CHEESY ARTICHOKE SQUARES
This is an old family favourite. I can't remember where I got the recipe, but I have been making these squares for 25 years. These spicy squares are excellent served hot or cold. If you are not a fan of alot of herbs, than please, add the amount you would prefer, this dish is very versatile.

Steps:
- Preheat oven to 350°.
- Drain juice from one jar of artichokes into frying pan.
- Sauté onion and garlic in the artichoke juice, simmer and cool.
- Chop artichokes and mix with the cooled onions and garlic.
- Combine artichoke mixture, breadcrumbs, cheese, eggs, salt, pepper, parsley, oregano, basil, thyme, rosemary and Tabasco sauce together until well blended.
- Pour the artichoke mixture into a greased 8x8-inch or 9x9-inch pan.
- Bake in a 350° oven for 40 minutes.
- Let cool 5 minutes; cut and enjoy.

Steps:
- Heat oven to 400°F.
- Use a knife to slice off the bottom 1/2-inch (or more, if you'd like) of the artichoke stems, and the top 1 inch of the artichoke globes (the leaves on top). Remove and discard any small leaves toward the bottoms of the stems. Rinse the artichokes with water.
- Slice the artichokes in half vertically. Use a spoon to scoop out the fuzzy "choke" in the middle of the artichoke. Then use kitchen shears to trim about 1/4/-inch off the pointy tips of each of the artichoke leaves (so that they don't poke you when you eat them). Rub a lemon wedge all over the entire surface of each artichoke half, to prevent browning.
- Place the artichoke halves in a baking dish or on a baking sheet cut-side-up. Brush the cut sides of the artichokes evenly with the olive oil. Then fill the cavities evenly with the garlic, followed by a few small sprigs of the fresh herbs. Season with salt and pepper.
- Flip the artichokes over, using the herbs to help hold in the garlic, so that they are cut-side-down. Brush the tops of the artichokes with oil, and season with salt and pepper.
- Bake uncovered for 15 minutes. Then remove and cover the pan with aluminum foil, and bake for an additional 25-35 minutes, or until the artichokes are tender and the leaves pull off easily.
- Place the tray on a cooling rack. Carefully remove, discard the herbs (or stir them into your dipping sauce for extra flavor), and drizzle the artichokes with extra lemon juice.
- Serve the roasted artichokes warm with your desired dipping sauce.
AMAZINGLY ADDICTIVE ARTICHOKE SQUARES
Steps:
- Preheat oven to 350 degrees F.
- Drain artichoke hearts and chop fine. If using hearts marinated in oil, reserve 2 tablespoons of the oil.
- Heat the 2 tablespoons of the reserved oil OR 2 tablespoon of olive oil, in a small skillet over moderate heat. Add the onion and garlic, and cook, stirring frequently, until soft-about 5 minutes. Add the chopped artichoke hearts and saute with onion and garlic for an additional minute. Remove from heat and cool for about 5 minutes.
- In a medium bowl, beat the eggs until frothy. Stir in the breadcrumbs, seasonings, cheese, and artichoke, onion, garlic mixture. Pour into greased 9 X 9 baking pan.
- Bake for 30 minutes or until lightly browned. Cool for 10 minutes, then cut in to 9 3-inch squares {if serving as a main course} or 27 1-inch squares {if serving as an appetizer}. Will keep, tightly covered and refrigerated for up to 3 days.

Steps:
- Heat 3 tbs oil in medium skillet over medium-high heat.
- Add mushrooms,celery and garlic and sautee till celery is tender.
- Remove from heat, stir in artichoke hearts, onion, marjoram, oregano and ground red pepper Add cheeses and eggs, mix well and set aside.
- Combine flour and salt in a medium bowl.
- Combine 1/2 cup vegetable oil and the milk in a small bowl.
- Add to flour mixture, stir until mixture forms a ball.
- Press dough in bottom and 1 1/2 inches up sides of 13x9x2 inch pan.
- Bake in preheated 350 degree oven for 10 minutes.
- Spread artichoke mixture on baked crust.
- Continue baking about 20 minutes more or until center is set.
- Cool slightly, cut into 24 squares.
- Serve warm.
CHEESY ARTICHOKE SQUARES

- In a small bowl, beat the mozzarella cheese, cream cheese, artichokes and garlic until blended. , Unroll both tubes of crescent dough into rectangles.
