demitisse spoons (can't find them, check the baby isle for the small spoons with long handles)
CHOCOLATE MOUSSE SHOOTERS
1 pkg oreo cookies, crushed
1 pkg jello chocolate mousse, prepared
chocolate sauce
whipped cream
SUNDAE SHOOTERS
hot fudge or strawberry sauce
vanilla ice cream
whipped cream
strawberries or cherries
CHEESECAKE SHOOTERS
1 1/2 c graham cracker crumbs
1/3 c packed brown sugar
1/2 tsp cinnamon
1/3 c butter, melted
1 pkg philadelphia ready to eat cheesecake filling
strawberry sauce
whipped cream

Steps:

  • 1. Assemble your dessert shots parfait-style.
  • 2. Chocolate Mousse Shooters: Crush oreos ziploc bag with rolling pin. Layer as follows: oreos, mousse, chocolate sauce; repeat layers; top with whip cream and sprinkle crushed oreos and drizzle chocolate sauce.
  • 3. Sundae Shooters: Layer as follows: hot fudge/strawberry sauce, ice cream, fruit; repeat layers; top with whip cream and fruit.
  • 4. Cheesecake Shooters: Mix graham cracker crumbs, butter, cinnamon and brown sugar. Layer as follows: graham crackers, cheesecake filling, strawberry sauce; repeat layers; top with whip cream and drizzle with strawberry sauce.

2 tablespoons butter
6 ounces semi-sweet chocolate chips (1 cup)
1 tablespoon godiva chocolate liqueur
1 teaspoon vanilla
2 eggs, separated
2 tablespoons sugar
1/2 cup heavy cream
8 Oreo cookies
1/2 cup fudge sauce
canned whipped cream

Steps:

  • Chocolate Mousse:.
  • Place the top portion of a double-boiler over hot water, add butter to the bowl, and then set the heat to low. When the butter has melted, add the chocolate chips, reserving 1 tablespoon of the chocolate chips and set aside. Melt chips, add chocolate liqueur and vanilla. Remove bowl from the heat and whisk in egg yolks.
  • In a separate bowl beat egg whites until they form soft peaks. Stir egg whites into chocolate mixture.
  • In a clean bowl, combine sugar with cream, and then whip cream until stiff. Fold cream into chocolate.
  • Chop remaining 1 tablespoon of chocolate chips into small bits the size of rice. Stir this chocolate into the mousse, then cover and chill the mousse for 3 to 4 hours.
  • Open the Oreos and scrape out the filling. Put the chocolate wafers into a plastic bag and using a kitchen mallet crush to make crumbs.
  • To Prepare Dessert:.
  • Spoon 2 tablespoons of Oreo cookie crumbs into the bottom of a 6-ounce rocks glass. Spoon 1/3 cup of chilled mousse into the glass, and top it with 2 tablespoons of chocolate fudge topping. Remove lid from fudge topping and warm up the fudge in the jar in your microwave. Top with a rosette of whipped cream on top and sprinkle it with leftover Oreo crumbs.

8 ounces semi-sweet chocolate baking squares
1/2 cup unsalted butter
3 eggs, the whole egg
3 egg yolks
1/3 cup sugar
2 teaspoons vanilla extract
3/4 cup flour
8 ounces semi-sweet chocolate baking squares
1 cup heavy whipping cream
1/2 cup sugar

Steps:

  • Preheat oven to 425ºF. Heavily butter and then flour 8 (1-cup) ramekins or coffee cups. Set cups on a cookie sheet. Chop chocolate into small even pieces. Melt with the butter in a double boiler over barely simmering water (or microwave, uncovered, on MEDIUM, stirring every 20 to 30 seconds after the first one or two minutes, until only a small chunk of solid chocolate remains). Remove from heat and stir until melted, smoother and cooled.
  • Beat eggs, yolks and sugar together at high speed for 6 to 8 minutes. The mixture will become thick like cream and become beige-colored. Fold in the cooled chocolate and vanilla extract. Sift the flour over chocolate and fold in . Pour batter into prepared cups. Bake 7 minutes. Pull out of oven and tuck a piece of frozen lava deep into the center of the half-baked batter in each cup. Return to oven and bake for 6 to 7 minutes more. Cakes will rise straight over the rims of the cups and may crack slightly. Cool in cups on a wire rack for 10 minutes.
  • Chop chocolate evenly. In a saucepan, heat half the cream with sugar until it boils. Remove from heat. Add chocolate and stir until it melts and sauce is smooth. Add remaining cream and stir again, patiently, until thick and smooth. Warm sauce gently for pouring. If allowed to set at room temperature, it will turn the consistency of sour cream and can be used like frosting. Makes 2 cups.
  • To assemble, make Chocolate Sauce. Drizzle Chocolate Sauce in a north-south zigzag over the caramel. Pull a wooden pick or knife back and forth cross the chocolate, going east-west to create a feathering effect. Run a thin knife around each cake to carefully loosen, then invert onto the sauce. Top with warm Chocolate Sauce, letting sauce drip down the sides of the cakes. If desired, decorate with fresh berries. Serve warm. When cut, chocolate will spill out of the warm cake.
