This is very delicious! I like to use fresh vegetables from the market when I make this. It has a juice after it's cooked that is great for dipping bread into.

8 small zucchini, cut into 1/4 inch rounds
1 onion, sliced
6 tomatoes, sliced
½ pound thinly sliced pepperoni
1 (16 ounce) package small curd cottage cheese
¼ pound shredded Cheddar cheese
¼ pound shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Cover bottom of baking dish with half of the zucchini slices. Layer with half of the onion rings, tomato slices and pepperoni slices. Sprinkle with half of each of the cottage cheese, Cheddar cheese and mozzarella cheese. Repeat layers.
  • Bake in preheated oven for 30 to 40 minutes, or until zucchini is tender, and cheese is melted.

4 small zucchini (1 lb.), sliced
4 small yellow squash (1 lb.), sliced
1/4 lb. sliced fresh mushrooms
2 cloves garlic, minced
3 eggs, beaten
1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 pkg. (7 oz.) KRAFT 2% Milk Finely Shredded Mild Cheddar Cheese
4 green onions, sliced
1/4 cup chopped fresh basil
2 Tbsp. flour
1 tsp. dried oregano leaves
1/2 tsp. crushed red pepper

Steps:

  • Heat oven to 350°F.
  • Heat oil in large skillet on medium-high heat. Add zucchini, squash, mushrooms and garlic; cook 5 min., stirring frequently. Drain.
  • Mix remaining ingredients in large bowl until blended. Stir in cooked vegetable mixture. Spoon into 2-1/2-qt. casserole sprayed with cooking spray.
  • Bake 45 min. or until knife inserted in center comes out clean.

A warm, satisfying way to use some of the piles of zucchini that are around at harvest time. I don't know where my husband got this recipe, but it's a good one.

2 cups sliced zucchini
1 cup chopped onion
1 -2 tablespoon olive oil
2 cups cottage cheese
3 eggs, beaten
1 cup cooked rice
1 pinch salt
1 pinch pepper
1/2 cup soft breadcrumbs
1/2 cup parmesan cheese
1/4 cup melted butter

Steps:

  • Saute the zucchini and onions in the olive oil, then set aside.
  • Mix together the cottage cheese, eggs, rice, salt and pepper.
  • Layer the zucchini/onion mixture and the cottage cheese mixture in a greased casserole dish.
  • Mix the bread crumbs and parmesan together, then sprinkle over the casserole.
  • Drizzle the melted butter over all.
  • Bake for 40 minutes at 350 degrees F.

4 tablespoons butter, divided
6 small zucchini, chopped (about 7 cups)
1 large onion, chopped
1-1/2 cups crushed Rice Chex
1 cup shredded Colby-Monterey Jack cheese
2 large eggs, lightly beaten
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°. In a large skillet, heat 2 tablespoons butter over medium-high heat. Add zucchini and onion; cook and stir 10-12 minutes or until crisp-tender. Transfer to a bowl; cool slightly., In a microwave, melt remaining butter. Drizzle over cereal and toss to coat., Stir cheese, eggs, salt and pepper into zucchini mixture; transfer to a greased 8-in. square baking dish. Sprinkle with cereal mixture., Bake, uncovered, 25-30 minutes or until heated through. Let stand 10 minutes before serving.
