Homemade Spaghetti Sauce with Fresh Tomatoes image

Homemade spaghetti sauce is my favorite thing to make with fresh garden tomatoes. This rich, hearty sauce is an instant favorite with anyone who tries it!

12-14 tomatoes ((fresh, garden tomatoes work best- appx. 8-10 lbs))
2 tablespoons olive oil
1 large onion (chopped)
8 ounces mushrooms (fresh, chopped)
2 teaspoons soy sauce ((see notes above))
6 cloves garlic
10-12 basil leaves (chopped)
1 tablespoon oregano (finely chopped)
2 tablespoons brown sugar
1 tablespoon Kosher salt ((or to taste))
1 teaspoon pepper ((or to taste))

Steps:

  • Bring a large pot of water to a boil. Place tomatoes a few at a time in the water and remove after 10-15 seconds.
  • Immediately place tomatoes in an ice-water bath and remove skins and stems. Cut tomatoes into fourths and place in a food processor or blender.
  • Process tomatoes a few times, you want them to be the consistency of crushed tomatoes (don't over process). Set aside.
  • Heat oil in a large skillet. Add onions and saute until they become soft and transparent.
  • Add mushrooms and cook for about 2-3 minutes. Add soy sauce and garlic and continue to cook until mushrooms become soft.
  • Add tomatoes, basil, oregano, brown sugar, salt and pepper.
  • Bring to a simmer, stirring occasionally for at least one hour. The longer the better! Ideally 2+ hours.
  • Serve over cooked pasta.

Authentic (Quick) Italian Tomato Sauce for Pasta image

NOTE: To enjoy with pasta as soon as the sauce is ready, put a large pot of salted water on the cooktop over high heat and cook the pasta (I prefer De Cecco) as directed (if you are using egg or a very quick cooking pasta, do this about half-way through these directions).

4 Tbsp extra virgin olive oil
1 to 5 cloves fresh garlic (not in a jar, dried, powdered, or frozen) preferably grown in USA/Europe
small bunch of fresh Italian parsley, finely chopped (my family likes to use parsley in sugo)
1 (28-32 oz) about 800g carton/jar of whole, chopped tomatoes or puree (like Mutti, or Bionaturae) any tomatoes listed on the Greatest Tomatoes from Europe site will be fantastic or about 1 lb of fresh tomatoes (San Marzano, Roma or cherry tomatoes are great)
about 1 1/2 level tsp sea salt
3 or 4 large leaves of fresh basil, more to add to each plate, if desired
Parmigiano Reggiano to grate on top

Steps:

  • Pour the oil into a large saute pan (not a deep pot) over medium high heat. Crush the garlic and add it to the oil (if you want a spicy sauce, you can add some hot pepper, fresh or flakes, at this point). Saute the garlic until it just starts to brown, then add the parsley.
  • Turn the heat up to high. Now add the tomatoes, and quickly cover with the lid for about 30 seconds, until the squirting subsides. Stir with a wooden spoon and lower the heat a little. It is important that this sauce is cooked at a fast simmer, as it is cooked briefly.
  • Add the salt and continue to simmer at a fast pace, and stir often.
  • The sauce will thicken quickly, so do not overcook it, and have it become too thick; about 5 to 7 minutes should be sufficient.
  • Taste the sauce, if it doesn't taste delicious, it probably just needs a little more salt. Turn off the heat and add the fresh basil (I tear mine into pieces). Also, unless absolutely necessary, do not wash your basil. Wipe it with a damp paper towel instead, so the water doesn't ruin the flavor and aroma.
  • Add sauce to the drained pasta (save some pasta water to add back into the pasta in case it's too dry), and enjoy immediately with some freshly grated authentic Parmigiano Reggiano cheese and/or pepper.
  • Also, if you've been plating pasta in a bowl, then topping it with sauce, this is American-style. If you want to serve it the way they do in Italy, mix the sauce in and then plate it.

I started making fresh spaghetti sauce when my wife was sick with cancer and the Venezuelan doctor put her on a diet which included no canned goods. I have since doctored it up until I have gotten it to this point. Serve over spaghetti and add Parmesan cheese, if desired.

1 tablespoon olive oil
½ pound ground beef
1 teaspoon ground cumin
1 ½ tomatoes, chopped
⅓ onion, chopped
¼ bell pepper, diced
3 cloves garlic, minced
1 ½ tomatoes, quartered
⅔ onion, chunked
¼ bell pepper
⅓ cup water, or as needed
1 tablespoon vinegar
3 cloves garlic
2 teaspoons Worcestershire sauce
2 teaspoons dried basil
2 teaspoons dried oregano
2 teaspoons dried parsley
2 teaspoons dried cilantro
2 teaspoons paprika
1 teaspoon soy sauce
1 teaspoon hot sauce (such as Tabasco® Chipotle Pepper Sauce)
1 teaspoon brown sugar
salt to taste

Steps:

  • Heat oil in a saucepan over medium heat. Add ground beef and cumin; cook and stir until meat is browned lightly, 5 to 10 minutes. Stir in chopped tomatoes, chopped onions, diced bell pepper, and minced garlic; cook and stir until meat is browned and vegetables are soft, 5 to 7 minutes.
  • Combine quartered tomatoes, chunked onion, bell pepper, water, vinegar, garlic cloves, Worcestershire sauce, basil, oregano, parsley, cilantro, paprika, soy sauce, hot sauce, brown sugar, and salt in a blender; blend sauce to desired thickness. Add more water if a thinner sauce is desired.
  • Pour sauce onto ground beef; cover and cook until the sauce reaches desired consistency, 15 to 20 minutes.

Almost fresh because we use some fresh vegetables and some canned. The fresh ripe Roma tomato, green pepper, onion, and garlic give it the wonderful flavor. The canned tomato sauce, puree, and paste give it a thick but smooth consistency. This is an excellent sauce recipe for use with chicken parmesan. In fact, it was created with #141751 in mind.

5 large roma tomatoes
2 (10 ounce) cans tomato puree
1 (8 ounce) can tomato sauce
2 (6 ounce) cans tomato paste
2 tablespoons olive oil
4 large garlic cloves
1/2 medium onion
1 large bell pepper
2 teaspoons ground black pepper
2 teaspoons basil leaves, crumbled
2 teaspoons oregano

Steps:

  • First of all prepare the vegetables and have them ready before starting the next step. The garlic should be finely chopped (I use an Ulu knife for this). The onion should be corsely chopped (1/4" strips about 1/2" to 3/4" long). The green pepper should be chopped into pieces roughly 1/3" square. Puree the fresh Roma tomatoes in a blender.
  • Almost as important as the fresh vegetables is the sweating of the garlic and onion. Heat the olive oil in a pan on medium heat. Put the garlic and onion into the pan and stir constantly with a wooden spoon for 2 to 3 minutes. Be very careful to watch the temperature. The garlic has a propensity to burn quickly. If the garlic starts to get golden brown, throw out the whole mess and start over. If you don't have ny brown at all then you haven't cooked it enough. If you watch the temperature carefully and stir it constantly this should work fine the first time.
  • Add the green pepper and the Roma tomato puree to the pan and mix thoroughly. Add the cans of tomato sauce and tomato puree, the basil and oregano, and sprinkle in the black pepper. Mix thoroughly, cover, and cook on low to medium heat for 30 minutes stirring every 5 minutes or so. If the sauce is too thick, cut it with another can of tomato puree. If it is too thin then cut it with another can of tomato paste.

A simple, slow cooked, authentic spaghetti sauce, as good as the restaurants serve...or better! The secret ingredient is baking soda, but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint you. It is good right from the stove, but the flavors blend overnight. Best served with your favorite meatball recipe, where the meatballs cook in the sauce the last half hour. Be prepared to take a nap after eating.

4 (14.5 ounce) cans whole peeled tomatoes
2 (15 ounce) cans tomato sauce

4 cups fresh sliced mushrooms

Steps:

  • Mix together whole tomatoes, tomato sauce, tomato paste, water, mushrooms, onions, garlic, sugar, salt and pepper, basil, and 1 pinch of baking soda in a large saucepan. Bring to a boil, stirring. Reduce to a simmer, and cook for 4 hours minimum.
  • Stir in another pinch of baking soda; the sauce will foam. Simmer, stirring occasionally, until thick and almost brown. Make sure to scrape the sides of the pan in to the sauce.
  • After the sauce is fork consistency, stir in Parmesan cheese. Watch that the cheese does not burn. Taste sauce. If it is too tangy or acidic, add another pinch of baking soda and simmer another 1/2 hour.
  • Cool, cover, and refrigerate overnight. The next day, reheat and serve.

  • Core and coarsely chop two-thirds of the tomatoes. Halve the remaining tomatoes down the middle and discard the tough top part where the tomatoes met the stem, if it exists. Rub the cut sides of the tomatoes against the large holes of a box grater set in a large bowl. Leave the tomato pulp in the bowl and discard the skin.
  • Add the chopped tomatoes, olive oil, lemon juice, salt, sugar, several twists of freshly ground black pepper and the pressed garlic to the bowl. Mix well. Let the mixture marinate while you cook the pasta.
  • Bring a large pot of salted water to boil and then cook the pasta just until al dente, according to package directions. Reserve about a cup of the pasta cooking water before draining the pasta.
  • Drain the pasta, then immediately return it to the pot. Pour in all of the tomato sauce and a small splash (about 1/4 cup) of the pasta cooking water. Cook over medium-low heat for about 1 to 2 minutes, tossing often (gentle now!), just long enough for the tomatoes to soften a bit and for the starchy tomato water to coat the pasta.
