Air Fryer Chicken and Potatoes is a super easy weeknight dinner idea. This simple air fryer recipes consists of bone-in chicken thighs, mini gold potatoes and colorful bell peppers.

2 Lbs Bone-In, Skin-On Chicken Thighs
1 Lb Mini Gold Potatoes - halved
1 Red Bell Pepper - seeded and chopped
1 Orange Bell Pepper - seeded and chopped
1 teaspoon Garlic Powder
1/2 teaspoon Smoked Paprika
1/2 teaspoon Onion Powder
1/4 teaspoon Cumin
Generous Pinch Salt/Pepper

Steps:

  • Mix garlic powder, paprika, onion powder, cumin, salt and pepper.
  • Coat chicken thighs in oil then sprinkle 2/3 of spice mixture over the thighs. Transfer to greased air fryer basket, placing off to one side.
  • Toss potatoes with oil and remaining spices. Transfer to air fryer basket next to the chicken thighs.
  • Air fry at 400ºF 10 minutes.
  • Add peppers to the potatoes, toss and sprinkle with salt.
  • Air fry at 400ºF for 10-15 more minutes or until chicken thighs are cooked through (165ºF internal temp).

1 tablespoon ground paprika
1 teaspoon granulated garlic
1 teaspoon onion powder
1 teaspoon Greek seasoning (such as Cavender's®)
1 teaspoon Goya Sazonador Total
2 pounds bone-in, skin on chicken thighs
¼ cup water
6 tablespoons olive oil, divided
1 tablespoon vinegar
salt and ground black pepper to taste
½ pound baby red potatoes, cut into 1-inch cubes

Steps:

  • Mix paprika, garlic, onion powder, Greek seasoning, sazonador total, salt, and pepper in a small bowl. Reserve 1 tablespoon seasoning in a small bowl; cover and set aside until needed for the potatoes.
  • Place remaining seasoning in a 1-gallon resealable bag with water, 4 tablespoons olive oil, and vinegar. Add chicken thighs; massage to coat with seasoning, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Preheat the air fryer to 400 degrees F (200 degrees C) for 5 minutes.
  • Meanwhile, place 1 tablespoon reserved seasoning in a small bowl with remaining 2 tablespoons olive oil; stir to combine. Toss potatoes in and stir until well coated. Combine potatoes and thighs in the air fryer basket.
  • Cook in the preheated air fryer until potatoes are tender and chicken is no longer pink at the bone and the juices run clear, about 28 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

4 skin-on, boneless chicken thighs
2 teaspoons extra-virgin olive oil
1 teaspoon smoked paprika
¾ teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Pat chicken thighs dry with a paper towel and brush the skin-side of each piece with olive oil. Place chicken thighs, skin-side down, in a single layer on a plate.
  • Combine smoked paprika, garlic powder, salt, and pepper in a bowl and sprinkle half the seasoning mixture evenly over the 4 chicken thighs. Turn thighs over and evenly sprinkle remaining seasoning mixture on top. Place chicken thighs in the air fryer basket in a single layer, skin-side up.
  • Fry in the preheated air fryer until chicken is brown and juices run clear, about 18 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 tsp paprika
½ tsp mixed herbs
½ tsp garlic granules (optional)
4 chicken thighs, bone in
1 tsp olive oil

Steps:

  • Combine the paprika in a bowl with the herbs and garlic granules, if using, together with ½ tsp salt and ½ tsp ground black pepper. Scatter onto a plate. Rub the chicken thighs with the oil, then coat in the spice mix.
  • Put in the basket of your air fryer and cook, skin-side down, for 10 mins at 180C. Turn over and cook for a further 10-15 mins until cooked through and the skin is crispy. To check they are cooked, pierce the thickest part of the thigh with a knife to see if the juices run clear. Remove from the air fryer immediately to stop the skin from softening.
