70S THROWBACK HARVEY WALLBANGER CAKE
Steps:
- Preheat the oven to 350 F.
- Grease and flour a Bundt pan or spray with floured vegetable spray.
- Place the cake mix, vegetable oil, eggs, Galliano liqueur, vodka, pudding mix, and orange juice into a large mixing bowl. Beat on medium speed for 2 minutes.
- Pour the cake mixture evenly into the prepared Bundt pan and tap gently on the counter to release any air bubbles.
- Bake for 45 to 50 minutes. A toothpick inserted in the center should come out clean. (Do not overbake or it will become dry.)
- Let the cake rest for 5 minutes.
- Gently loosen the edges around the rims with a thin rubber spatula. Invert and unmold the cake from the Bundt pan onto a cake platter.
- Mix the powdered sugar, orange juice, Galliano liqueur, and vodka until the mixture is smooth. (If it is too thick, add more orange juice a few drops at a time to get a drizzling consistency. If it is too thin, add more powdered sugar a teaspoon at a time.)
- Drizzle the glaze over the cake while it's still warm; let cool to room temperature for the glaze to set.
- Fill mini-muffins and/or muffin paper-lined tins three-fourths full.
- Bake mini-muffins for 10 minutes regular muffins for 20 minutes. Check for doneness with a toothpick inserted in the center. If it comes out clean, they are done.
- Drizzle with glaze or sprinkle with powdered confectioners' sugar .

ORANGE HARVEY WALLBANGER VODKA CAKE
This makes a sinfully, delicious, Bundt or tube cake. Great when you have guests to serve. I have made this since the early 70's!.....all enjoy it, and I hope you will also. Serve with ice cream or just dusted dusted with powdered sugar, orange slices, and an simple orange glaze. And maybe. ORANGE JELLO SHOTS !... LOL

- 1. Put all ingredients given in a large bowl.Blend all at low speed electric mixer until all are moistened, about 30 seconds.Or 300 vigorous strokes by hand. Scrape bowl and beaters. Beat 2 mikinutes longer at med speed. Pour into a greased and floured 10 inch tube or Bunt pan. Bake in a pre-heated 350 oven. Bake for 45-55 minutes. Until golden and a tester inserted into the center comes out clean. Cool cake in pan on a rack 10 minutes. Then turn out on a wire rack to cool completely. ***Did you know you can use a piece of uncooked spaghetti ..for a tester?

- Preheat oven to 350°. Grease and flour a 10-inch tube pan., In a large bowl, combine the first 7 ingredients; beat on low speed 30 seconds. Beat on medium 2 minutes. Transfer batter to prepared pan., Bake until top springs back when lightly touched, 45-50 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely. , In a small bowl, mix glaze ingredients until smooth. Pour over cake. If desired, top with white sprinkles and serve with segmented citrus fruit.
