Clam Dip is a cream cheese and sour cream spread studded with bits of clams and seasoned with Old Bay for some kick - the perfect party snack.

1 (8 ounce) block cream cheese, room temperature
1 large shallot, minced
1/4 cup chopped parsley
3 tablespoons chopped chives
1 tablespoon lemon zest
1 tablespoon freshly squeezed lemon juice
3 teaspoons Old Bay Seasoning, or to taste
6 teaspoons prepared horseradish, drained
1 teaspoon Worcestershire sauce
1/8 teaspoon freshly ground black pepper
1 cup sour cream
3 (6 1/2 ounce) cans chopped clams in clam juice, drained with 1 tablespoon clam juice reserved
Chopped parsley, for garnish
To serve
Thick-sliced potato chips, crackers, or crudités

Steps:

  • Taste dip and adjust seasoning: Taste the dip and adjust seasonings, if needed. The Old Bay is the main source of salt so add more if needed or add kosher salt if the dip is already at a good spice level for you.
  • Chill the clam dip: Cover and chill the dip for at least 2 hours and up to 3 days.

Here is another of our old family recipes. The cooks have gone on, but their memories remain in the food they so lovingly prepared for us when we were young. As children, we always loved visiting Aunt Marjorie and Uncle Luther, my father's brother. They lived on a small farm, and had so many different kinds of fowl. She used to cook with tiny little Bantam Hen eggs - I think it took 3 of those to equal one hen's egg. Oh, the memories!

2 (3 oz) - packages cream cheese
1 (7.5 oz) - can of minced clams
2 dash(es) tabasco sauce
1/4 teaspoon(s) salt
1 dash(es) pepper
1 teaspoon(s) freshly grated onion
1 teaspoon(s) lemon juice
- chopped fresh chives (optional)

Steps:

  • Soften cream cheese to room temperature. Drain clams and add 2 tablespoons clam juice to the cream cheese.
  • Mix cream cheese, clams, tabasco sauce, salt & pepper, onion, and lemon juice until well blended. Place in serving dish and chill. May sprinkle with chopped chives if desired.
  • This is very good with crackers or celery sticks. We used to eat it on those little flavored crackers called "Chicken in a Biscuit." Do they still make those?

Steps:

  • Combine all ingredients plus 4 tablespoons of the reserved clam juice in a bowl and mix until thoroughly combined.
  • Put mixture in a serving bowl and chill.
  • Serve with potato chips, crackers, or small pieces of raw vegetables.

You just gotta try this easy to make clam dip with cream cheese.

24 ounces clams (canned)
16 ounces cream cheese
8 ounces sour cream
1/2 teaspoon sugar
1 teaspoon salt
2 teaspoons fresh lemon juice ((or 2 1/2 teaspoons reconstituted))
1/2 teaspoon MSG (Accent flavor seasoning)
fresh chopped parsley
fresh chopped chives

Steps:

  • Drain the clams and reserve 3 tablespoons of the juice. Discard the remaining clam juice.
  • In a medium bowl, combine the cream cheese, sour cream, sugar, salt, lemon juice, reserved clam juice, and MSG.
  • Mix with a mixer until smooth and creamy.
  • Add the clams and stir with a wooden spoon or spatula.
  • Place the dip in an air-tight container in the refrigerator and let it rest for a few hours.
  • Garnish with fresh chopped parsley or chives if desired.

Here now a taste of New England game days circa the time when televisions had dials instead of remotes and, if you couldn't get fresh clams to steam and chop, a can or two from the supermarket would do just fine. (That's still true!) The recipe comes from Brendan McCarthy, a saltwater fishing guide whose charters range from Brooklyn to Montauk, and south to Florida, the Bahamas and the azure waters off Panama, but whose tastes and kitchen skills were first developed in New England and see an apogee in the simplicity of this recipe. The dip benefits from some curing time in the refrigerator and, for some, a heavy hand on the cayenne.

1 cup cooked and cooled chopped clams, from approximately 2 dozen littleneck clams, or 2 small cans of chopped clams, with three tablespoons of their liquor
1 1/2 tablespoons fresh lemon juice, or to taste
1/2 teaspoon Worcestershire sauce, or to taste
1/2 teaspoon cayenne pepper, or to taste
1/2 teaspoon kosher salt, or to taste

  • In a small bowl, combine the sour cream and clams and mix well.

1/4 lb Butter (1 stick)
3/4 Cup Bread Crumbs

2 Teaspoons Garlic Powder
2 Tablespoons Parsley
Parmesaen Cheese

Steps:

  • Melt butter and pour into a quich dish. Add the two cans of clams with juice and the rest of the spices. Stir in bread crumbs and mix well. Sprinkle top with cheese and bake in 350 degree oven for 20-25 minutes. Let it cool and serve warm with crackers.
