PINK GRAPEFRUIT MERINGUE PIES

15 graham crackers, crushed
1/2 cup finely grated semi-sweet dark chocolate
1/4 cup brown sugar
1/4 cup unsalted butter, melted
4 eggs, separate yolks from whites, at room temperature
1/4 cup freshly squeezed pink grapefruit juice
1/4 cup fresh lemon juice
1 teaspoon fresh grapefruit zest
1 teaspoon fresh lemon zest
1 1/4 cups brown sugar
1/3 cup cornstarch
Pinch salt
1 1/2 cups water
2 tablespoons unsalted butter, melted
3 tablespoons white sugar
1 teaspoon white vinegar

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the pie crust: In a resealable plastic bag, crush the graham crackers. Transfer the crushed graham crackers into a big bowl and mix in the grated dark chocolate shavings, brown sugar, and melted butter. Line 6 (4-inch) mini pie molds with the crust mixture, making crust about 1/8-inch thick. Bake for 8 to 10 minutes, then cool.
  • To make the filling: In a bowl, combine egg yolks, fresh pink grapefruit juice, fresh lemon juice, pink grapefruit zest, and lemon zest. Mix and set aside. In a heavy saucepan add: brown sugar, cornstarch, a pinch of sea salt, and water. Bring to a boil over medium heat whisking constantly for 2 to 3 minutes, until the mixture thickens. Slowly whisk in a small portion of this mixture to the egg yolks-citrus mixture. Cook's Note: Be careful not to cook the yolks.
  • Whisk the egg yolk-citrus mixture back into the pot, reduce the heat to low, add 2 tablespoons unsalted butter and whisk for 8 more minutes, until very thick. Cover and refrigerate the mixture for 3 hours.
  • Preheat the oven to 375 degrees F.
  • To make the meringue: In clean bowl, combine the 4 egg whites, white sugar, and white vinegar. Using electric mixer or whisk, whip until stiff peaks form.
  • Evenly divide and spoon the chilled citrus filling into the graham cracker crusts and top with lots of meringue. Bake for 10 minutes, or until the meringues brown slightly.

8 oranges
6 pink grapefruits
1 cup/250 ml sweet white wine
1 cup/190 g sugar
4 envelopes gelatin
Fresh mint sprigs or candied orange zest, for garnish

Steps:

  • Peel and section the fruit into a bowl, squeezing out all of the juice. Measure out 3/4 cup/175 ml of juice and put it in a saucepan with the wine. Add the sugar and heat to dissolve. Pour 1/4 cup/60 ml of the liquid into a bowl and soften the gelatin for a minute. Return it to the pan. Stir to dissolve, and boil 2 minutes. Cool completely.
  • Line a 1 quart/1 liter terrine or glass loaf pan with plastic wrap, leaving enough overhang to cover the terrine afterwards. Arrange the fruit sections decoratively in the terrine. Pour the liquid over. Chill the terrine, covered, until firm, at least 4 hours and up to 2 days. Garnish with mint sprigs or candied orange zest.

SHRIMP SATAY WITH PINK GRAPEFRUIT AND GUACAMOLE

1 pound shrimp, peeled
Salt and pepper
1 bunch fresh thyme
Olive oil
4 avocados
6 cloves garlic
1 bunch cilantro
2 ounces sour cream
Salt and pepper
1 lemon, juiced
2 pink grapefruits, peeled and supremed (pith and membranes cut away, leaving only segments of grapefruit)

Steps:

  • Preheat a grill. Place the shrimp on skewers and season with salt, pepper, and fresh thyme. Place the shrimp skewers on a platter, drizzle with olive oil, and let marinate for approximately 20 minutes. Place shrimp skewers on grill and cook for about 4 minutes per side.
  • Peel and mash the avocados with a fork, making sure you leave it a bit chunky. Chop the garlic and cilantro. Add the sour cream, garlic, and cilantro to the crushed avocados. Season with salt and pepper, and add the lemon juice.
  • To serve, place a spoonful of the guacamole on a plate. Place the shrimp skewers on top of the guacamole, and garnish with grapefruit supremes.

PINK GRAPEFRUIT SHORTBREAD

2 sticks unsalted butter, at room temperature
1 large egg yolk
2 tablespoons plus 1/2 teaspoon finely grated pink grapefruit zest (from 2 large grapefruits)
1/2 teaspoon salt
2 cups confectioners' sugar
2 cups all-purpose flour, plus more for dusting
1 to 2 tablespoons fresh pink grapefruit juice
Red food coloring
Coarse sugar, for decorating

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Beat the butter, egg yolk, 2 tablespoons grapefruit zest and the salt in a large bowl with a mixer on medium speed until light and creamy, about 3 minutes. Add 1 cup confectioners' sugar and beat until combined. Reduce the mixer speed to medium low and gradually beat in the flour until incorporated.
  • Turn the dough out onto a lightly floured surface and dust with flour. Gently knead a few times until soft but not sticky, dusting the surface with more flour as needed. Roll out to slightly thicker than 1/4 inch thick and cut out circles with a 2-to-2 1/2-inch-round cookie cutter. Gather the scraps and reroll to cut out more cookies.
  • Arrange the cookies 2 inches apart on 2 baking sheets. Bake, switching the pans halfway through, until the cookies are firm and golden brown on the bottoms, 15 to 18 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
  • Whisk the remaining 1 cup confectioners' sugar, 1 tablespoon grapefruit juice and the remaining 1/2 teaspoon zest in a bowl until smooth. Gradually whisk in up to 1 tablespoon more grapefruit juice until the glaze is spreadable. Tint pink with food coloring. Spread about 1/2 teaspoon glaze on each cookie. Sprinkle with coarse sugar.

2 pink grapefruits (1-1/4 pound each)
2 tsp unflavoured gelatin (1 packet)
2 Tbsp honey
1 Tbsp grenadine
mint leaves shredded
Orange Sauce:
1/2 cup orange marmalade
2 Tbsp Grand Marnier
2 Tbsp orange juice

Steps:

  • 1. Peel grapefruit and cut out segments separately by sliding knife between membranes and flipping out. Squeeze remaining part of grapefruit into a small saucepan (should be about 3/4 cup) 2.Divide segments among 4 custard cups with a 3/4 cup capacity arranging about 6 segments each 3. Sprinkle gelatin over juice in saucepan and heat until gelatin is melted. Add honey and grenadine and stir well. Mix in chopped mint leaves and pour mixture over grapefruit segments, dividing evenly. Cover and refrigerate for at least 4-6 hours or overnight. 4. To make orange sauce, mix all ingredients in a small bowl. 5. At serving time, dip bottom of cups briefly into hot water to loosen and unmold onto individual plates. Spoon over sauce and serve.

1/2 cup sugar
3 whole star anise
2 whole cinnamon sticks
1 pink grapefruit
2 white grapefruit
2 ruby red grapefruit
2 navel oranges
2 tangerines or clementines
2 packages unflavored gelatin
1 pint best-quality lemon sorbet
Olive-oil cooking spray

Steps:

  • Combine the sugar, star anise, cinnamon sticks, and 1 1/4 cups water in a small saucepan. Bring to a boil over medium-high heat. Reduce to a simmer, and cook 5 minutes. Remove from heat; allow syrup to cool.
  • Using a paring knife, carefully remove peel, pith, and outer membranes from all citrus. Carefully slice each segment of pulp from the membranes into a sieve set over a large bowl. Transfer segments to another bowl, removing any seeds and being careful not to break segments. Set the citrus segments aside; reserve juice for another use.
  • Strain cooled syrup into a medium bowl. Sprinkle gelatin over syrup; allow to dissolve, 2 minutes. Return to saucepan; place over low heat, stirring, until gelatin has fully dissolved. Remove from heat; set aside to cool.
  • Coat a 4 1/2-by-9-inch loaf pan or 5-cup mold with cooking spray; line with plastic, allowing 6 inches to overhang on all sides. Fill pan with reserved citrus segments. Pressing firmly on fruit, tilt the pan, draining excess juice. Pour gelatin mixture over fruit, poking with a skewer so mixture runs into the corners. Carefully fold excess plastic over top, and chill until set, 6 hours or overnight.
  • To serve, unfold plastic; place a platter on top. Carefully invert both; remove pan, holding plastic in place on platter. Remove the plastic. Slice; serve with lemon sorbet.
