9 large egg yolks
3/4 cup sugar
3 tablespoons Bourbon
1 1/2 teaspoons vanilla extract
2 1/2 cups whipping cream
6 tablespoons golden brown sugar
1/2 cup pecans, coarsely chopped and toasted

Steps:

  • Preheat oven to 350°F
  • Place six 3/4-cup custard cups in large roasting pan.
  • Whisk egg yolks, sugar, bourbon and vanilla extract in large bowl to blend. Bring whipping cream to boil in heavy medium saucepan. Gradually whisk hot whipping cream into egg yolk mixture. Pour custard into souffl
 dishes, dividing equally.
  • Pour enough hot water into roasting pan to come halfway up sides of souffl
 dishes. Bake custards until just set in center, about 30 minutes.
  • Remove from water and cool completely. Cover and refrigerate at least 6 hours. (Custards can be prepared up to 2 days ahead. Keep covered and refrigerated.).
  • Preheat broiler. Arrange custard dishes on baking sheet. Sprinkle 1 tablespoon golden brown sugar evenly over each. Broil until sugar melts and turns dark brown, rotating baking sheet for even browning and watching closely, about 2 minutes. Sprinkle creme brulees with chopped toasted pecans, dividing equally.

3/4 cup sugar
3 tablespoons Bourbon
2 teaspoons vanilla extract
2 1/2 cups heavy cream
4 tablespoons brown sugar, for topping
1/2 cup chopped pecans, toasted

Steps:

  • Preheat your oven to 350.
  • Heat the cream to a simmer, stirring occasionally to prevent a skin from forming.
  • Meanwhile fork together the egg yolks and sugar, taking care not to incorporate any air into the mix.
  • When cream is hot, remove from heat and add vanilla and bourbon.
  • Slowly pour cream into eggs, mixing with fork, being careful not to incorporate any air into the mix. You have to pour slowly, otherwise the hot cream will cook the egg.
  • Divide custard between 6 ramekins and place in a baking dish. Add water to the baking dish so that it comes up the sides of the ramekins to the level of the custard inside. Take care not to splash any water into the ramekins.
  • Carefully place baking dish in the oven (don't splash water into the ramekins) and bake about half an hour. Custard is done when it is set but still jiggly.
  • Remove from the oven and take the ramekins out of the water bath. Allow to cool to room temperature, then cover with plastic wrap and refrigerate at least a couple hours, and up to 2 days.
  • When ready to serve, cover each custard with about 2 tsp of brown sugar and caramelize with a torch (or you can use the broiler in your oven, but be careful, the line between caramelized and burned is a fine line). Top with toasted pecans.

1 ½ tsp vanilla extract
2 ½ cups whipping cream
6 tbsp golden brown sugar
½ cup coarsely chopped toasted pecans

1/2 cup top-quality Bourbon
1 lb pecan halves
1 tablespoon corn oil
1 tablespoon Worcestershire sauce
1/2 teaspoon Angostura bitters
1/2 cup sugar
1 teaspoon ground cumin
1/2 teaspoon cayenne (or to taste)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 325 degrees Fahrenheit. Simmer the bourbon in a small saucepan over medium heat until reduced by a quarter, just a few minutes. Blanch the pecans in boiling water for 1 minute ( blanching the pecans in boiling water is an old Chinese trick that makes them especially crisp), then drain.
  • Combine the bourbon, oil, Worcestershire sauce, bitters, and sugar in a large bowl. Add the HOT pecans and toss. Let stand for 10 minutes.
  • Spread the pecans in a single layer on a large baking sheet. Bake until the nuts are crisp and the liquid has evaporated, 30 to 40 minutes, stirring every 10 minutes. Turn the nuts into a clean bowl.
  • Combine the cumin, cayenne, salt, and pepper in a small bowl. Toss with the nuts and serve.

My daughter found this recipe and it has become our favorite for pecan pie. I have never found any restaurant pie to beat this one.

1 cup pure maple syrup
1 cup granulated sugar
4 tablespoons butter
4 eggs, large
1 tablespoon vanilla extract
9 inches pie crusts
1 1/2 cups pecan halves
1 cup whipping cream
2 tablespoons confectioners' sugar
1 -2 tablespoon Bourbon

Steps:

  • Preheat oven to 350.
  • Prepare pie crust in pie pan and have ready.
  • In 3-qt. saucepan, cook maple syrup, sugar and butter over medium heat until mixture boils. Reduce heat to medium-low and cook 5 minutes longer, stirring.
  • In large bowl whisk eggs until slightly beaten. Slowly whisk the hot syrup mixture into the eggs. Do not try to add the eggs to the hot syrup. Stir in vanilla.
  • Place unbaked crust on cookie sheet. Place pecans in crust. Pour syrup mixture over pecans.
  • Bake 45 to 50 minutes or until filling is just set.
  • Cool pie on wire rack atleast 1 hour.
  • To serve, whip cream with confectioners' sugar and bourbon. Dollop onto individual pie servings.

2 cups heavy cream
5 tablespoons sugar
6 egg yolks
1 bunch of fresh mint
3 tablespoons sugar, for topping

Steps:

  • Heat cream in a small pot with fresh mint. Simmer, stirring occasionally so a skin doesn't form, until the mint leaves are wilted and the cream smells strongly of mint (10-20 minutes or so, or longer to taste).
  • Meanwhile, cream together the eggs and sugar in a mixing bowl. Try not to incorporate a bunch of air into the mixture. I like to use a fork to do this.
  • Strain the cream to remove the mint leaves. Let it cool somewhat.
  • SLOWLY pour the strained cream into the eggs and sugar, mixing as you do so (if you go too fast you'll end up cooking the egg).
  • Pour the mixture into 6 ramekins. Place in a baking dish and fill the baking dish with water up to the level of the cream in the ramekins. DON'T splash water into the ramekins. The water bath helps keep the cream from overheating as it cooks, but if you get water in the cream it will not set properly.
  • Bake at 350 for about 30 minutes. How long will depend on the shape of your ramekins. The cream is done when it is set but still jiggly in the center.
  • Remove ramekins from the water bath and allow to cool to room temperature. Then cover with plastic wrap and chill in the fridge for at least a couple hours.
  • When ready to eat, top with a teaspoon or two of sugar and caramelize with a torch. Try to melt the sugar without burning it. Don't make your layer too thick or it will burn. You can also caramelize the sugar by placing the ramekins under the broiler, but I've never had success this way, I always end up with burned patches.

This crème brûlée couldn't be easier especially with just four ingredients! This is not made the traditional method, but still turns out silky smooth, and it's ready faster than the oven method!

3 large egg yolks
¼ cup superfine sugar
1 teaspoon pure bourbon vanilla bean paste
1 cup heavy whipping cream
1 tablespoon superfine sugar

Steps:

  • Add egg yolks to a bowl and beat with an electric mixer on high speed until eggs are thick and light yellow, about 5 minutes. Gradually beat in 1/4 cup sugar and vanilla bean paste.
  • Pour cream in the top of a double boiler over simmering water and simmer until just hot to the touch, about 3 minutes. Pour half of the warmed cream into the egg mixture, a little at a time, whisking constantly so eggs do not curdle.
  • Pour egg yolk-cream mixture into the remaining cream in the double boiler.
  • Cook over medium heat, stirring continuously, until mixture thickens, 8 to 10 minutes. Do not let mixture boil.
  • Pour custard into 4 small ramekins and refrigerate for a minimum of 2 hours, up to 24 hours.
  • Sprinkle each crème brûlée with some of the remaining tablespoon of superfine sugar.
  • Use a blowtorch to melt the sugar on top of the crème brûlée. It will crystallize as it hardens. Alternatively you can use the oven broiler, but be careful to not burn the sugar.
  • Lightly tap the crystallized sugar with the back of a spoon to break it before eating.
