Summer dessert made easy with fresh blackberries and a sweet biscuit-like topping!

24 ounces fresh blackberries
1 cup granulated sugar
¼ teaspoon ground cinnamon ((optional but recommended))
3 tablespoons cornstarch
¾ cup water
1 ½ cups all-purpose flour
1 tablespoon granulated sugar
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ cup cold butter (grated or finely cubed)
⅓ - ½ cup cold buttermilk

Steps:

  • In a large saucepan, combine the blackberries, sugar, and cinnamon. Cook and stir until mixture comes to a boil.
  • Combine cornstarch and water until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Pour into a greased 8" square baking dish.

2 pounds frozen blackberries, thawed
1 ¼ cups white sugar
1 ½ tablespoons all-purpose flour
1 ½ tablespoons butter
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
2 tablespoons white sugar
¼ cup softened butter
⅔ cup milk
1 large egg, beaten

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Toss the blackberries with 1 1/4 cups sugar and 1 1/2 tablespoons flour in a mixing bowl. Spread into a 9x9-inch baking dish, and dot with 1 1/2 tablespoons of butter. In a separate bowl, whisk 1 1/2 cups flour together with baking powder, salt, and 2 tablespoons sugar. Cut in the softened butter until the mixture resembles cornmeal. Stir in the milk and egg until combined. Drop the batter over the berries by the spoonful.
  • Bake in the preheated oven until the fruit is tender and the topping is golden brown, 20 to 30 minutes.

4 cups fresh blackberries
3/4 cup light brown sugar, divided
1 teaspoon self-rising flour, plus 1/2 cup
2 tablespoons butter, plus 1 cup
2/3 cup white stone-ground cornmeal
Pinch salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the blackberries, 1/4 cup sugar and 1 teaspoon of flour in a mixing bowl. Allow it to sit until the berries begin to soften and juices flow, about 3 to 5 minutes. Meanwhile, grease 6 (8-ounce) ramekins using 2 tablespoons butter and arrange them on a baking sheet. Divide the berries among the ramekins.
  • Cut 1 cup of butter into cubes and freeze. In a bowl, combine the remaining 1/2 cup sugar, remaining 1/2 cup of flour, the cornmeal and the salt. Cut in the butter with a fork to make a pea-like texture and sprinkle it on top of the berries in the ramekins. Bake until the berries bubble and the topping is baked to a light golden color, approximately 25 to 30 minutes.

2 cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
½ cup unsalted butter, melted
1 cup heavy cream
6 cups fresh blackberries
¼ teaspoon ground nutmeg
1 teaspoon white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix together the flour, 1 cup of sugar, baking powder, salt, milk, melted butter, and cream to make a batter. Spread the blackberries out into an ungreased 9x13-inch baking dish, and top with the batter. Sprinkle the top of the batter with the nutmeg and 1 teaspoon of sugar.
  • Bake cobbler in the preheated oven until the top is browned, the fruit is bubbling, and a fork inserted into the center of the batter comes out clean, about 1 hour. Allow to cool before serving.
