ANDREAS VIESTAD'S CHICKEN WITH SAFFRON AND CINNAMON



Andreas Viestad's Chicken With Saffron and Cinnamon image

Another wonderful Andreas Viestad recipe, one of few for chicken. He adapted this one from a medieval Icelandic cookbook; the spices indicate that it probably was a dish for the wealthy. Amazingly, the amount of cinnamon is not overpowering here, and the dish is best with "skin-on" chicken. If you don't like chicken livers, substitute 1/2 chicken bouillon cube. Prep time includes a day of marinating (if you choose that option).

4 lbs chicken, cut into 8 pieces
2 garlic cloves, minced
1 pinch saffron
1 teaspoon ground cinnamon
1 teaspoon sea salt
2 teaspoons flour
2 tablespoons red wine vinegar
2 tablespoons olive oil
1/2 cup white wine, preferably semi-dry
2 chicken livers, finely chopped or 1/2 chicken bouillon cube

Steps:

  • In a small bowl, combine the garlic, saffron, cinnamon, salt, flour, vinegar and olive oil, stirring until smooth.
  • rub chicken pieces all over with the spice mixture and either place in a covered dish in a single layer or in a plastic zipper bag and marinate at room temperature for 45 minutes, or up to 1 day in the refrigerator.
  • Preheat oven to 400 degrees F.
  • Bake chicken pieces skin side up for 30 minutes.
  • Add wine and chicken livers (or 1/2 bouillon cube) to the pan and bake 20 to 30 minutes more (stirring a couple times if you're using the bouillon cube).
  • Check to see if chicken is done by piercing in the thickest part with the tip of a knife; juices will run clear when done.

2 eggs
1 bagel
butter
salt and pepper
hot sauce
cheddar cheese

Steps:

  • Slice bagel.
  • Slice cheddar cheese thinly or used pre sliced cheddar cheese and pop bagels into toaster to toast.
  • crack 2 eggs into a bowl, add salt, pepper and hot sauce to taste.
  • whisk until mixed well and little bubbles form on the surface.
  • heat skillet on medium low and spray with nonstick spray.
  • add eggs and cook like you would scramble eggs, moving them gently around.
  • once the eggs start to set, move them towards the center forming a circle.
  • the eggs will set up and you'll be able to flip them over at once.
  • while the bottom cooks, lay the sliced cheddar thinly over the top.
  • butter the bagel when its toasted and top with egg and cheese.

  • First, scramble the egg and cook it in a pan.
  • Now, open or slice the bagel and place lunch meat on the bottom half.
  • Now when the eggs are done, place them on the meat.
  • Finally, put the cheese on the egg(s).
  • •(Optional) Put the sandwich in the microwave for 45 seconds to warm the other parts of the sandwich.

We fill the sandwich with a delicious spinach omelet, melted cheddar, and crispy bacon. The game has changed, and now that you know it, you can never un-know it.

2 eggs, whisked
4 slices bacon
2 garlic cloves, minced
2 ounces spinach, coarsely chopped
2 bagels, everything
1 roma tomato, sliced 1/4-inch thick
2 slices cheddar cheese
1 teaspoon olive oil
2/3 ounce butter

Steps:

  • Preheat Oven 375 degrees.
  • Cook the Bacon. Line a plate with a paper towel. Place bacon on prepared baking sheet, avoiding overlap, and bake 12 minutes, or until crispy. Remove to prepared plate and set aside.
  • Cook the Vegetables. Heat 1 teaspoons olive oil in a medium non-stick an over medium heat. Add garlic and spinach to hot pan and cook, while stirring, 30 seconds, or until spinach is wilted. Season with ¼ teaspoons salt and a pinch of pepper.
  • Cook the Eggs. Add butter to pan containing vegetables, melt, and add eggs. Use a rubber spatula to constantly scrape along the bottom of the pan until eggs are set and a little set, about 2-3 minutes. Remove from burner and season with a pinch of salt and pepper. Residual heat from pan will carry over and finish cooking eggs. Remove eggs to a plate and wipe pan clean.
  • Assemble and Toast Sandwiches. Lay top halves of bagels on a clean surface with seasoned side facing up. Divide eggs, followed by sliced Roma tomato, cheese slices, and two slices of bacon between top halves. Top with remaining bagel halves, cut side facing up. Place pan from cooking eggs over medium heat. Add 1 teaspoons olive oil and place one assembled sandwich in hot pan and cook 2 minutes, or until golden brown. Carefully flip and repeat on second side. Add 1 teaspoons olive oil to pan and repeat process with second sandwich.

1 egg
1 slice cheese (flavor of your choice- I prefer American)

1 tablespoon butter

Steps:

  • Place bagel in toaster and toast as desired.
  • Over medium heat, fry egg in frying pan.
  • Turn off heat but, leave pan on burner.
  • Place meat on top of egg and then the cheese on top of the meat.
  • Cover with a lid and let the heat melt the cheese.
  • Butter toasted bagel.
  • Place egg, meat, and cheese pile on one half of bagel and top with the other half.
