6 tablespoons (3/4 stick) unsalted butter, plus extra for topping
1 pound yellow onions, cut in 1/2 and sliced (3 large)
2 pounds zucchini, sliced 1/4-inch thick (4 zucchini)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
2 tablespoons all-purpose flour
1 cup hot milk
3/4 cup fresh bread crumbs
3/4 cup grated Gruyere

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a very large (12-inch) saute pan and cook the onions over low heat for 20 minutes, or until tender but not browned. Add the zucchini and cook, covered, for 10 minutes, or until tender. Add the salt, pepper, and nutmeg and cook uncovered for 5 more minutes. Stir in the flour. Add the hot milk and cook over low heat for a few minutes, until it makes a sauce. Pour the mixture into an 8 by 10-inch baking dish.
  • Combine the bread crumbs and Gruyere and sprinkle on top of the zucchini mixture. Dot with 1 tablespoon of butter cut into small bits and bake for 20 minutes, or until bubbly and browned.

1 medium zucchini, cubed
2 tablespoons white sugar
1 tablespoon soy sauce
1 clove garlic, chopped
¾ teaspoon dried oregano
2 cups mayonnaise

Steps:

  • Place zucchini in a saucepan, and fill with enough water to cover. Bring to a boil, and cook until tender, about 5 minutes. Drain, and transfer to a food processor or blender. Process until smooth. Add the garlic, sugar, and oregano, and process until blended.
  • Transfer the pureed mixture to a serving bowl, and stir in the mayonnaise. Chill for at least 1 hour before serving.

6 medium zucchini, sliced
2 tablespoons chopped fresh tarragon or 2 teaspoons dried tarragon
1 1/4 cups grated parmesan cheese
1/2 cup milk
1/2 cup whipping cream
2 eggs
salt and pepper

Steps:

  • Preheat oven to 350°F degrees.
  • Butter 9 inch deep-dish pie plate.
  • Melt butter in heavy large skillet over medium-high heat.
  • Add zucchini, sauté until golden, about 5 minutes.
  • Season with salt and pepper.
  • Layer half the zucchini in prepared dish.
  • Sprinkle half of tarragon and 1/2 cup cheese over.
  • Repeat layering with zucchini, tarragon and 1/2 cup cheese.
  • Combine milk, cream and eggs in small bowl.
  • Season with salt and pepper.
  • Pour custard mixture over zucchini.
  • Sprinkle remaining cheese over.
  • Bake until gratin is set in center, about 35 minutes.
  • Serve immediately.

Yummy! Just like at a restaurant! Who would have thought that just adding garlic to ranch dressing would be what makes this dish!!! I plan on using the ranch dip for other things as well.

1 -2 fresh zucchini, of medium size thinly sliced (do not peel)
1/2 cup flour
3 beaten eggs (you might need one more depending on your zucchini's size)
2 cups Italian seasoned breadcrumbs
oil (for frying)
1 cup buttermilk
1 cup mayonnaise
1 (1 ounce) package ranch dressing mix
3 garlic cloves, minced

Steps:

  • Heat oil to approx 350.
  • Coat zucchini slices with flour.
  • Dip in egg.
  • Coat both sides with bread crumbs and carefully place in oil.
  • Repeat with all zucchini slices -- do not crowd the pan.
  • Drain on paper towels and serve warm with garlic dip.
  • For the Garlic Dip:.
  • Combine all ingredients with a whisk till well blended.
  • Store in fridge till ready to serve.
  • Try and make well in advance of the zucchini as the longer it sits the better it tastes.
  • Good refrigerated for up to 3 weeks.

2 tablespoons butter
1 medium onion, chopped
3 cloves garlic, chopped
6 zucchini, sliced into half moons 1/4-inch thick
2 plum tomatoes, chopped and seeded
1 tablespoon freshly chopped thyme leaves
2 tablespoons all-purpose flour
Salt and freshly ground black pepper
1 tablespoon brown sugar
2 eggs, beaten
1/2 cup half-and-half
1/4 cup grated sharp white Cheddar
1/4 cup grated Parmesan

Steps:

  • Preheat your oven to 375 degrees F. Butter an 8 by 8-inch casserole dish.
  • In a large heavy bottomed saute pan over medium heat, melt butter. Saute onion and garlic until translucent. Add zucchini and tomatoes, about 7 minutes Add thyme, and flour. Season with salt and pepper. Add mixture to the buttered casserole dish.
  • In a medium size bowl, add brown sugar, eggs, and half-and-half. Season with salt and pepper. Pour the milk mixture over the zucchini and sprinkle with both of the cheeses. Bake for 30 minutes.

2 tablespoons unsalted butter
1 medium onion, chopped
1 clove garlic, minced
4 cups grated zucchini
½ cup water
¾ teaspoon salt, or more to taste
½ teaspoon Italian seasoning
¼ teaspoon ground black pepper
1 tablespoon all-purpose flour, sifted
1 ½ cups milk
¼ cup cream cheese, softened
2 tablespoons shredded Parmesan cheese
1 cup shredded Cheddar cheese

Steps:

  • Melt butter in a medium pot over medium heat. Add onion and garlic to the melted butter and saute until onion begins to brown, 5 to 7 minutes.
  • Add grated zucchini, water, 3/4 teaspoon salt, Italian seasoning, and pepper. Reduce heat to medium-low and cook, stirring constantly, until zucchini is soft and most of the water has evaporated, about 15 minutes. Sprinkle flour over the zucchini and mix well, trying to avoid flour lumps. Reduce heat to low and cook for 2 minutes.
  • Add milk; stir well. Transfer about 1/2 cup of the zucchini mixture to a small bowl; add cream cheese and mix until well blended. Add this back to the pot and cook over low heat until dip begins to thicken, 5 to 10 minutes.
  • While dip is cooking, set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low.
  • Remove dip from the heat and stir in Parmesan cheese. Taste and adjust salt if needed. Transfer dip to a shallow, oven-safe casserole dish and top with Cheddar cheese.
  • Broil in the preheated oven until Cheddar bubbles and starts to brown, 2 to 3 minutes.

TOMATO, ZUCCHINI AND FETA GRATIN



Tomato, Zucchini and Feta Gratin image

This is a recipe I copied from Food and Wine magazine. It is easy and has a great flavor to it. I have substituted thyme for dill. If you have flavored feta available, that is really nice twist to add with this dish. Just delete the thyme. I have done both the original recipe and the flavored fetas with success. It is a lovely way to make a dish when you have a bumper crop of zucchini and tomatoes coming out of your garden.

1 large zucchini
3 roma tomatoes
3 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon thyme, minced
4 ounces feta cheese, crumbled
salt
pepper

Steps:

  • Slice zucchini into 1/2" rounds. Blanch zucchini in boiling water for 4 minutes. Drain well, and pat dry.
  • Slice tomatoes, lengthwise, into 4 slices per tomato. With a spoon remove seeds.
  • In a greased 9x9 glass baking dish, place zucchini, overlapping, in a single layer to cover bottom of dish.
  • Drizzle zucchini with 1 tbsp of olive oil over top.
  • Sprinkle with with garlic, thyme, salt and pepper.
  • Next add a layer of crumbled feta.
  • Top dish with tomato slices.
  • Sprinkle with salt and pepper. Drizzle all of casserole with remaining oil.
  • Bake, in preheated, 400°F oven for 40 minutes. Remove and let rest 10 minutes before serving.
