2 lbs chicken breasts, w/bone
1/4 cup garlic butter
1 cup breadcrumbs
1/2 teaspoon cayenne pepper
1/2 teaspoon onion salt
1/2 teaspoon curry powder
1 tablespoon parsley
1/2 teaspoon pepper

Steps:

  • Melt garlic butter and base chicken with it make sure chicken is covered in butter.
  • Add all dry ingredients into a bag and put chicken in bag and shake so chicken is well coated.
  • Bake for 15 min@ 400.
  • Remove chicken from oven and brush Mayo all over chicken and put oven at 300 and bake for another 1hr.

I found this recipe years ago SOMEWHERE and have been making it ever since. It is a little different, but good.

4 1/2-5 lbs chicken, cut up
1/2 teaspoon salt
paprika, to taste
1/2 cup butter
1/8 teaspoon cinnamon
1/8 teaspoon clove
1 cup orange juice
1 orange
1 lemon
1 avocado

Steps:

  • Sprinkle chicken with salt and paprika.
  • In a dutch oven, saute chicken in butter until golden on all sides.
  • Sprinkle with cinnamon and clove and pour on orange juice.
  • Simmer, covered, until chicken is fork tender.
  • Cut lemon and orange into 10 wedges each.
  • Peel avocado in half and cut each half into 5 long slices.
  • Arrange chicken on a heated platter and garnish with avocato, lemon and orange to squeeze over chicken as desired.
  • Degrease sauce and serve on the side.

1 broiler-fryer chicken (about 3 1/2 lb.), quartered
1/2 can beer
2/3 cup chicken broth
1 onion small, quartered
6 green onions sliced
1/4 cup butter, softened
1 tablespoon tomato paste
2 cloves garlic peeled
1/2 teaspoon tarragon dried, crushed
1/8 teaspoon black pepper

Steps:

  • 1. Remove wing tips from chicken. Pierce chicken pieces with tines of a fork, then place chicken in a large reclosable plastic bag or a shallow baking dish.2. Place beer, chicken broth, onion, green onions, butter, tomato paste, garlic, tarragon and pepper in a blender container. Cover and blend until blended. Pour over chicken, turning to coat. Close bag or cover dish. Marinate at room temperature at least 2 hours or refrigerate up to 24 hours, turning pieces occasionally.3. Remove from marinade, reserving marinade. Place chicken in shallow baking dish.4. Cover with foil and bake in a preheated 350° oven for 20 minutes.5. Spray cold grate with non-stick cooking spray or brush with oil. Place chicken on grill about 5 to 6 inches above medium-hot coals. Turning and basting every 5 minutes, cook for 30 to 45 minutes or until meat is no longer pink and juices run clear.

This is my favorite marinade for BBQ chicken. I got this recipe from a friend of mine from church. It was passed down from her mother. I use chicken breasts and adjust the marinating time depending on how salty I want the finished product. It's soooo yummy.

2 1/2-3 lbs frying chicken
1 cup salad oil
1/2 cup lemon juice
1/2 cup grated parmesan cheese
2 teaspoons oregano
2 1/2 tablespoons paprika
2 tablespoons salt
2 teaspoons pepper

Steps:

  • Combine marinade and mix well.
  • Place chicken in baking dish or in a ziplock bag
  • Add marinade.
  • Marinade 2 hours in fridge, turning every 1/2 hour.
  • Place chicken on grill and baste frequently with marinade.

  • In a larger mixing bowl, combine the marinade ingredients, mix well. Add the chicken tenders and mix to make sure chicken is well coated with the marinade. Cover and refrigerate for 30 minutes (or refrigerate overnight.) Meanwhile, make Tztaziki sauce according to this recipe, and prepare the pita and other gyro fixings.
  • Heat 1 tbsp extra virgin olive oil in a non-stick skillet over medium-high until shimmering but not smoking. Add chicken tenders to the pan (make sure to shake off any excess marinade before adding chicken to the pan.) Cook on one side undisturbed for 5 minutes until browned. Using a pair of tongs, turn chicken over and cook on other side for another 5 minutes or until chicken is done. (See notes for outdoor grilling)
  • Warm up some pita. Spread Tztaziki sauce on top, then add chicken (about 2 to 3 tenders) and top with tomato, cucumber, green pepper, red onion and olives as you like. Wrap the pita up and enjoy!
