ZUCCHINI GRATIN

- Preheat the oven to 400 degrees F.
- Melt the butter in a very large (12-inch) saute pan and cook the onions over low heat for 20 minutes, or until tender but not browned. Add the zucchini and cook, covered, for 10 minutes, or until tender. Add the salt, pepper, and nutmeg and cook uncovered for 5 more minutes. Stir in the flour. Add the hot milk and cook over low heat for a few minutes, until it makes a sauce. Pour the mixture into an 8 by 10-inch baking dish.
- Combine the bread crumbs and Gruyere and sprinkle on top of the zucchini mixture. Dot with 1 tablespoon of butter cut into small bits and bake for 20 minutes, or until bubbly and browned.

A surprisingly delightful dip for any occasion. Zucchini is spiced up with a bit of garlic and oregano to create a creamy and delicious dip. This has been a hit every time I've made it! Serve with vegetables, crackers, or bread.

- Place zucchini in a saucepan, and fill with enough water to cover. Bring to a boil, and cook until tender, about 5 minutes. Drain, and transfer to a food processor or blender. Process until smooth. Add the garlic, sugar, and oregano, and process until blended.
- Transfer the pureed mixture to a serving bowl, and stir in the mayonnaise. Chill for at least 1 hour before serving.

- Butter 9 inch deep-dish pie plate.
- Melt butter in heavy large skillet over medium-high heat.
- Add zucchini, sauté until golden, about 5 minutes.
- Season with salt and pepper.
- Layer half the zucchini in prepared dish.
- Sprinkle half of tarragon and 1/2 cup cheese over.
- Repeat layering with zucchini, tarragon and 1/2 cup cheese.
- Combine milk, cream and eggs in small bowl.
- Season with salt and pepper.
- Pour custard mixture over zucchini.
- Sprinkle remaining cheese over.
- Bake until gratin is set in center, about 35 minutes.
- Serve immediately.

DEEP FRIED ZUCCHINI WITH CREAMY GARLIC DIP
Yummy! Just like at a restaurant! Who would have thought that just adding garlic to ranch dressing would be what makes this dish!!! I plan on using the ranch dip for other things as well.

- Heat oil to approx 350.
- Coat zucchini slices with flour.
- Dip in egg.
- Coat both sides with bread crumbs and carefully place in oil.
- Repeat with all zucchini slices -- do not crowd the pan.
- Drain on paper towels and serve warm with garlic dip.
- For the Garlic Dip:.
- Combine all ingredients with a whisk till well blended.
- Store in fridge till ready to serve.
- Try and make well in advance of the zucchini as the longer it sits the better it tastes.
- Good refrigerated for up to 3 weeks.

- Preheat your oven to 375 degrees F. Butter an 8 by 8-inch casserole dish.
- In a large heavy bottomed saute pan over medium heat, melt butter. Saute onion and garlic until translucent. Add zucchini and tomatoes, about 7 minutes Add thyme, and flour. Season with salt and pepper. Add mixture to the buttered casserole dish.
- In a medium size bowl, add brown sugar, eggs, and half-and-half. Season with salt and pepper. Pour the milk mixture over the zucchini and sprinkle with both of the cheeses. Bake for 30 minutes.

Steps:
- Melt butter in a medium pot over medium heat. Add onion and garlic to the melted butter and saute until onion begins to brown, 5 to 7 minutes.
- Add grated zucchini, water, 3/4 teaspoon salt, Italian seasoning, and pepper. Reduce heat to medium-low and cook, stirring constantly, until zucchini is soft and most of the water has evaporated, about 15 minutes. Sprinkle flour over the zucchini and mix well, trying to avoid flour lumps. Reduce heat to low and cook for 2 minutes.
- Add milk; stir well. Transfer about 1/2 cup of the zucchini mixture to a small bowl; add cream cheese and mix until well blended. Add this back to the pot and cook over low heat until dip begins to thicken, 5 to 10 minutes.
- While dip is cooking, set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low.
- Remove dip from the heat and stir in Parmesan cheese. Taste and adjust salt if needed. Transfer dip to a shallow, oven-safe casserole dish and top with Cheddar cheese.
- Broil in the preheated oven until Cheddar bubbles and starts to brown, 2 to 3 minutes.

TOMATO, ZUCCHINI AND FETA GRATIN
This is a recipe I copied from Food and Wine magazine. It is easy and has a great flavor to it. I have substituted thyme for dill. If you have flavored feta available, that is really nice twist to add with this dish. Just delete the thyme. I have done both the original recipe and the flavored fetas with success. It is a lovely way to make a dish when you have a bumper crop of zucchini and tomatoes coming out of your garden.

Steps:
- Slice zucchini into 1/2" rounds. Blanch zucchini in boiling water for 4 minutes. Drain well, and pat dry.
- Slice tomatoes, lengthwise, into 4 slices per tomato. With a spoon remove seeds.
- In a greased 9x9 glass baking dish, place zucchini, overlapping, in a single layer to cover bottom of dish.
- Drizzle zucchini with 1 tbsp of olive oil over top.
- Sprinkle with with garlic, thyme, salt and pepper.
- Next add a layer of crumbled feta.
- Top dish with tomato slices.
- Sprinkle with salt and pepper. Drizzle all of casserole with remaining oil.
- Bake, in preheated, 400°F oven for 40 minutes. Remove and let rest 10 minutes before serving.
