Caramel apple pie is the traditional American dessert, but totally elevated. Sour tart apples are smothered in caramel, it's insanely delicious.

2 homemade pie crust (or pre-made pie crust (one for the bottom crust and one for the lattice top))
8 large granny smith apples (peeled, cored, sliced)
1 Tablespoon fresh lemon juice
¾ cup granulated sugar
1/4 cup cornstarch
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
dash of salt
1 Egg yolk plus 2 tbsp water for egg wash
1 1/2 cups heavy cream
1 cup granulated sugar
1/3 cup light corn syrup
1 teaspoon salt
¼ cup salted butter
1 teaspoon vanilla extract

Steps:

  • Prepare the caramel sauce and set aside.
  • Preheat the oven to 400°. Press the bottom crust into a 9 inch pie pan and trim the excess with a sharp knife. Set in the fridge until the filling is ready.
  • In a small bowl mix the sugar, cornstarch, cinnamon, nutmeg and salt. In a medium bowl toss the sliced apples together with the spiced sugar mixture and the lemon juice. Pour into the chilled pie shell.
  • Generously drizzle about half of the caramel sauce over the apples and then top with the lattice crust. Brush the top crust with the egg wash and sprinkle with course sugar.
  • Place the pie on a baking sheet to prevent over spilling on the bottom of your oven and bake for 50 minutes, or until the filling is bubbling and the crust is nice and golden brown.
  • Allow to cool on a rack for 20-30 minutes before drizzling more caramel sauce over the top.

pastry for single-crust pie
1/2 cup sugar
3 tablespoons flour
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon salt
6 cups thinly sliced peeled apples (1/2 Macintosh, 1/2 Granny Smith)
2/3 cup packed brown sugar
1/2 cup flour
3/4 cup quick-cooking rolled oats
1/2 cup butter
1/4 cup toasted pecans, chopped

Steps:

  • Use foil on bottom of oven rather than a cookie sheet under pie pan.
  • Prepare pastry for single-crust pie.
  • Place in pie plate and trim and crimp the edge; refrigerate 30 minute loosely covered with plastic wrap.
  • In a large mixing bowl, stir together the sugar, flour, cinnamon, nutmeg, allspice, and salt.
  • Add apple slices and gently toss until they are coated well.
  • Transfer mixture to pie.
  • FOR CRUMB TOPPING: Stir together brown sugar, flour, and oats.
  • Using a pastry blender, cut in the butter until topping resembles coarse crumbs.
  • Sprinkle over apple mixture in pie.
  • To prevent over-browning while baking, cover edge of pie with foil.
  • Bake at 375 degrees Fahrenheit for 25 minutes.
  • Remove foil and bake 25 to 30 minutes more, or until top is golden.
  • Remove from oven.
  • Cool on wire rack about an hour and serve!

1/2 cup sugar
3 Tbsp. flour
1 tsp. ground cinnamon
6-8 cups apples (thinly sliced and peeled (Granny Smiths are the best for pies!))
1 unbaked pie crust
1 cup brown sugar
1/2 cup flour
1/2 cup quick oats
1/2 cup butter (cold)
1/2 cup chopped pecans
1/4 cup caramel ice cream topping

Steps:

  • Preheat the oven to 375°. Place the unbaked pie crust in a pie plate and lightly press the crust on the bottom and up the sides of the dish.
  • To make the filling: In a large mixing bowl, mix the sugar, flour and cinnamon. Stir in the apple slices and toss until they are evenly coated. Place the apple mixture into prepared pastry lined pie plate.
  • For the topping: Combine the brown sugar, flour and rolled oats in a mixing bowl. Use a knife and fork or a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Sprinkle over the apple filling. Bake for about 60 minutes or until the top is a golden brown. Remove from the oven, sprinkle the pecans on top and drizzle with caramel topping. Serve warm with vanilla ice cream for best results!

Steps:

  • Directions for Crumb Topping: Stir together brown sugar,flour, rolled oats.
  • Cut in 1/2 cup butter until topping is like course crumbs.
  • Set aside.
  • Directions: In a large mixing bowl, stir together the sugar, flour, cinnamon and salt.
  • Add apple slices and gently toss until coated.
  • Transfer apple mixture to the pie shell Sprinkle crumb topping over apple mixture.
  • Place pie on a cookie sheet so the drippings don't drop into your oven.
  • Cover edges of pie with aluminum foil.
  • Bake in a preheated 375F oven for 25 minutes.
  • Then remove foil and put back in for another 25 to 30 minutes without foil.
