture to pastry bag and pipe 24 mounds (about 1 inch wide by 1 inch high) onto baking sheet, spacing them about 1 inch apart. With a finger dipped in water, lightly tap down points on mounds to make tops round. Bake profiteroles until puffed and golden, 20 to 25 minutes. Remove from oven and pierce each profiterole once with a wooden pick. Turn off oven and return profiteroles to oven, letting them stand in residual heat 5 minutes more. Transfer to a rack to cool completely.
  • Horizontally cut off top third of each profiterole with a serrated knife and discard tops. Force boiled egg through a medium-mesh sieve into a small bowl and stir in parsley. Spoon a rounded 1/4 teaspoon caviar into each profiterole and sprinkle with a bit of egg mixture.

5 tablespoons chocolate-hazelnut spread (such as Nutella®)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Roll out 1 puff pastry sheet and place on the prepared baking sheet.
  • Spread chocolate-hazelnut spread evenly onto puff pastry with the back of a spoon. Roll out the second sheet of puff pastry and place on top.
  • Place a glass or Mason jar face-down in the center of the puff pastry. Cut pastry into 4 equal strips with a sharp knife, stopping at the border of the glass. Cut through each quarter again, making 8 strips, and again, ending up with a total of 16 equal parts, while keeping the center intact. Twist 2 parts away from each other; pull outward and seal seams together. Repeat with the rest of the parts until pastry resembles a star.
  • Brush top with beaten egg.
